This is a quick prep and great tasting way to fix mahi mahi. I added sides of fresh salad and artichoke to complete the meal. It's perfect for dinner time!

1 cup white Zinfandel wine
3 tablespoons lemon juice
4 cloves garlic, crushed
1 teaspoon salt, or to taste
1 teaspoon ground black pepper, or to taste
4 (8 ounce) mahi mahi fillets

Steps:

  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Stir the white Zinfandel wine, lemon juice, garlic, salt, and black pepper together in a bowl.
  • Place the mahi mahi fillets in the bowl and turn to coat with the wine mixture; allow to marinate for 10 minutes.
  • Remove the fillets from the marinade, shaking off any excess moisture from the fish. Discard the marinade.
  • Grill the fillets on the preheated oven until the fish flakes easily with a fork, 4 to 5 minutes per side.

Baked Mahi Mahi Recipe with Tomatoes & Olives image

Mahi Mahi fillets are smothered with an easy, flavorful tomato & olive sauce and baked until tender and flaky. Serve over rice for a delicious dinner in under 40 minutes!

1.5 pounds mahi mahi, (skinned and cut into 4 fillets)
1 lemon, (juiced)
1 tablespoon olive oil
1 medium onion, (peeled and chopped)
2 cloves garlic, (minced)
½ cup dry white wine ((or vegetable broth))
1 (14 oz) can cherry tomatoes
½ cup coarsely chopped Kalamata olives
1/4 cup chopped fresh parsley
2 tablespoons drained capers
1/2 teaspoon dried oregano
1/4-1/2 teaspoon crushed red pepper, (depending on your spice tolerance)
kosher salt and pepper
Cooked rice or orzo

Steps:

  • Place mahi mahi fillets in a glass or ceramic casserole dish (no metal). Season with salt and pepper. Pour lemon juice over fillets and let stand for 10 minutes.
  • Meanwhile preheat oven to 375° F.
  • Heat oil in a large skillet over medium heat. Saute onions until almost translucent. Add garlic and cook for 30 seconds. Add wine to pan and cook until liquid is reduced by half (about 3-4 minutes).
  • Add tomatoes, olives, parsley, capers, oregano and crushed red pepper to skillet and stir to combine. Season to taste with salt and pepper.
  • Ladle tomato mixture over fish in casserole dish making sure each fillet has sauce on top of it. Bake for 15-25 minutes or until fish reaches 137°F.
  • Serve immediately over rice or orzo, ladling extra sauce on top.

4 sprigs fresh thyme
8 sprigs fresh parsley
2 bay leaves, preferably fresh
8 cloves garlic, smashed
4 (6-ounce) skinless mahi mahi fillets
Kosher salt and freshly ground black pepper
3/4 cup dry vermouth
4 tablespoons extra-virgin olive oil
2 teaspoons freshly squeezed lemon juice
12 cherry or pear red and yellow tomatoes, for garnish

Steps:

  • Preheat oven to 450 degrees F.
  • Make a bed of herbs in a medium gratin dish or baking dish with the thyme, 4 of the parsley sprigs, and the bay leaves. Scatter the garlic on top. Season both sides of the fish with salt and pepper and place on top of the herbs. Add the vermouth and drizzle 2 tablespoons of the oil over the fish. Cover loosely with foil and bake until the fish is opaque, about 15 to 20 minutes, depending on how thick the fillets are.
  • Carefully pour the pan juices into a small saucepan and set the fish aside. Reserve the garlic and 4 thyme sprigs. Bring the sauce to a boil over high heat and cook until reduced by half, about 5 minutes. Whisk in the remaining 2 tablespoons olive oil and the lemon juice. Season with salt and pepper. Set aside.
  • Divide fish among 4 serving plates. Pour sauce over fish and garnish with the 4 remaining parsley sprigs, the reserved garlic and thyme, and tomatoes.

1 tablespoon chopped garlic
1 lemon, juiced
1/4 cup white wine
1-ounce unsalted butter, melted or cubed

  • In a large saute pan, heat the oil. Add the mahi and cook until the underside is golden brown. Turn the fish over and add the garlic, lemon juice, and white wine. Once the wine and lemon juice have cooked down, add the butter. Finish cooking and season with salt and pepper.

¼ cup butter
2 tablespoons finely chopped shallot
¼ cup finely chopped garlic
6 tablespoons fresh lemon juice
3 tablespoons dry white wine
kosher salt to taste
ground black pepper to taste
2 tablespoons chopped sun-dried tomatoes
2 tablespoons artichoke hearts, drained and chopped
2 tablespoons cold butter, cut into pieces
1 cup all-purpose flour, or as needed
1 teaspoon seasoned salt, or to taste
2 (3 ounce) fillets mahi mahi fillets
1 tablespoon olive oil

Steps:

  • Melt 1/4 cup butter in a large skillet over medium heat. Cook and stir shallot and garlic in butter until soft and fragrant, about 5 minutes.
  • Pour lemon juice and white wine into the skillet; season with kosher salt and black pepper. Cook the liquid at a simmer, stirring occasionally, until the liquid reduces enough to stick to the back of a spoon, 20 to 30 minutes.
  • Stir tomatoes and artichoke hearts into the reduced sauce; cook until warmed, 2 to 3 minutes more. Remove skillet from heat, add cold butter pieces, and swirl skillet off heat until the butter melts and emulsifies into the sauce.
  • Stir flour and seasoned salt together in wide, shallow bowl. Dredge mahi mahi fillets in flour mixture to coat.
  • Heat olive oil in a separate skillet over medium heat. Pan-fry mahi mahi in the oil until the fish flakes easily with a fork in the center, 3 to 5 minutes per side. Transfer mahi mahi to a platter; top with the sauce.

1 medium onion, chopped
1 medium green pepper, chopped
4-1/2 teaspoons olive oil, divided
1 garlic clove, minced
3/4 cup salsa
1/2 cup white wine or chicken broth
1/4 cup halved Greek olives
1/2 teaspoon Greek seasoning
4 mahi mahi fillets (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup crumbled tomato and basil feta cheese

Steps:

  • In a large ovenproof skillet, saute onion and green pepper in 1-1/2 teaspoons oil until tender. Add garlic; saute 1 minute longer. , Stir in the salsa, wine, olives and Greek seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until slightly thickened. Transfer to a bowl; set aside., Sprinkle mahi mahi with salt and pepper. In the same skillet, lightly brown fillets in remaining oil for 2 minutes on each side. Spoon salsa mixture over fillets. , Bake, uncovered, at 425° for 6 minutes. Sprinkle with cheese; bake 2-3 minutes longer or until fish just turns opaque.

2 mahi-mahi fillets (I used frozen fillets from Trader Joe's)
1-2 garlic cloves, chopped
2 lemons, juiced
1/2 cup white wine
1 tablespoon unsalted butter
Sea salt, pepper, garlic salt, lemon pepper

Steps:

  • 1) Make sure fillets are rinsed and dried very well. The fish won't brown properly if it's damp. 2) Once dry, season the fillets to taste with the salt, pepper, lemon pepper and garlic salt on both sides. 3) Combine the wine, lemon juice and garlic in a container and set aside. 4) In a large saute pan or skillet, heat the oil over medium high heat. Add the mahi and cook until the underside is golden brown, about 3 minutes. Turn the fish over and let cook for 1 minute. 5)Add the white wine, lemon juice, garlic combination. Let that cook for about 2 minutes. 6)Once the wine and lemon juice have cooked down, add the butter and whisk it into the sauce. 7)Once fish is cooked through plate immediately. Ladle the white wine sauce from the pan on top of each piece of fish before serving.
