MACAROON CHERRY PIE
I use homegrown cherries in this bountiful pie with its unique crunchy coconut topping. But I've found that purchased tart cherries yield a dessert that's nearly as delicious. I always bake this pie around Presidents Day or Valentine's Day, but it's popular with my family in any season. -Lori Daniels, Beverly, West Virginia

- Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. cast-iron skillet or deep-dish pie plate. Trim to 1/2 in. beyond edge of plate; flute edges. Bake 6 minutes; set aside. , Drain cherries, reserving 1 cup juice. Set cherries aside. In a large saucepan, combine sugar and cornstarch; gradually stir in cherry juice until blended. Bring to a boil over medium heat; cook and stir until thickened, 2 minutes. , Remove from heat; stir in cinnamon and food coloring if desired. Gently fold in cherries. Pour into crust. Cover edges loosely with foil. Bake at 400° 20 minutes., Meanwhile, in a large bowl, combine first 6 topping ingredients. Stir in coconut and almonds. , Remove foil from pie; spoon topping over pie. Reduce oven to 350°; bake until topping is lightly browned, 15-20 minutes. Cool on a wire rack 1 hour. Chill 4 hours or overnight before cutting.

- Preheat oven to 400F.
- Roll out pie pastry and place in 9 inch pie pan.
- In large bowl, combine pie filling, cinnamon, salt and lemon juice.
- Mix lightly.
- Spoon into crust-lined pie pan.
- Bake 20 minutes.
- Meanwhile, combine all topping ingredients in medium bowl and mix until blended.
- Remove pie from oven after 20 minutes, spread topping evenly over surface, and return pie to oven.
- Bake an additional 15 to 30 minutes, or until crust and topping are golden brown.
COCONUT CHERRY MACAROONS
Tart dried cherries, vanilla and orange zest enhance classic coconut macaroons.

- Arrange the oven racks in the upper and lower thirds of the oven and preheat to 350 F. Line 2 baking sheets with parchment.
- Whisk together the sugar, cherries, orange zest, vanilla, egg whites and salt. Add the coconut and toss until completely coated. Spoon heaping tablespoons of the batter onto the prepared baking sheets, leaving about 1-inch between each. Moisten your fingertips with water and shape each macaroon into a tall and rounded mound or pointed pyramid.
- Bake until the macaroons are toasted and the edges are lightly browned, rotating the pans halfway through the baking time, 16 to 20 minutes. Transfer to a rack to cool. Store macaroons in an airtight container for up to a week.

- In a large bowl, cream shortening and sugar until light and fluffy. Add eggs and extract; mix well. , Combine the flour, baking powder, baking soda and salt; gradually add to creamed mixture. Stir in the coconut and cherries (dough will be very stiff). , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 10-12 minutes or until lightly browned. Cool on wire racks.

COCONUT MACAROONS WITH A CHERRY TOP
My mother made these at Easter but the recipe wasn't written down. After much research, I worked with the recipe from Diane Rattay on About.com, and modified it to add the maraschino cherries like my mom did. Be sure to whip the egg whites thoroughly until stiff and glossy. A bonus is that these are a non-fat cookie.

- Preheat oven to 300°. Line baking trays with parchment paper.
- Place coconut in a large zip lock bag. Toss in 2 T. maraschino cherry juice and shake until coconut is pink. Set aside.
- Cut 18 maraschino cherries in half. Drain on paper towels. Set aside.
- Using a mixer, beat egg whites and salt at high speed until soft peaks form.
- Sprinkle sugar in, 2 tablespoons at a time, beating well after each addition until sugar is completely dissolved (allow 2 minutes after each addition of sugar). Whites should be in stiff glossy peaks when you're done.
- Beat in vanilla. With a rubber spatula, fold in coconut and flour.
- Drop coconut by rounded teaspoon about an inch apart onto the prepared baking sheets. They won't spread very much at all. Place a half cherry on top of each cookie.
- Bake at 300° for 20 minutes, or until lightly browned. Slide parchment paper and cookies directly onto a rack to cool.
- Store in tightly covered container for up to 3 days.
- Makes 36 cookies.

SO EASY MACAROON TART
This is a recipe from my down under friend. Used to live here in LV,NV for awhile then moved back to Australia for work.This is so quick and easy- great way to impress your guests and family. It may look complicated,but it is not--give it a try.

- CRUST: Heat oven to 375^. Line a 9-inch pie pan or tart pan with removable bottom with heavy-duty foil, pressing foil into the scalloped sides of pan or pie pan. Grease or spray foil and dust with flour. --- Combine all ingredients except butter and egg yolk; and place in a blender. Pulse or blend until combine; remove container and place mixture into a medium bowl; add the cold butter and beaten egg yolk and mix thoroughly. Press dough into a deep dish pie plate or spring-form pan to a 1/4 inch thickness;on Bottom and up sides. Sprinkle with 1 teaspoon granulated sugar. Prick crust all over with fork tines.Bake in oven for 10 minutes.This only needs to partially baked. Cool.
- Filling: Combine the grated lemon rind, and raspberry jam then spread evenly in bottom of cooled pie shell.Evenly sprinkle the 1/4 cup of coconut over the jam mixture.
- In a mixing bowl beat the eggs slightly with a rotary beater or fork. Stir in the 1/2 cup sugar, vanilla and salt. Gradually stir in the milks; mix well. Stir in 1 cup of the coconut.Place the pie shell on the oven rack before pouring in the pie filling. Pour filling into the pie shell carefully, so as not to disturb the raspberry/coconut layer.Sprinkle with a little nutmeg over top.
- Bake for 20 minutes in the 375^ oven. Reduce oven temperature to 350^ and bake for 35 minutes more, or till a knife inserted off center comes out clean. Let cake cool for 5 minutes then Spread meringue over top , carefully sealing to edge of pastry to prevent shrinkage. Sprinkle remaining sugar and coconut over meringue and bake in 350^ oven for 12-15 minutes or till meringue is golden. Just enough to caramelize the sugar lightly. This happen quickly so watch it closely.Cool completely on wire rack.
- Remove cake from spring-form when cake is completely cool. --- Meringue: Beat all ingredients ,except sugar in a small mixer bowl on medium speed for 1 minute or until soft peaks form. Gradually all sugar, a little at a time and beat at high speed for 4 minutes until stiff glossy peaks form and sugar is dissolved.Spread on hot mixture.Sprinkle with sugar and coconut. Bake as stated above. Enjoy.
