Very rich taste and unique twist on an old favorite. Goes quite well served with a grilled steak or chicken breast. A wonderful recipe given to me by my dear friend (and great cook) Amy.

Number Of Ingredients 10

1 lb elbow macaroni
2 tablespoons butter
1/4 cup flour
1 cup whipping cream
3 cups grated cheddar cheese
1 1/2 cups crumbled blue cheese
2 cups whole milk
1 teaspoon minced fresh chives, to taste
1 dash salt
1 dash pepper

Steps:

  • Preheat oven to 350* and butter 13x9 glass baking dish.
  • Cook pasta (about 8 min) and drain.
  • Melt butter in heavy large saucepan over medium to low heat, then add flour and cook 1 minute stirring constantly (do not allow to brown).
  • Gradually whisk in cream and milk and simmer until mixture thickens slightly, whisking occasionally (about 3 minutes).
  • Reduce heat to low and add grated cheddar cheese and only 1 cup blue cheese.
  • Whisk about 2 minutes or when cheese starts to melt, then flavor with salt and pepper.
  • Add cooked pasta to sauce, stirring to coat, and transfer mixture to 13x9 dish.
  • Sprinkle with remaining 1/2 cup blue cheese and bake about 25 minutes or until sauce begins to bubble.
  • Sprinkle with chives and serve- enjoy!

1 pound spiral tube-shaped pasta
2 tablespoons (1/4 stick) butter
1/4 cup all purpose flour
2 cups whole milk
1 cup whipping cream
3 cups grated cheddar cheese
1 1/2 cups crumbled blue cheese
1 tablespoon minced fresh chives

Steps:

  • Preheat oven to 350°F. Butter 13x9x2-inch glass baking dish. Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally, about 8 minutes. Drain.
  • Meanwhile, melt butter in heavy large saucepan over medium-low heat. Add flour. Cook 1 minute, stirring constantly (do not allow to brown).

1 lb uncooked spiral tube-shaped pasta
1 teaspoon olive oil
2 tablespoons butter
1/4 cup flour
2 cups whole milk
1 cup whipping cream
3 cups grated cheddar cheese
1 1/2 cups crumbled blue cheese, divided (Maytag or Danish)
salt & freshly ground black pepper or tricolor pepper, to taste
1 dash cayenne, to taste (optional)
1 1/2 tablespoons minced fresh chives

Steps:

  • Preheat oven to 350 degrees F; butter a 13x9x2-inch glass baking dish.
  • Cook the pasta according to package directions until tender but still firm to bite, stirring occasionally; drain and set aside (about 8 minutes).
  • While the pasta is cooking, in a large heavy saucepan over medium low heat, melt the olive oil and butter together; add the flour and, stirring constantly, cook for 1 minute (don't let it brown), then gradually whisk in the milk and cream.
  • Simmer mixture until it slightly thickens, whisking occasionally, for 3 minutes.
  • Reduce the temperature to low, then gradually stir in the grated cheddar and 1 cup of the blue cheese and cook, stirring, until the cheese melts.
  • Season to taste with salt, freshly ground pepper, and cayenne (if using).
  • Stir in the cooked pasta, making sure it's well-coated with the sauce.
  • Pour mixture into the buttered baking dish, sprinkle with the reserved 1/2 cup crumbled blue cheese, and bake at 350 degrees F for 30 minutes.
  • Sprinkle with the minced chives and serve.
  • Note: also good with a serving of carmamelized onions and sauteed mushrooms; also, you can use 2% or skim milk instead of whole, but using whole is how they make it at the restaurant.

This is a great recipe for parties. It has a very different and unique flavor that just makes everyone happy. :) This is also great when you add hamburger meat to it.

1 lb farfalle pasta (farfalle = bowtie) or 1 lb elbow macaroni (farfalle = bowtie)
2 tablespoons butter
2 tablespoons flour
1 1/3 cups milk
8 -10 ounces monterey jack cheese or 8 -10 ounces mozzarella cheese
1/2 cup blue cheese (I like Gorgonzola)
1/2 teaspoon black pepper
1 teaspoon hot sauce

Steps:

  • Boil pasta to al dente in salted water, drain, and set aside with a lid to keep warm.
  • In a medium saucepan, melt the butter over medium-low heat, add the flour and cook for about 3-5 minutes or until it smells nutty, stirring constantly.
  • Whisk in the milk and bring to a boil, stirring occasionally.
  • Remove from the heat and add the rest of the ingredients.
  • Stir into the pasta and serve.

8 ounces bacon, diced
12 ounces 2% evaporated milk (can)
1 egg
1/2 teaspoon salt
1/4 teaspoon pepper
1 pinch cayenne
8 ounces elbow macaroni
1 tablespoon butter
5 ounces blue cheese
4 ounces cheddar, grated

Steps:

  • Heat bacon in a skillet over medium-high heat for about 5-7 minutes, stirring frequently, until crispy.
  • In a separate bowl, whisk together evaporated milk, egg, salt, pepper and cayenne until combined. Set aside.
  • Meanwhile, bring a large pot of salted water to a boil, and cook the pasta al dente according to package instructions. When the pasta is cooked, drain it and then return it to the pot and reduce heat to medium-low. Immediately add the butter, and toss until the butter is melted. Pour in the evaporated milk mixture and stir until combined. Continue cooking over medium-high heat, stirring occasionally, for about 3-5 minutes, or until the sauce comes to a simmer.
  • Remove pan from heat and add in the cheeses. Stir until melted, then stir in the cooked bacon. Serve immediately, garnished with extra bacon and blue cheese if desired.

1 cup beef gravy (jar)
2 tablespoons chopped onions
2 cups shredded cheddar cheese
1 cup cubed ham
1 tablespoon butter

Steps:

  • Fix mac n' cheese as directed on package, but a bit al dente.
  • Saute onions in butter/oil for 5 minutes.
  • Mix with gravy.
  • Add ham, gravy, and cheese to macaroni, mix well.
  • (reserve a bit of cheese for top).
  • Bake at 350 for 25 minutes.

Kosher salt, to taste
12 oz. rigatoni
2 slices crustless white bread
2 tsp. finely chopped thyme
1 small onion, finely chopped
1⁄2 cup flour
3 cups milk
2 cups heavy cream
12 oz. grated sharp cheddar
8 oz. roughly chopped cooked ham
(any variety will do)
3 oz. blue cheese, crumbled
1⁄2 cup minced flat-leaf parsley
1⁄4 tsp. hot sauce, such as Tabasco
4 scallions, finely chopped
1⁄4 freshly ground black pepper
1⁄8 freshly ground nutmeg

Steps:

  • 1. Grease a 2-qt. baking pan with 1 tbsp. butter; set aside. Bring a 6-qt.pot of salted water to a boil. Add pasta; cook until al dente. Drain pasta, rinse; set aside. Pulse bread into crumbs in food processor; mix with 4 tbsp. butter; set aside. 2. Heat oven to 400˚. Melt remaining butter in a 6-qt. pot over medium heat. Add thyme and onions; cook until soft, 6-8 minutes. Whisk in flour; cook 2-3 minutes. Whisk in milk and cream. Increase heat to medium-high; cook, whisking, until thick, 10-12 minutes. Whisk in salt, cheddar, ham, blue cheese, parsley, hot sauce, scallions, pepper, and nutmeg. Stir in pasta; add to pan; sprinkle with bread crumbs. Bake until bubbly, 30-40 minutes.
