This recipe is from the RSVP section of Bon Appetit magazine from the Zenith American Grill, Denver, CO. It is really good, and other seafood, such as swordfish can be substituted. ZWT Region West (Hawaiian mahimahi).

2 medium russet potatoes, peeled, 1/4-inch dice
2 cups chicken stock
2 tablespoons dry white wine
1 garlic clove, minced
1/2 cup parmesan cheese, freshly grated
2 tablespoons butter
2 teaspoons olive oil
12 ounces mahi mahi fillets, 1-inch thick
1 1/2 teaspoons four peppercorn blend, crushed
3 tablespoons brandy
1/2 cup chicken stock
1/3 cup whipping cream
1 tablespoon butter

Steps:

  • For RISOTTO:.
  • Combine potatoes, stock, wine and garlic in medium nonstick skillet over high heat. Boil until almost all liquid evaporates and potatoes are tender, stirring occasionally, about 12 minutes. Mix in Parmesan cheese and butter. Season with salt and pepper. (Can be made 2 hours ahead. Let stand at room temperature).
  • FOR FISH:.
  • Preheat oven to 350ºF. Heat oil in large ovenproof skillet over medium heat. Season fish on both sides with salt and half of peppercorns. Add to skillet; cook 5 minutes per side. Transfer skillet to oven and bake fish until cooked through, about 5 minutes.
  • Transfer fish to plate. Tent with foil to keep warm. Place same skillet over medium heat. Add brandy and boil 30 seconds, (mixture may ignite). Add stock, cream and remaining crushed peppercorns and boil until reduced to 1cup, about 5 minutes. Remove from heat and whisk in 1 Tablespoon butter. Season to taste with salt.
  • Meanwhile, rewarm risotto over low heat. Divide between 2 plates. Top with fish and spoon sauce over.

1/2 cup white wine
1 shallot, minced
2 tablespoons shredded parmesan cheese
2 garlic cloves
1/3 cup chopped walnuts
1 tablespoon extra virgin olive oil
1/4 cup packed fresh cilantro leaves
1/8 teaspoon ground black pepper
1 (12 ounce) jar roasted red peppers, drained
4 (6 ounce) mahi mahi fillets
salt & fresh ground pepper
1 tablespoon butter
1/8 teaspoon ground black pepper
1/4 teaspoon salt

Steps:

  • Preheat an outdoor grill for medium-high heat.
  • Place the wine and shallot in a saucepan over medium-high heat. Bring the mixture to a boil, then reduce the heat to medium-low and reduce the liquid down by about half, about 4 minutes. Remove from heat and set aside.
  • Place the Parmesan cheese, garlic, and walnuts into a food processor; process until finely chopped. Add the olive oil, cilantro, and 1/8 teaspoon black pepper; process until smooth. Remove the cilantro pesto from the food processor and set aside.
  • Place the red peppers into the food processor, pour in the wine reduction, and process until smooth. Pour the entire mixture back into the saucepan and bring to a boil over medium-high heat. Reduce the heat to medium and simmer the sauce for 4 minutes. Meanwhile, season both sides of the mahi mahi fillets with salt and pepper.
  • Cook the mahi mahi on the preheated grill until the fish is golden and flakes easily with a fork, about 4 minutes per side.
  • Whisk the butter, 1/8 teaspoon black pepper, and 1/4 teaspoon salt into the red pepper sauce until smooth. Spoon the red pepper sauce onto the bottom of the serving plate, arrange the fish on the sauce, and top with the cilantro pesto to serve.

1-ounce potato pearls
1/4-ounce butter, softened
1 teaspoon chopped parsley leaves
Salt and freshly ground black pepper
1 (12-ounce) mahi fillet
1/2 tablespoon herb butter
3 tablespoons garlic lime broth, plus another 3 tablespoons
2 tablespoons white wine
5 cloves garlic, roasted
1/2-ounce fried spinach
1 lemon wedge, for garnish
1 sprig parsley, for garnish

Steps:

  • Preheat the oven to 250 degrees F.
  • In a medium bowl, mix the potato pearls with the butter, parsley, and salt and pepper, to taste. Set aside.
  • Preheat a flat-top griddle or medium skillet over medium-high heat. Season the mahi fillet with the herb butter, salt, and pepper. Top the fillet with the potato pearl mixture. Place the fish on the hot griddle, with the potato pearl side down. Sear on each side until golden brown. Place the fillet in a non-reactive pie pan, and then add 3 tablespoons lime broth, 2 tablespoons water, and the white wine. Place the pan in the oven, and bake for 8 minutes. Remove fish to a large serving bowl with the roasted garlic and remaining lime broth. Top with the fried spinach, and garnish with the lemon and parsley sprig.

3 medium sweet red peppers, cut into thick strips

We were trying to find some more fish recipes (something other than salmon) for the kids and we stumbled upon some great recipes on the Food Network website using mahi-mahi. Being our first time cooking mahi-mahi, we had to do a little more research than usual because we didn't to want to ruin such nice fish as these (okay they were on the expensive side; $13 for less than a pound). Because they were such nice cuts, I thought I would attempt a classic dish with sauce and presentation to equal fine dining (haha, I got a good chuckle reading that back again). Anyways, I only tweaked one major thing with this dish and that's the risotto. In place, I just used regular sticky rice and added diced shallots and butter to resemble the original dish and it worked out fairly well. Besides this, the other steps were followed as is and you can find the original recipe down below.

1 mango
1 teaspoon rice wine vinegar
1 tablespoon fresh cilantro leaves
1 garlic clove, quartered
1 teaspoon chopped fresh ginger
1 ounce bottled water
1/4 cup canola oil
1 1/2 teaspoons stone ground mustard
1 lime
salt and pepper (to taste)
1 tablespoon olive oil
1 tablespoon chopped shallot
1 cup arborio rice
1/2 cup white wine
3 cups chicken stock
2 tablespoons unsalted butter
4 (6 ounce) mahi mahi fillets
1/4 cup olive oil
fresh ground black pepper
2 -3 scallions, chopped, for garnish

Steps:

  • Peel the mango, cut into slices, and drop into the feed tube of a running blender to puree. Add the rice wine vinegar, cilantro, garlic, ginger, water, oil, mustard, and lime juice. Season with salt and pepper, to taste, and set aside.
  • Bring chicken stock to a simmer. In a separate large saucepan on an adjacent burner, heat the olive oil and add the shallots and the rice. Lightly saute: you actually are toasting the rice. Cook until the rice becomes translucent and the shallots become soft, stirring constantly. Add the white wine to deglaze the pan. Begin slowly adding the warm stock, 1 ladle-full at a time, to the rice pan, stirring as you go. This will bring out the starch in the rice and make the mixture creamy. As the mixture absorbs the broth, ladle more into the pot.
  • When the first ladle of stock has been absorbed into the rice. When all of the stock has been ladled into the rice pot, slowly simmer until the rice is soft and creamy. Stir the butter into the risotto for more flavor and creaminess. Set aside, keeping warm until needed.
  • Heat a saute pan for the fish. Rub fish fillets with oil, salt and pepper. Place in pan, skin side facing up. Turn the fish over after 3 to 4 minutes. Cook for another 3 to 4 minutes or until done. Do not overcook the fish. It is done when the flesh springs back. Remove the fish to a utility platter. Place a mound of risotto on each plate. Top with mahi-mahi. Drizzle some mango sauce around the plate and top with chopped scallions.

4 Mahi Mahi Filets (8 oz) each
1/2 diced tomato
1/2 yellow onion, diced
1/4 cup minced cilantro
8 oz jumbo shrimp
8 oz shredded Pepper Jack cheese
3/4 cup heavy whipping cream

Steps:

  • 1. In large skillet, add diced tomatoes and diced onions. Saute with butter for about 8 mins until tender. Add whipping cream and shredded pepper jack cheese and mix until smooth. 2. In another skillet place your shrimp, sprinkle with blackening seasoning, and cook on medium heat with olive oil for about 6 mins. Add the cooked shrimp to the cheese sauce and cook on low heat for about 5 mins. 3. While the sauce continues to cook, in a third skillet, take your Mahi Mahi filets and cover with black seasoning on each side. 4. Over medium high heat with olive oil, place the filets down and cook for 3 mins on each side. After 6 mins, place the shrimp-cheese sauce over the fish and simmer for 10 mins. Sprinkle the minced cilantro over the mixture.

3 tablespoons olive oil
3 medium russet potatoes
3 garlic cloves, minced
4 mahi mahi fillets (I get the bag of frozen Mahimahi at CostCo)
3 tablespoons unsalted butter, cut into 1/4-inch pieces
4 sprigs fresh thyme
1 lemon, sliced thin

Steps:

  • Oven to 425°. Spread 1 Tbsp olive oil over the surface of rimmed cookie sheet.
  • Run the potatoes through a mandoline or slice by hand to get 1/4" thick slices. Toss potato slices with 2 Tbsp olive oil and minced garlic. Salt and pepper to taste. Arrange the potatoes into 4 piles on the cookie sheet. Bake until brown in spots and just tender, 30-35 minutes.
  • Pat the mahimahi dry with paper towels and season with salt & pepper. Place 1 mahimahi fillet on top of each potato pile. Top with butter pieces, thyme sprigs and lemon slices on top. Return to oven and continue to bake until fish flakes when poked with knife, about 15 minutes.
  • Place one potato & fish pile onto each plate and serve!
