Number Of Ingredients 4

1 cup peanut butter (smooth or crunchy...your choice)
1 cup sugar substitute (Splenda)
1 egg
1 teaspoon vanilla

Steps:

  • Mix together well and form into balls (about the size of large walnuts)
  • Dip fork in Splenda and press tines into cookie
  • Bake on parchment lined cookie sheet at 350 degrees for 12 minutes.
  • Let cool on sheet on cooling rack.

These cookies are made using a sugar replacement, so they are perfect for those diet-conscious snackers and/or diabetics. These would also be great cookies for someone on the Atkins diet.

1 cup peanut butter (creamy or crunchy)
1 cup sugar substitute (Splenda)
1/3 cup sugar substitute (Splenda) (optional)
1 egg
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Grease a large baking sheet.
  • In a mixing bowl, combine the peanut butter, 1 cup of Splenda, the egg, and vanilla. Stir well with a spoon.
  • Roll the dough into balls the size of walnuts. Place the balls on the prepared cookie sheet.
  • With a fork dipped in optional 1/3 cup of Splenda to prevent sticking, press a criss-cross design on each cookie.
  • Bake for 12 minutes, remove from the oven, and sprinkle the cookies with the optional 1/3 cup of Splenda.
  • Cool slightly before removing from the pan.

These Low-Carb Peanut Butter Cookies are a delicious, healthy way to satisfy your cookie craving! They come together in 1 bowl with only 5 ingredients for a super easy treat.

1 cup smooth peanut butter ((no added sugar))
1 large egg
2/3 cup erythritol
1/2 teaspoon baking soda
1/2 teaspoon vanilla essence

Steps:

  • Preheat oven to 350F (180°C) and line a cookie tray with baking paper. Set aside.
  • Add the erythritol to a Nutribullet or blender and blend until powdered. Set aside. If using a confectioner's low-carb sweetener, you can skip this step.
  • Add all of the ingredients into a medium mixing bowl and mix until a smooth, glossy dough forms.
  • Roll about 2 tbsp of dough between your palms to form a ball, then place on the prepared cookie tray. Repeat until all dough has been used. You should end up with 12-14 cookies.
  • Use a fork to flatten the cookies, creating a criss-cross pattern across the top.
  • Bake the cookies for 12-15 minutes.
  • Remove from the oven and allow to cool for 25 minutes on the baking tray, then transfer to a cooling rack for another 15 minutes.

1 cup Splenda granular (sugar substitute)
1 egg
1 teaspoon vanilla extract
1/3 Splenda granular, for rolling

Steps:

  • Preheat the oven to 350 degrees F.
  • Cover a large baking sheet with parchment paper.
  • In a mixing bowl, combine the peanut butter, Splenda, the egg, and vanilla, and stir well with a spoon -- it will be sticky.

Now I can use this cookie recipe and use sugar free and/or low sugar other ingredients and still make this for him! .
