FRUITED MACARONI SALAD

My guests rave about this salad. The big surprise is that there is no macaroni taste and it is not too sweet. Besides, the fruits mentioned in the recipe, I'll add strawberries, blueberries, raspberries...whatever may be in season.

1/3 cup sugar
1 tablespoon all-purpose flour
Pinch salt
1 can (11 ounces) mandarin oranges, undrained
1 can (8 ounces) crushed pineapple, undrained
1 large egg, lightly beaten
2 cups cooked elbow macaroni
1 cup whipped topping
1/4 cup chopped pecans, toasted

Steps:

  • In a saucepan, combine the sugar, flour and salt. Drain juice from oranges and pineapple into a 1-cup measuring cup; cover and refrigerate fruit. Add enough water to the juice, if needed, to measure 1 cup; stir into the sugar mixture until smooth. Cook and stir over medium-high heat until thickened and bubbly., Reduce heat; cook and stir 1 minute longer. Remove from the heat. Stir a small amount of hot mixture into egg; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat., In a bowl, combine the macaroni and cooked dressing. Cover and refrigerate for 8 hours or overnight. Just before serving, fold in whipped topping and reserved oranges and pineapple. Sprinkle with pecans.

This is a super easy and delicious fruit salad recipe I found in one of the Ontario Farm Fresh recipe booklets. I usually make it without the nectarines and apricots, because I find it difficult to find them in my local grocery store. 1/2 cup water
3 tablespoons granulated sugar
1 cinnamon stick
2 thin slices peeled fresh gingerroot
1 small sprigs fresh rosemary
1/4 teaspoon vanilla
1 cup sour cream
2 tablespoons packed brown sugar
1 pinch salt
1/4 cup whipping cream
2 cups blueberries
2 cups raspberries
2 peaches, peeled and cut into wedges
2 nectarines, cut into wedges
2 apricots, cut into wedges

Steps:

  • In small saucepan, combine water, sugar, cinnamon, ginger and rosemary. Bring to boil, stirring occasionally. Reduce heat and simmer uncovered for 3 minutes. Strain syrup into a bowl, discarding cinnamon, ginger and rosemary. Stir in vanilla, let cool.
  • In medium bowl, stir together sour cream, brown sugar and salt; stir in whipping cream.
  • In serving bowl, gently combine together cooled syrup, blueberries, raspberries, peaches, nectarines and apricots. Serve topped with dollop of crème fraiche.
