CAJUN MACARONI SALAD



Cajun Macaroni Salad image

A spicy Cajun twist on classic macaroni salad, this Creole pasta salad is perfect for summer BBQ's and potlucks.

Number Of Ingredients 16

1 pound elbow macaroni
1 tablespoon olive oil
½ sweet onion, minced (like Vidalia)
4 ribs celery, small dice
2 hard boiled eggs, small dice
2 teaspoons Cajun seasoning (preferably no salt blend)
1 teaspoon smoked paprika
1 teaspoon freshly, cracked black pepper
½ teaspoon cayenne pepper, OPTIONAL (if you want a little more heat!)
1½ cups good quality mayonnaise (I like Duke's Mayo for this, it's a Southern thing!)
3 tablespoons Creole mustard (can use any whole grain mustard, or yellow mustard)
3 tablespoons red wine vinegar
½ lemon, juiced
1 teaspoon hot sauce (preferably Louisiana-style like Crystal or Tabasco)
Kosher salt and freshly, cracked black pepper
Chopped fresh parsley, sliced hard boiled egg, for garnish. (Totally optional but it looks pretty!)

Steps:

  • Bring a pot of water to boil and season generously with salt. Cook macaroni according to package instructions. Drain, rinse with cold water, repeat and transfer to large bowl. Toss with olive oil and set aside.
  • Meanwhile, combine remaining ingredients in another bowl. Use a whisk to combine all remaining ingredients except celery, onion and egg. Add 2 teaspoons salt and 2 tablespoons of water to start, up to ¼ cup water. When combined, stir in celery, onion and egg. The sauce should be on the thinner side, not too thick.
  • Taste sauce for seasoning and adjust salt, pepper and hot sauce to taste. Add to cooked elbows and toss to combine. Serve immediately with fresh parsley and/or hard boiled egg slices, or refrigerate until serving, adding a little water to loosen up and make shiny again if needed.

2 cups uncooked elbow macaroni
1 cup fat-free mayonnaise
2 tablespoons sweet pickle relish
2 teaspoons sugar
3/4 teaspoon ground mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup chopped celery
1/3 cup chopped carrot
1/4 cup chopped onion
1 hard-boiled large egg, chopped
Dash paprika

Steps:

  • Cook macaroni according to package directions; drain and rinse with cold water. Cool completely. , For dressing, in a small bowl, combine the mayonnaise, pickle relish, sugar substitute, mustard, salt and pepper. In a large bowl, combine the macaroni, celery, carrot and onion. Add dressing and toss gently to coat. , Refrigerate until serving. Garnish with egg and paprika.

I saw the recipe in a book put together by other columnist's favorite recipes for MADD and this was submitted by Frances Price from One and Only Cook, Baltimore, MD. This was one of her childhood favorites and then one of her own daughter's favorites.

1 (8 ounce) package elbow macaroni
1 tomatoes, cut into 1/2 inch cubes
4 ounces cheddar cheese, coarsly grated
1 medium carrot, peeled and grated
1 cup celery, finely chopped
1/2 cup green bell pepper, finely chopped, can use red
1/3 cup pimento stuffed olive, sliced
2 tablespoons red onions, finely chopped
1 cup mayonnaise
2 tablespoons cider vinegar
salt, to taste
black pepper, to taste

Steps:

  • Cook macaroni according to package.
  • While it is cooking, combine tomato, cheese, carrot, celery, green or red pepper, olives, and onion in a large mixing bowl.
  • Stir in mayonnaise and vinegar.
  • When the macaroni is done, immediately run cold water over the pasta in a colander to stop cooking and to rinse.
  • Add the macaroni to tomato mixture. Toss gently to mix. Season, to taste, with salt and pepper.
  • Cover and refrigerate several hours or overnight, to let the flavors blend.

1 small red onion, finely chopped
Kosher salt
8 ounces elbow macaroni
1/4 cup milk
1/2 cup mayonnaise
1/4 cup sour cream
2 tablespoons Creole mustard
1/2 cup chopped pickled okra or pickled green beans, plus 1/4 cup brine
1 teaspoon sugar
1 to 2 teaspoons hot sauce
2 bell peppers (1 red, 1 yellow), chopped
2 stalks celery, chopped, plus 1/2 cup chopped leaves
1/4 cup chopped fresh parsley

Steps:

  • Soak the red onion in a bowl of ice water for 15 minutes; drain and pat dry. Meanwhile, bring a large pot of salted water to a boil. Add the macaroni and cook as the label directs. Drain, transfer to a bowl and toss with 3 tablespoons milk. Let cool.
  • Whisk the mayonnaise, sour cream, mustard, pickle brine, sugar, hot sauce, remaining 1 tablespoon milk and 1/2 teaspoon salt in a large bowl. Add the macaroni, red onion, bell peppers, celery, celery leaves and parsley; toss to coat. Cover and refrigerate at least 2 hours. Stir again before serving; season with salt.

1/2 cup chopped celery

Steps:

  • In 10-inch skillet, brown sausage over medium-high heat 3 to 5 minutes, stirring occasionally, until starting to brown.

⅓ large onion, minced
¼ cup chopped fresh parsley

2 teaspoons rice vinegar

½ teaspoon salt
3 hard-cooked eggs, chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes; drain.

⅔ cup white sugar

¼ cup grated carrot
