  • Fill a large steamer or pot with about 2 inches of water. Add 1 tablespoon sea salt and bring to a boil over medium heat. Put 2 lobsters (about 1 1/2 pounds each) in the steamer basket or directly in the pot; cover and steam until the shells turn bright red, 8 to 10 minutes. Remove the lobsters and rinse under cold water until slightly cool. Remove the meat from the shells and roughly chop; chill the meat. Mix 1/3 cup mayonnaise, 1/4 cup diced celery, and the zest and juice of 1 lemon in a bowl. Stir in the chilled lobster meat and season with salt. Divide among 4 split-top hot dog buns and top with celery leaves.

1/2 pound fully cooked lobster meat or 1 (2 1/2 pound) live lobster
1/2 medium cucumber, peeled, seeded and finely diced
1/4 cup bottled mayonnaise
1/2 tablespoon fresh tarragon
2 small scallions, thinly sliced
Kosher or sea salt
Freshly ground pepper
2 to 3 New England-style hot dog buns
2 to 3 tablespoons unsalted butter, softened
Pickles and potato chips as accompaniment

Steps:

  • Prepare the lobster salad.
  • If using live lobsters, steam or boil them. Let cool at room temperature. Use a cleaver to crack and remove the meat from the claws, knuckles and tails. Remove the cartilage from the claws and the intestines from the tails of the cooked meat. Cut the meat into 1/2-inch dice. You may pick all the meat from the carcass and add it to the meat or freeze the carcass for soup or broth.
  • Place the cucumber in a colander for at least 5 minutes to drain the excess liquid. Combine the lobster, cucumber mayonnaise, and tarragon. Add the scallions. Season with salt and pepper. Cover with plastic wrap and chill for 30 minutes to 1 hour. Preheat a large heavy skillet (12 to 14-inches) over medium-low heat (a black cast-iron pan is perfect). Lightly butter both sides of each bun. Place them in the pan and cook for about 2 minutes until golden brown. Turn the buns over and toast the other side. Or toast the buns under a broiler instead. When the buns are ready, stuff them with the chilled lobster salad. Place each roll on a small paper or china plate; garnish with pickles and potato chips. Serve at once.

¼ cup mayonnaise
1 tablespoon fresh chopped dill
1 tablespoon fresh chopped parsley
½ teaspoon salt
½ teaspoon garlic powder
¼ teaspoon black pepper
10 New England style frankfurter rolls
5 tablespoons butter (softened)

Steps:

  • For the Lobster Salad: Drain the cooked lobster meat in a colander for 5 minutes. Set out a large mixing bowl. Then chop the fresh herbs.
  • If using claw meat, there is no need to chop it, but you can if you want smaller pieces. (If using lobster tails, chop it into bite-size pieces.) Move the lobster meat to the mixing bowl and add the mayonnaise, dill, parsley, salt, garlic powder, and pepper. Mix well.
  • Cover and chill under ready to serve.
  • For the Toasted Rolls: Spread both flat sides of the New England rolls with a generous amount of butter.
  • Heat a large skillet (or griddle) to medium heat. Place the rolls flat-side-down in the skillet. Toast for 1-3 minutes until golden-brown. Then flip and toast the other side for 1-3 minutes. Remove and repeat as needed.
  • Once all of the rolls are perfectly toasted, load them with lobster salad and serve!

1 batch Traditional Lobster Salad
6 New England-style hot dog buns
6 tablespoons unsalted butter, softened
Pickles and potato chips
1 pound fully cooked lobster meat, or 5 pounds live lobsters
1 medium cucumber, peeled, seeded and finely diced
1/2 cup Special Tarragon Mayonnaise (recipe follows) or bottled mayonnaise
3 small scallions (white and most of green parts), thinly sliced
Kosher or sea salt, to taste
Freshly ground pepper, to taste
1 large egg yolk*
1 tablespoon Dijon mustard
2 teaspoons chopped fresh tarragon
1 cup salad oil, such as safflower, sunflower or peanut
1/2 large lemon, juiced
1 tablespoon ice water
Kosher salt, to taste
Freshly ground black pepper
Cayenne pepper, to taste

Steps:

Drizzle the oil into the bowl while whisking constantly. Be sure that the mixture is smooth and well blended at all times. Stop adding the oil periodically to allow yourself time to catch up; when there is no oil visible, continue adding and whisking. When half the oil is added, add 1 teaspoon of the lemon juice. Alternate between the remaining oil and lemon juice, whisking all the while, until both are incorporated. Whisk in the ice water. (The water stabilizes the mayonnaise, which prevents separating, a common flaw of homemade mayonnaise.) Season to taste with salt and pepper and cayenne. Whisk. Store in a small container, covered and refrigerated, until needed. To assemble the roll, prepare the lobster salad and chill for at least 30 minutes. 1 pound cooked fresh Maine lobster meat, chilled
2 tablespoons mayonnaise, preferably extra heavy (see Cook's Note)
2 tablespoons butter, melted, plus more if needed
4 New England-style hot dog rolls (see Cook's Note)
Minced fresh chives, for topping
1/2 lemon, cut into 4 wedges

Steps:

  • Cut and tear the lobster meat into large chunks, closely checking for bits of shell. Keep the claws as intact as possible for the best presentation.
  • In a large bowl, use a spatula to mix the lobster meat with the mayonnaise, coating evenly. The more chilled the mayonnaise, the better it will coat.
  • Heat a skillet or griddle over medium-high heat. Using a pastry brush, liberally brush the melted butter on both sides of the hot dog rolls and place in the skillet. Toast each side to a golden brown color, using more butter as needed.
  • Fill each roll with about 4 ounces of the lobster mixture. Sprinkle the tops with chives. Serve with a lemon wedge, which can also be squeezed on top.
  • Serve immediately--the goal is to serve when you still have a warm, buttery roll with the cool creamy lobster meat. Enjoyed best with a view of the ocean.

BOILED MAINE LOBSTER

1 gallon water
Pinch sea salt
1 bunch fresh parsley
4 bay leaves
1/4 cup whole black peppercorns
4 (1 1/2 pound) whole lobsters or equivalent amount of lobster tails
1 pound melted butter

Steps:

  • Boil the water in a large pot with a lid and add salt, parsley, bay leaves and peppercorns. Place the lobsters into the boiling water, making sure you leave the rubber bands on the claws (to avoid being pinched). Boil covered for about 15 minutes, then remove to a tray. (If using lobster tails only, the cooking time will be less. Boil until the meat is no longer translucent.)
  • To shell the lobster, separate the tail from the body by lightly twisting. Remove the claws, and using a lobster cracker or nut cracker, extract the lobster meat and place on a serving platter.
  • Put the melted butter in appropriately sized bowls for dipping the lobster pieces and enjoy!
  • Note: You can keep the stock from the pot for when you need stock (for soups or other recipes) in the future. Strain, allow to cool, and freeze in labeled containers or plastic bags in 1/2 or 1 cup increments. I actually like to freeze them in ice cubes containers (each cube is about 1/8 of a cup) and then toss them into a labeled plastic bag. (Waste not, want not!)
