3 tablespoons butter
8 fluid ounces heavy whipping cream
salt to taste
1 pinch ground nutmeg
¼ cup grated Parmesan cheese
¼ cup grated Romano cheese
1 egg yolk
2 tablespoons grated Parmesan cheese

Steps:

  • Melt butter or margarine in a saucepan over medium heat. Add heavy cream, stirring constantly. Stir in salt, nutmeg, grated Parmesan cheese, and grated Romano cheese. Stir constantly until melted, then mix in egg yolk. Simmer over medium low heat for 3 to 5 minutes. Garnish with additional grated Parmesan cheese, if desired.

1 cup heavy cream
Salt and freshly ground black pepper
2 cups freshly grated Parmesan
Pasta cooking water, as needed

Steps:

  • In a saucepan or skillet, warm the butter and cream. Season with salt and pepper. Add the Parmesan and stir until melted.
  • Toss to combine, thinning with pasta water if necessary.

1 1/2 cups heavy cream
1 large egg yolk
2 tablespoons butter
1 small garlic clove, finely chopped
1 cup finely grated Parmesan (about 1 1/2 ounces)
Black pepper, to taste

Steps:

  • In a medium bowl or large measuring cup, whisk the cream and egg yolk together until combined; set aside.
  • In a medium saucepan, heat the butter over medium-high. Add the garlic and sauté until fragrant and sizzling, about 2 minutes. Pour the cream mixture into the garlic butter, reduce heat to medium and cook, stirring frequently, until mixture is hot but not boiling, about 5 minutes.
  • Whisk in the Parmesan little by little, and cook over medium, whisking frequently, until creamy and thickened, 3 to 5 minutes. Season to taste with pepper.

2 cups milk

MAGNIFICENT ALFREDO SAUCE

Best quick dinner around. Keep an air-tight jar of mix on the shelf (refrigeration is not required). When you need a fast, "elegant" dinner, thaw out some frozen shrimp, mix up just enough Alfredo sauce and serve in 15 minutes with your favorite pasta. Works nicely for 1 person or a large family. I sometimes use frozen shrimp, scallops, mussels, fresh mushrooms, canned peas and pimentos for a fancy Seafood Alfredo. Just saute the fish and veggies in a small pan then mix with the sauce. Serve over linguine with garlic bread and a bag of salad on the side. Yumm

1/4 cup(s) cornstarch

Don't know where I originally got this, but this is the best alfredo sauce I have ever had outside of a restaurant. I have made it with or without the cream cheese, and with all Parmesan, and it still turns out great. The nutmeg is essential!

2 cups heavy whipping cream
2 tablespoons cream cheese, room temperature (NOT low fat!)
1/8 teaspoon ground nutmeg
1/2 cup parmesan cheese, grated
1/2 cup romano cheese, grated
1 garlic cloves, grated (optional) or 1/4 teaspoon garlic powder (optional)
salt
2 egg yolks
1/4 cup parmesan cheese (for garnish)
parsley sprig (for garnish)

Steps:

  • Melt butter in a saucepan over medium heat.
  • Add cream and cream cheese, stirring constantly, until slightly thickened.
  • Stir in nutmeg, parmesan, romano cheese, and garlic.
