MAGGIE'S LEMON & SUGAR CAKE

This recipe is from my future mother in law, and it is just amazing. Soooo easy that it now makes a regular weekday appearance. I recommend following the recipe to the letter, but have made an amendment to the glaze because I think it's too gritty if you don't heat the sugar and lemon juice before spreading it over the cake. Mmm...think I'll go make one of these now!

125 g softened butter, in small pieces
1 1/4 cups self-raising flour
1 teaspoon baking powder
3/4 cup sugar (caster or regular)
2 large eggs
4 tablespoons milk
1 lemon, zest of
1 lemon, juice of
3 tablespoons sugar

Steps:

  • Mix all ingredients in a food processor for about 15 seconds.
  • Then put it into a 20 cm tin and bake on 325F/170C for about 35 minutes. Mine is usually done by then, but the recipe says 45 minutes.
  • Mix the juice of one lemon and 3 tbs sugar, then heat it in the microwave for about 20-40 seconds until the sugar is melted into the lemon juice.
  • Let the cake cool for 10 minutes, then pour the lemon/sugar mix on top.

BREAD MACHINE MORAVIAN SUGAR CAKE

This makes a great sugar cake without all the work. My boys beg me to make this all the time and since it uses the bread machine I can.

1/2 cup instant potato flakes
5/8 cup water
2 eggs
3 cups all-purpose flour
1 teaspoon salt
1/2 cup butter
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 teaspoons bread machine yeast
1 cup light brown sugar
2 teaspoons ground cinnamon
1/2 cup melted butter
3/4 cup confectioners' sugar
4 teaspoons milk, about

Steps:

  • Place dough ingredients in bread pan, select Dough setting and press Start.
  • When dough has risen long enough, the machine will beep.
  • Turn off bread machine, remove bread pan, and turn out dough onto a floured countertop.
  • Grease a 15x10x1 inch jelly-roll pan or 16x12x1 inch baking pan.
  • Place dough in pan; gently stretching it, press it evenly into pan.
  • Cover and let rise in warm oven 30 to 45 minues until doubled.
  • In small bowl, combine brown sugar and cinnamon for the topping.
  • With 2 fingers, poke deep holes all over the dough.
  • Sprinkle sugar mixture evenly over dough.
  • Drizzle melted butter on top.
  • Preheat oven to 350 degrees.
  • Bake for 20 to 25 minutes until golden brown.
  • Remove from oven, place on serving plate.
  • Serve warm without icing or allow coffee cake to cool sightly and combine the confectioners' sugar and milk for the icing and drizzle on top of cooled coffee cake.

1 cup (2 sticks) unsalted butter, room temperature, plus more for pans
2 1/2 cups all-purpose flour (spooned and leveled), plus more for pans
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 tablespoon lemon zest
2 cups sugar
2 large eggs plus 3 large egg yolks
1/4 cup plus 2 tablespoons fresh lemon juice
1 cup low-fat buttermilk
1 lemon, thinly sliced and seeded

Steps:

  • Preheat oven to 350 degrees. Butter and flour two 8-by-2-inch cake pans, tapping out excess flour. In a medium bowl, whisk flour, baking powder, baking soda, salt, and lemon zest.
  • In a large bowl, using an electric mixer, beat butter and 1 1/2 cups sugar until light and fluffy. With mixer on low, beat in eggs and yolks, one at a time. Beat in 2 tablespoons lemon juice. Alternately beat in flour mixture and buttermilk beginning and ending with flour mixture; mix just until combined.
  • Divide batter between pans; smooth tops. Bake until cakes pull away from sides of pans, 32 to 35 minutes. Let cool in pans 10 minutes. Run a knife around edges of pans and invert cakes onto a wire rack.
  • While cakes are baking, bring remaining 1/2 cup sugar and 1/2 cup water to a boil in a saucepan. Add lemon slices and simmer 25 minutes. Using a slotted spoon, transfer lemon slices to a waxed-paper-lined plate. Stir remaining 1/4 cup fresh lemon juice into syrup.
  • Using a toothpick, poke holes in warm cakes on rack. Brush with lemon syrup. Let cool completely. Prepare frosting, substituting 2 tablespoons fresh lemon juice for vanilla extract. Frost cooled cakes and top with candied lemon slices.

3 cups unbleached all-purpose flour (spooned and leveled), plus more for pans
3/4 teaspoon kosher salt
1/2 teaspoon baking soda
2 tablespoons finely grated lemon zest (from 2 lemons), plus 4 tablespoons fresh lemon juice
2 1/2 cups granulated sugar
6 large eggs
1 teaspoon pure vanilla extract
1 cup sour cream
Candied Lemon Slices and Lemon Syrup
2 cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees. Butter and flour two 8 1/2-by-4 1/2-inch (6-cup) loaf pans; set aside. In a medium bowl, whisk together flour, salt, baking soda, and lemon zest; set aside.
  • In a large bowl, using an electric mixer on high speed, beat butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition; mix in vanilla. With mixer on low, alternately add flour mixture in three parts, and sour cream in two, beginning and ending with flour mixture.
  • Divide batter between prepared pans; smooth tops. Bake until a toothpick inserted in center of cakes comes out clean, 55 to 65 minutes (tent loosely with foil if browning too quickly). Meanwhile, make Candied Lemon Slices and Lemon Syrup.
  • Remove cakes from oven; while they're still in pans, use a wooden skewer or toothpick to poke several holes in tops. Setting aside 1/4 cup Lemon Syrup, pour remainder over cakes. Let cakes cool completely in pans, about 2 hours. Remove from pans, and place, right side up, on a rack set over a rimmed baking sheet. Brush cakes all over with reserved syrup.
  • In a small bowl, whisk confectioners' sugar with 2 tablespoons lemon juice; add up to 2 more tablespoons juice until pourable but thick.
  • Pour lemon glaze over cakes (still on cooling rack), letting it drip down the sides. Let set, about 30 minutes. Garnish with Candied Lemon Slices.
