This is a really tasty easy recipe for brunch. Can be made the night before and refrigerated also. Even my very picky stepfather gave it 2 thumbs up! (Trust me, that's an accomplishment!)

Number Of Ingredients 10

1/2 lb sliced bacon
1/2 cup chopped onion
1/2 cup chopped green pepper
12 eggs
1 cup milk
1 (16 ounce) package frozen hash browns, thawed in fridge
1 cup shredded cheddar cheese
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon dill weed

Steps:

  • In a skillet, cook bacon until crisp. Remove with a slotted spoon and drain on paper towel. Crumble and set aside.
  • In the drippings, saute onion and green pepper until tender; remove with a slotted spoon.
  • Beat eggs and milk in a large bowl.
  • Stir in hash browns, cheese, salt, pepper, dill, onion, green pepper and bacon.
  • Transfer to a greased 13x9 baking dish.
  • Bake, uncovered, for 35-45 minutes or until a knife inserted in the center comes out clean.

This is a great brunch dish. It lends well to whatever breakfast meat you like best. You can put it together the night before and just throw it in the oven in the morning. It's great to sleep in on Sunday and then pop this in the oven make some coffee and then sit back and enjoy a yummy casserole. Is also great with some mimosa's...

5 large eggs
1 c ham cubed or bacon cooked and crumbled, or sausage browned
8 oz sharp shredded cheese
1 medium onion diced
1/2 c milk
1 can(s) grands biscuits cut into fourths.
8 oz cream cheese cubed
salt and pepper to taste

Steps:

  • 1. Preheat oven 350 degrees. Grease a 9x13 pan.
  • 2. Whip the eggs with milk and salt and pepper. Add the meat of choice, onion, and cheese. Place the mixture in the pan.
  • 3. Sprinkle the biscuits and cream cheese over the top. Bake for 20 to 25 minutes.

A hearty bacon, egg, and hash brown casserole for the bacon lover in all of us. Feel free to use turkey bacon rather than pork!

1 ½ pounds thick sliced bacon
½ cup chopped sweet onion
½ cup chopped red bell pepper
12 eggs
1 cup milk
1 (16 ounce) package frozen hash brown potatoes, thawed
1 cup shredded Cheddar cheese
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon dried dill

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; reserving 2 tablespoons drippings in the skillet. Crumble bacon and set aside.
  • Cook and stir onion and bell pepper over medium heat in reserved drippings until tender, about 5 minutes; remove with slotted spoon.
  • Whisk eggs and milk in a large bowl. Fold hash browns, Cheddar cheese, salt, pepper, dill, onion mixture, and crumbled bacon into egg mixture; transfer to prepared baking dish.
  • Bake in preheated oven until a knife inserted near the center comes out clean, 35 to 45 minutes.

1 bag Simply Potatoes® Shredded Hash Browns
4 tablespoons butter, melted
2 teaspoons kosher salt
1/4 teaspoons ground black pepper
2/3 cup Cheddar cheese
1/3 cup cooked bacon, chopped
6 eggs, lightly beaten
1/2 cup heavy cream

Steps:

  • Preheat oven to 400°F. In a mixing bowl, combine the hash brown potatoes, butter, salt, and pepper. Toss to combine. Transfer to a 3-quart baking dish and bake for 25 minutes until crispy. Reserve. Reduce oven to 350°F. Sprinkle the Cheddar cheese and chopped bacon evenly over the baked hash browns. In a medium bowl, combine eggs and heavy cream. Whisk to combine. Pour egg mixture over the hash browns. Bake for 20 minutes until set. Serve immediately.
