There are hundreds of macaroni salad recipes. All have their own variations. This one has been revised for our taste buds...we like a little more "spice" in our life! Hope you like it.

Number Of Ingredients 14

2 cup(s) macaroni, elbow
3/4 cup(s) celery, chopped
3/4 cup(s) red onion, chopped
1/2 cup(s) pimento stuffed olives or black olives, chopped
1 tablespoon(s) sweet pickle relish
1 tablespoon(s) sweet jalapeno relish (more if you prefer...)
1/2 cup(s) mayonnaise
1/4 teaspoon(s) classic yellow mustard, bottled
1 1/2 teaspoon(s) sugar
1 1/2 tablespoon(s) apple cider vinegar
3 tablespoon(s) sour cream with chives
1/2 teaspoon(s) salt
1/4 teaspoon(s) black pepper
1/3 cup(s) louisianna remoulade dressing

Steps:

  • Cook macaroni as directed on package. Drain and set aside in a bowl. Combine celery, red onion, olives, sweet jalapeno relish, sweet pickle relish. Add these ingredients to the macaroni.
  • Stir together mayo, mustard, sugar, apple cider vinegar, sour cream with chives, salt, black pepper, and Louisiana Remoulade Dressing. Mix well. Pour the dressing over the macaroni and stir well. Chill macaroni salad for 4 hours to let seasonings develop in the salad. You can make this ahead and serve the next day.

Summer time, picnics, and bar-b-que brings forth our best comfort food. We keep our outside grill busy during the summer to keep the kitchen cooler! I prepare some of our easiest and favorite side dishes that require little cooking. This macaroni salad has been one I make often to use with chicken, chops, or even burgers. Enjoy!

Number Of Ingredients 12

2 cup(s) cooked elbow macaroni
1 cup(s) red onion, chopped
1 - green onion, chopped
3 - sweet mini peppers (yellow, red, orange) chopped finely
1 - carrot, chopped
1 stalk(s) celery, chopped
1/3 cup(s) green or black olives, chopped
1/2 cup(s) sharp cheddar cheese, chopped or cubed
1 cup(s) miracle whip (or mayo if you prefer)
3 tablespoon(s) sweet pickle relish
2 tablespoon(s) dill pickle relish
- salt and pepper to taste

Steps:

  • Prepare elbow macaroni as directed on the package. Rinse and set aside to cool.
  • Add all other ingredients into a large bowl and mix together. Toss in cooked macaroni and stir all ingredients until well combined. Refrigerate for several hours or over night. Serve.
