MAGIC LEMON MERINGUE PIE

1 1/2 cups fine graham cracker crumbs
1/2 cup sugar
1/2 stick (1/4 cup) butter, melted
One 14-ounce can sweetened condensed milk
1/2 cup fresh lemon juice (about 2 large lemons)
1 teaspoon grated lemon zest
3 large egg yolks, whites reserved for meringue
3 large egg whites
1/4 teaspoon cream of tartar
1/4 cup sugar

Steps:

  • Preheat oven to 325 degrees F.
  • For the crust: In a mixing bowl, stir together the graham cracker crumbs and sugar until combined. Then, stir in the melted butter. Press the mixture firmly into a 9-inch pie plate and set aside.
  • For the filling: In a medium bowl, mix the condensed milk, lemon juice, zest and egg yolks, reserving the whites for the meringue. Pour the mixture into the crust.
  • For the meringue: Beat the egg whites and cream of tartar in a medium bowl with an electric mixer until soft peaks form, then add the sugar and whip until peaks are stiff.
  • Spread the meringue over the pie and seal to the edge of the crust. Bake until the meringue browns slightly, 15 to 20 minutes. Chill for at least 2 hours before serving.

1/4 c soft butter or margerine
4 medium eggs
1-1/2 tsp vanilla
1-1/2 c flaked coconut

Steps:

  • 1. Combine milk, sugar, biscuit mix, eggs, butter and vanilla, in a blender. Cover and blend for3 minutes on low speed.
  • 2. Pre-heat oven 350 F. Butter a 10 inch pie plate, sides and all. Pour batter into the pie plate. Let set for 5-10 minutes.
  • 3. Sprinkle the top gently with the coconut. Put in the heated oven ,on the middle rack. Bake for 40-45 minutes.

2 tablespoons cold water
1/4 cup boiling water
1 cup sugar
1/2 cup hershey's cocoa
2 cups cold whipping cream
2 teaspoons vanilla extract
1 packaged graham cracker crumb crust

Steps:

  • Sprinkle gelatin over cold water in a small bowl. Let stand 2 minutes to soften.
  • Add boiling water. Stir until gelatin is completely dissolved and mixture is clear. Cool slightly.
  • Mix sugar and cocoa in large bowl.
  • Add whipping cream and vanilla.
  • Beat with mixer on medium speed until stiff, scraping bottom of bowl often.
  • Pour in gelatin mixture and beat until well blended.
  • Spoon into crust. Refrigerate about 3 hours.
  • Garhis with whipped cream and chocolate chips or Hershey's Mini Kisses.
  • Refrigerate leftovers.

1 (14 ounce) can sweetened condensed milk
1/2 cup lemon juice
2 egg yolks (whites reserved to make meringue)

Steps:

  • Blend milk, juice, and yolks until thick (5 minutes or so).
  • Pour into pie shell.
  • In clean bowl, beat egg whites with sugar to taste until thick (stiff peaks).
  • Cover pie with meringue.

1 8 inch baked pie shell, or graham cracker crust
PIE FILLING:
1 can(s) 15 oz eagle brand sweetened condensed milk
1/2 c lemon juice (fresh, reconstituted, or frozen)
1 tsp lemon peel, grated fresh or dried
2 egg yolks, reserve whites
FOR MERINGUE:
2 room temperature egg whites (reserved from above)
1/4 tsp cream of tartar
1/4 c sugar

Steps:

  • 1. Preheat oven to 325 F
  • 2. In medium sized mixing bowl, blend milk, lemon juice, lemon peel, and yolks until thickened. Turn into pie shell and set aside
  • 3. Meringue: Whip the whites with cream of tartar until they hold a soft peak. Gradually whip in sugar (one Tbsp at a time) Continue whipping until the whites hold a firm peak.
  • 4. Pile onto pie filling and seal to the inside edge of pie shell. Swirl the top as desired -- but don't play in it or let it sit too long because it will begin to "weep."
  • 5. Immediately place in a 325 F oven and bake until golden brown (about 15 minutes). Cool before serving.
  • 6. For those who don't want to eat raw eggs these are alternate directions found on another recipes: 1. Beat egg yolks; whisk in lemon rind, sweetened condensed milk and lemon juice. Pour into prepared crust. 2. Bake in preheated 325°F (160°C) oven for 25 minutes. Remove from oven. Increase oven temperature to 350°F (180°C). 3. Beat egg whites with cream of tartar until foamy; gradually add sugar beating until stiff peaks form but not dry. Spread meringue on top of hot pie, sealing carefully to edge of crust. 4. Return to oven and bake for 10 minutes or until meringue is golden brown. Cool. Chill before serving, if desired.

1 cup sweetened shredded coconut
1 3/4 cups graham cracker crumbs
3/4 cup butter (1 1/2 sticks)
1 cup toasted pecans, chopped (can substitute 1/2 cup peanut butter melted slightly in the microwave for a yummy, peanutty twist)
1 cup semisweet chocolate chips
3/4 cup butterscotch chips
1 (14 ounce) can sweetened condensed milk

Steps:

  • Preheat oven to 300°F.
  • Butter a 9-inch pie plate. Melt butter and pour over graham cracker crumbs and toasted coconut in a large bowl; stir until combined. Cool slightly and press with your hands into the bottom and sides of the buttered pie plate.
  • Refrigerate the crust for 15 minutes, then bake for 10 minutes or until golden brown. Cool for at least 20 minutes while preparing filling.
  • Increase the oven temperature to 325°F If doing the peanut butter version of this pie, spread slightly melted soft peanut butter evenly on the crust bottom with a plastic or offset spatula.

1 tsp vanilla
2 c milk
1 1/2 c shredded coconut

  • 1. Grease a Pie plate and Heat oven to 350 degrees. In a large mixing bowl, add sugar and flour, stir well. Beat the eggs in a smaller separate bowl. Add the beaten eggs to the dry mixture then add the remaining ingredients to the mixing bowl and stir well.

It sometimes doesn't quite set as solid as a typical lemon meringue pie, but my favorite is to eat it a little warm and gooey. Otherwise it will set in the refrigerator to a pudding like consistency.

1 prepared graham cracker crust
1/2 c lemon juice
1 tsp grated lemon rind
1 can(s) 15oz sweetened condensed milk
2 eggs, separated
1/4 tsp cream of tarter
4 Tbsp sugar

Steps:

  • 1. 1. Combine Lemon Juice, lemon rind, and sweetened condensed milk. 2. Add two egg yolks and stir until blended. 3. Pour into graham cracker crust. 4. In a chilled glass bowl, add two egg whites and cream of tartar. (Or double if you like extra high meringue) 5. Beat until almost stiff enough to hold a peak. 6. Gradually add sugar and continue beating until stiff but not dry. 7. Pile meringue on top of lemon filling sealing to edges. Use the back of the spoon to lightly create peaks. 8. Bake in a slow oven (325 F) until lightly browned, about 15 minutes. Cool.

4 eggs, room temperature, separated
1 teaspoon cream of tartar
3/4 cup brown sugar, firmly packed
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup pumpkin puree
3/4 cup melted butter
3/4 cup plain all-purpose flour
2 cups evaporated milk, unsweetened
powdered sugar, for topping

Steps:

  • Preheat oven to 160C/320F and line the base and sides of a 20x20cm/8x8inch square tin.
  • Whisk the egg whites with the cream of tartar until stiff. Scoop out and place in a clean bowl.
  • Using the same mixing bowl, whisk the egg yolk and brown sugar until paler in colour.
  • Add the vanilla, cinnamon, nutmeg and pumpkin and whisk for 30 seconds until combined.
  • Add the melted butter and whisk for 1 minute.
  • Add flour and mix on slow to incorporate.
  • Then add the evaporated milk in slowly to the mixture mixing.
  • Add the egg whites in three lots folding in after each addition so that there are no white streaks or clouds of white.
  • Pour into the prepared tin and bake for 60-70 minutes (until the centre of the cake is no longer wobbling). Cool completely. Serve with icing sugar on top.

Steps:

  • Thoroughly mix crust ingredients and pack into a nine inch pie pan.
  • Bake at 375 degrees for 10 minutes and put aside to cool.
  • Reduce oven temperature to 325 degrees.
  • In a mixing bowl, combine condensed milk, lemon juice, lemon zest and egg yolks.
  • Stir until mixture thickens.
  • Pour into cooled crust.
  • Add cream of tartar to the egg whites and beat until almost stiff.
