MADUROS (FRIED SWEET PLANTAINS)
Tender in the middle and crisp at the edges, maduros, or sweet fried plantains, are served as a side dish throughout the Caribbean and Latin America. Plantains change color as they ripen: They are firm when green and unripe, then soften as they turn yellow, and eventually, black. Like bananas, plantains develop more sugar as time passes. For the sweetest maduros, use blackened plantains - they have the most sugar, and will yield a more caramelized result. If you can only find yellow ones at the store, buy them in advance and be prepared to wait over a week for them to fully ripen. They're worth it.

Steps:
- Use a paring knife to cut a slit along the length of the plantains, carefully avoiding cutting into the flesh. Remove peels and discard. Slice plantains at an angle crosswise into 1/2-inch-thick pieces (about 12 pieces per plantain).
- In a large skillet, heat about 1/8 inch vegetable oil over medium-high. When the oil shimmers, add half the sliced plantains and fry until golden brown, turning once, 2 to 3 minutes per side. The plantains should be caramelized and slightly crisp at the edges but still tender in the middle.
- Using a slotted spoon, transfer maduros to a paper towel-lined plate to drain. Repeat with remaining sliced plantains. Serve immediately.
MADUROS
This recipe is one of the most simple ways to cook (ripe) plantains. Platanos maduros (fried sweet plantains) topped with sea salt make for a sweet and salty treat that can be served as a side dish or appetizer any time of day.

Steps:
- Heat approximately 1/4 inch of oil, or just enough for plantain slices to be halfway submerged, in a medium skillet over medium heat.
- Cut off the ends of the plantains. Slit the skin of each plantain by running the tip of your knife from one end of the "rib" to the other; peel the skin. Cut at an angle, making slices that are about 3/4-inch thick.
- Brown plantain slices in the hot oil until brown, 2 to 4 minutes per side. Remove from the skillet and place on a paper towel-covered plate to drain off excess oil. Sprinkle with salt while still moist.

SWEET PLANTAIN OMELET WITH FRIED BREAD AND ROASTED RED PEPPER SAUCE: TORTILLA DE MADUROS CON PAN FRITO Y SALSA CRIOLLA
Steps:
- In a medium mixing bowl, sift together the flour, powdered milk, salt, and baking powder. On a flat surface, make a well with the combined dry ingredients. Place the shortening and 1 cup of water in the well. Working your way inward, start to work the shortening and dry ingredients into a dough. When dough is no longer sticky, cover with oiled plastic wrap and let the dough res for 1 hour.
- On flat floured surface, roll out the dough to a circle about 1/2-inch thick. Using a 3-inch cookie cutter, cut round pieces from the dough.
- Heat up about 2 inches of oil at 350 degrees, and then fry the dough for about 1 minute on each side until they puff. Place in a warm oven only until the omelet is ready.
- Whisk the eggs in a small bowl with a sprinkle each of salt and pepper.
- Cut plantains on a bias and fry in very hot oil until golden on both sides, then remove from oil and set aside.
- In a separate pan, saute 2 onions in 1 tablespoon of olive oil for about 2 minutes then add the fried plantains and pour the eggs in. Turn the heat down to low and cook for about 8 minutes or until the top is almost thoroughly cooked. Flip the omelet over and cook for about 6 more minutes. Saute the remaining onion in 3 tablespoons of oil, add the roasted peppers, garlic, and cilantro. Cook until tender then puree and season with salt and pepper, to taste.
- Cut omelet into 4 equal quarters and serve on top of pepper sauce with the fried bread.
MADUROS-AND-CHORIZO STUFFED MUSHROOMS
Maduros are a very popular ingredient in Cuba. They are plantains that are ripe and sweet, as compared to green plantains. The riper and blacker the plantains are, the sweeter they will be when cooked.

PLATANOS MADUROS (COSTA RICAN FRIED RIPE PLANTAINS)
I learned to make these from my friend Adrián Marchena while I spent a semester of college in Puntarenas, Costa Rica. I have not personally made these, but I stood next to him in his kitchen as he gave me step-by-step instructions. These are sweet, and almost dessert-like. You can find plantains in most local supermarkets in the produce section, and they look like bananas, but are more of a vegetable. They are quite frequently eaten by Costa Ricans, or "ticos" with meals that include gallo pinto (rice and black beans) and some meat product. I LOVE these!

Steps:
- Heat vegetable oil in skillet over medium heat.
- Fully peel plantains, and cut them diagonally into approximately 1-inch wide pieces, working your way down the length of the plantain. (NOT length-wise slices).
- Carefully place pieces of plantain in skillet.
- Flipping often, fry plantains until golden brown. The Plantains will be rather mushy - they're supposed to be.
- *They will be sweet - the riper the plantains, the sweeter they will be. (They will NOT taste like patacones, if you've tried those) If you prefer them sweeter, you can sprinkle with sugar before cooking.

PASTELON DE PLATANOS MADUROS
Pastelon is a Puerto Rican dish first recommended to me by one of my nurses, who is from Puerto Rico. Picture a lasagna, but instead of noodles for the separating layers, you use plantains. It's SO good! There are many variations, but this is how I prepare it. Plus, a lot of the common additions to Pastelon - like capers, olives or raisins, if you desire. This is Maldo's recipe and made it last night and thought I'd share ;) I used my recipe #207700.

PLATANOS MADUROS
Platanos Maduros... Cuban style fried sweet plantains. The trick is to to let your plantains ripen to a nice black- the darker the more sweet... if not they will be starchy and unsweet like a potato. As found on my blog: http://just-call-me-t.blogspot.com/2011/07/bananarama.html

- 1. Cover pan 1/4 inch with Canola oil and set to medium. Slice ripened plantains at an angle, about 1/4 - 1/2 inch each. NOTE: You have to let your plantains ripen to a nice black- the darker the more sweet... if not they will be starchy and unsweet like a potato.
- 2. Fry plantains until carmalized- turning over once. Set them on a paper towel to absorb the oil. Eat as is- no need for sugar they are sweet enough!
PLATANOS MADUROS (FRIED YELLOW PLANTAINS)
Here, two simple ingredients yield huge, complex results. There's something about frying deep yellow plantains in oil that brings out their sweetness. The crisp outside yields to a soft, sweet center, the complement to a platter of rice and beans and garlicky pork. But, to be honest, they're so good, they might not even make it to the table.

FRIED SWEET PLANTAINS, MADUROS FRITOS, PLATANITOS FRITOS
These plantains are fried semi-ripe and served along any main dish. They are are served as a typical side dish just as you would serve fried potatoes. The plantains should be yellow with dark black spots on them. They should be firm to the touch but give a little when you press on down on them. They are sweet and delicious....

Steps:
- 1. Pick two or three large yellow semi-ripe plantains. Cut the ends of with a sharp knife. With a knife take the tip and run down the seams of the plantain. Then peel away the peel like if you were peeling a ripe banana. Cut in angular chunks or slices about 1/2 inch thick but at an angle.
- 2. Heat oil in a cast iron skillet or heavy skillet. When oil is shimmering add the plantain chunks or slices and brown on each side. The plantains will cook fast. About two minutes each; watch them closely they will burn fast because of the sugar content of the plaintain. Remove to a paper towel lined plate salt a little as if salting fried potatoes and serve with your meal. Enjoy
- 3. I sliced mine in chunks at an angle pictured above. I left two plantains so you could see the color on a semi-ripe plantain. You can fry as many as you want. One plantain will yeild about four to five pieces. So one plantain will serve one or two persons depending on how many pieces you want to serve that person. I figure for a family of four I fry up about three plantains.
RECIPE: SWEET FRIED PLANTAINS (PLÁTANOS MADUROS)

Turn over each slice and cook until both sides are evenly golden, with a hint of caramelization on the edges. Remove from oil and transfer to paper towels to drain; pat off any excess oil. Serve hot. Squeeze some fresh lime juice on them if you desire.

- Arrange the fried plantains on a serving platter and top off with marinated onion.

I think I found this in a newspaper. It's one of the easiest recipes I have and takes only a few minutes to make. The plaintains should be somewhat soft with black spots on the skin for these to come out right.
