"My family really enjoys these pretty mini loaves - every slice is loaded with fruit and nuts," jots Judi Oudekerk from Buffalo, Minnesota. "You can substitute dates for the dried apricots for a change of pace...or use red and green maraschino cherries at Christmas for added color."

Yield 8 mini loaves (6 slices each).

Number Of Ingredients 10

1-1/2 cups all-purpose flour
1-1/2 cups sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 pound dried apricots or dates, halved
16 ounces Brazil nuts
1 cup pecan halves
1 jar (10 ounces) maraschino cherries, drained
5 eggs
1 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the dry ingredients. Stir in the apricots, nuts and cherries. Beat eggs and vanilla; stir into the dry ingredients just until moistened. Spoon into eight greased and floured 4-1/2x2-1/2x1-1/2-in. loaf pans (pans will be full). , Bake at 325° for 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from the pans to wire racks. Cool completely before slicing.

We threw my brother a surprise Luau for his 40th birthday. In the spirit of the luau, I searched the internet high and low for authentic Hawaiian luau foods to serve. This is a light dessert bread. Everyone loved it !!

3/4 cup macadamia nuts (chopped)
4 eggs
1/2 cup vegetable oil
3/4 cup pineapple juice
1/2 cup crushed pineapple
1 tablespoon baking powder
3 cups all-purpose flour
1 cup white sugar

Steps:

  • Preheat oven to 350 degrees.
  • Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, combine sugar, eggs, oil, pineapple juice and pineapple.
  • Mix well.
  • Sift together baking powder and flour.
  • Stir flour mixture into pineapple mixture.
  • Fold in Macadamia nuts.
  • Pour batter into greased pan.
  • Bake in preheated oven for 50 to 60 minutes, or until a toothpick inserted into center of loaf comes out clean.
  • Makes one 9x5 loaf.

1/4 cup butter, softened
1-2/3 cups packed brown sugar
4 large egg whites, room temperature
2 large eggs, room temperature
3/4 cup strong brewed coffee
1/2 cup vanilla yogurt
1/4 cup canola oil
1 tablespoon vanilla extract
1/4 teaspoon peppermint extract
3-1/2 cups all-purpose flour
3/4 cup baking cocoa
1-1/2 teaspoons baking soda
1/2 teaspoon salt
1-1/2 cups buttermilk
1 cup miniature semisweet chocolate chips
TOPPING:
2 ounces white baking chocolate, melted
3 tablespoons crushed candy canes

Steps:

  • Preheat oven to 350°. Coat three 8x4-in. loaf pans with cooking spray. In a large bowl, beat butter and brown sugar until crumbly, about 2 minutes. Add egg whites, eggs, coffee, yogurt, oil and extracts until blended., In another bowl, whisk flour, cocoa, baking soda and salt; add to brown sugar mixture alternately with buttermilk, beating well after each addition. Fold in chocolate chips., Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 50-55 minutes. Cool 10 minutes before removing from pans to wire racks to cool completely., Drizzle melted white baking chocolate over loaves. Sprinkle with crushed candies.
