MACERATED BERRY AND CREME FRAICHE PARFAIT



Macerated Berry and Creme Fraiche Parfait image

The rich, tangy creme fraiche and a bit of vinegar cut the sweetness of the macerated berries in this parfait. You can also use vanilla ice cream in place of the creme fraiche.

12 ounces assorted berries, such as strawberries, blueberries, raspberries, and blackberries
2 tablespoons superfine sugar
2 tablespoons balsamic vinegar
One 8-ounce container creme fraiche
Amaretti biscuits

Steps:

  • Combine berries in a medium bowl. Sprinkle with sugar and vinegar. Let sit, stirring occasionally, until berries soften and start to release juices, about 30 minutes.
  • Layer berries with creme fraiche in parfait glasses. Serve immediately or refrigerate up to 3 hours. Just before serving, sprinkle with crumbled amaretti biscuits.

MIXED BERRY CREME FRAICHE CRUMBLE

4 cups mixed berries (blueberries, raspberries, blackberries, huckleberries, loganberries)
1/2 cup flour
1/4 cup sugar
1 cup creme fraiche
1/2 cup brown sugar
1 1/2 cups flour
1 teaspoon salt
3/4 cup melted butter

Steps:

  • Preheat the oven to 375 degrees F.
  • Mix together the berries, flour and sugar and pour into a 8 by 8-inch baking dish. Spread the creme fraiche over the top of the berries evenly. Mix together the brown sugar, flour and salt. Mix in the melted butter. Top the creme fraiche with this mixture. Place in the oven and bake for 25 minutes, or until the topping is golden brown.

1 pint raspberries
1 splash limoncello
2 tablespoons superfine sugar
1/2 cup fresh mint leaves, chopped

Steps:

  • In a medium bowl, combine the berries and limoncello. Sprinkle the sugar over the berries and stir until the sugar dissolves. Stir in the mint.;

12 ounces fresh ricotta cheese (preferably buffalo ricotta)
1/4 cup plus 1 teaspoon creme fraiche
3 tablespoons sugar
3/4 teaspoon pure vanilla extract
Pinch of salt

Steps:

  • Put ricotta in a fine sieve set over a bowl. Let drain 10 minutes to remove excess liquid; discard liquid.
  • Stir together ricotta, creme fraiche, sugar, vanilla, and salt in a medium bowl.

1/2 cup sugar

Steps:

  • Combine berries with sugar. Stir occasionally for 45 minutes, and watch as they transform into a vibrant, juicy sauce. Serve over ice cream, pancakes, or shortcake. For a float, alternate the berries with scoops of ice cream and top it all off with seltzer.
