MAIN DISH MACARONI SALAD



Main Dish Macaroni Salad image

A nice dish to bring to a barbecue. Can be made the night before, but keep the tomatoes out until a couple hours before serving.

Number Of Ingredients 8

1 cup mayonnaise
¼ cup grated Parmesan cheese
¼ cup chopped parsley
2 tablespoons milk
1 clove garlic, minced
2 cups corkscrew pasta
1 ½ cups diced ham
2 cups halved cherry tomatoes

Steps:

  • Cook pasta in a large pot of boiling water until al dente. Drain, rinse, and drain once more. Set aside.
  • In a large bowl, combine mayonnaise, grated cheese, parsley, milk, and garlic. Mix well. Stir in pasta, ham, and tomatoes. Chill several hours.

This is one of my favorite cookbooks "Company's Coming Cookbook" Salads by Jean Pare c 1984. I have made this recipe many times and even taken it to a Birthday BBQ. It was well liked and even had a request for the recipe. Great summer time picnic or BBQ recipe. We enjoy it and hopefully you will as well.

Number Of Ingredients 9

2 cups macaroni
3/4 cup celery, chopped
2 tbsp sweet pickle relish (green relish)
2 tbsp grated onion (or chopped green oniion)
2 hard boiled eggs, chopped (optional)
3/4 cup salad dressing or mayonnaise
1 tsp salt
1/4 tsp pepper
radishes and parsley for ganish (optional)

Steps:

  • 1. Cook macaroni according to package directions.
  • 2. Drain very well, cool.
  • 3. Add celery, relish, onion, and chopped eggs.
  • 4. In a small bowl combine salad dressing, salt and pepper.
  • 5. Pour over salad. Stir. Chill.
  • 6. Radish and/or parsley garnish optional
  • 7. Serves 6
