SIMPLE CAKE POPS

Everyone loves cake pops! They are simple to make, and you can create anything for any occasion. They are also nice small bites of dessert instead of large slices of cake or pie. Can be made up in partial batches and the remaining ingredients stored for a few weeks.

1 (15.25 ounce) package yellow cake mix (such as Betty Crocker®)
1 cup water
3 eggs
½ cup vegetable oil
1 (16 ounce) package prepared chocolate frosting
18 lollipop sticks
1 (14 ounce) bag chocolate candy melts
1 (.75 ounce) tube decorating icing

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Beat cake mix, water, eggs, and oil in a bowl using an electric mixer on low speed for 30 seconds. Increase speed to medium and beat for 2 minutes more. Pour batter into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 28 to 33 minutes. Cool completely, at least 1 hour.
  • Crumble cake into a large bowl. Stir frosting into cake crumbles until mixture is sticky but not too smooth. Chill in refrigerator, at least 30 minutes.
  • Roll cake mixture into 1 1/2-inch balls and arrange on a baking sheet. Place 1 lollipop stick into each ball.
  • Melt about 1/4 cup chocolate candy melts in a microwave-safe bowl in the microwave, about 20 seconds. Dip each cake pop in the melted chocolate. Repeat melting chocolate and dipping remaining cake pops. Decorate pops with decorating icing.

1 package chocolate cake mix (regular size)
1 package (3.9 ounces) instant chocolate pudding mix
3 tablespoons baking cocoa
1-3/4 cups milk
2 large eggs, room temperature
2 cups semisweet chocolate chips
Confectioners' sugar

Steps:

  • In a large bowl, combine the cake and pudding mixes, cocoa, milk and eggs. Beat on low speed for 30 seconds. Beat on medium for 2 minutes. Stir in chocolate chips. , Pour into a greased and floured 10-in. fluted tube pan. Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely. Dust with confectioners' sugar if desired.

This surprisingly tender vegan chocolate cake is made entirely in an 8-by-8-inch baking pan: Just toss in the ingredients, stir until you don't see any flour streaks, then bake. For flourish, add a small handful of chocolate chips before baking or sprinkle the finished cake with a little confectioners' sugar. Adapted from Mollie Katzen's "Honest Pretzels: And 64 Other Amazing Recipes for Kids Who Love to Cook," this recipe was developed for kids, but adults love it, too. It's an ideal snacking cake, or you could gussy it up with a simple ganache frosting.

1 1/4 cups/160 grams all-purpose flour
1 cup/200 grams granulated sugar
1/3 cup/30 grams unsweetened cocoa powder
3/4 teaspoon baking soda
1/2 teaspoon kosher salt
1/3 cup/80 milliliters canola oil
1 teaspoon vanilla extract
1 teaspoon apple cider vinegar or white vinegar
2 tablespoons semisweet or vegan chocolate chips (optional)
Confectioners' sugar, for dusting on top (optional)

Steps:

  • Heat oven to 325 degrees. Add the flour, sugar, cocoa powder, baking soda and salt to an 8-by-8-inch square glass or metal baking dish. Whisk the mixture together until uniform in color. Use your fingers to break apart any lumps.
  • Add 1 cup water along with the oil, vanilla extract and vinegar. Stir slowly with a fork or a whisk in small circles to blend. Mash, scrape and stir with a fork and spoon until the mixture becomes a smooth and uniform batter.
  • Scrape the sides of the baking dish with a rubber spatula and spread the batter in an even layer. Sprinkle with chocolate chips, if using.
  • Use a damp paper towel to wipe the edges of the baking dish clean. Carefully transfer the dish to the oven and bake until a toothpick inserted into the center of the batter comes out mostly clean, 28 to 33 minutes. (Instead of looking like you dipped the toothpick in chocolate frosting, it should look like it has some chocolate cake crumbs clinging to it.)
  • Remove from the oven, let cool, then cut the cake into squares. If you're feeling fancy, this tastes good (and looks pretty) with some confectioners' sugar dusted on top.

ONE PAN CHOCOLATE SNACK CAKE

This is a recipe my mother made when we were children. It was so moist it never needed frosting. Mom would use a paper doily to make a pretty powdered sugar design on the top. I have found a couple online, but they just were not as good.

1 1/2 cups flour
1 cup sugar
1/2 teaspoon salt
1 1/2 teaspoons baking soda
3 tablespoons baking cocoa
6 tablespoons vegetable oil
1 tablespoon white vinegar
1 teaspoon vanilla
1 cup cold water

Steps:

  • Preheat oven to 350 degrees.
  • Thoroughly mix dry ingredients in an ungreased 8 x 11" pan. Make 3 wells in the dry mixture and pour the vegetable oil in one, the vanilla in a different one and the vinegar in the last one. Pour the cold water over all and stir with fork until well blended.
  • Bake for 30 minutes. Cake is done when center springs back when lightly touched. Do not test with a toothpick or knife.

My Mom used to make this for us when I was little, usually with powdered sugar on top instead of frosting. It can easily be doubled into a layer cake or 9 x 13. I prefer chocolate cakes from scratch using cocoa..they just seem to taste better! Enjoy!

1 1/4 c flour, sifted
1/2 c shortening or butter
2 eggs
1 c sugar
1 tsp baking soda
1/2 tsp baking powder
1/4 c cocoa, unsweetened
1/2 c sour cream or greek yogurt
1/2 c boiling water
1/2 tsp salt
1/2 tsp vanilla extract
powdered sugar to sprinkle on cake

Steps:

  • 1. Preheat oven to 350 degrees. Boil water for 1/2 cup in recipe. Lightly grease 8x8 pan
  • 2. Cream sugar, eggs, shortening (or butter) and vanilla.
  • 3. In separate bowl sift together all dry ingredients. Alternate mixing wet and dry ingredients. Add boing water last, mix until smooth.
  • 4. Pour into greased pan, bake for 25-30 minutes, check at 25 minutes with toothpick to see if the cake is done. Cool completely and sprinkle with powdered sugar and serve.
