4 chicken breasts
2 Ritz Cracker packages, divided
1 can cream of mushroom soup
1 can cream of chicken soup
1 container (8 oz.) sour cream
1 can English peas, drained
1 can cut carrots, drained

Steps:

  • Boil chicken and shred. Crush 1 package Ritz crackers on bottom of baking dish. Add chicken.
  • Mix soups and sour cream and pour on top of the chicken. Add peas and carrots. Crush the other package of Ritz crackers on top.
  • Bake at 350°F for 40 minutes.

1 (2 1/2-3 lb) roasting chickens, cut up
1/4 teaspoon poultry seasoning
1 1/2 teaspoons pepper
1 1/2 teaspoons paprika
1 1/2 cups flour
1 tablespoon garlic salt
1/2 teaspoon salt
2/3 cup flour
1 egg yolk, beaten
1/8 teaspoon pepper
3/4 cup water
Crisco (for frying)

Steps:

  • Combine all Seasoned Flour Mixand set aside.
  • Combine Batter ingredients.
  • Heat Crisco to 365°F.
  • Moisten chicken pieces. Dip in seasoned flour, then batter, then back in seasoned flour. Fry for 15 to 18 minutes or until well browned. Drain on paper towels.

LORETTA LYNN'S CREAMY LEMON CHICKEN



Loretta Lynn's Creamy Lemon Chicken image

I have made this tasty recipe for years; I originally got it out of a cookbook by that wonderful lady, country singer Loretta Lynn. You may want to add a smaller amount of lemon juice, as it is fairly prominent. However,when reheated the next day (if there are any leftovers!) the lemon flavor will have mellowed. I also often add one minced garlic clove when browning chicken. One of my husband and my favorite recipes!

2 - boneless, skinless chicken breasts
1/2 stick(s) butter
- salt and pepper to taste, mixed with 1/2 cup flour
1/2 cup(s) mayonnaise
1/2 cup(s) sour cream
1/8 - 1/4 cup(s) lemon juice, preferably fresh squeezed
1 - green onion, finely chopped
1/4 cup(s) cheddar cheese, shredded
- lemon zest (optional)

Steps:

  • Preheat oven to 350 º. Melt butter in skillet. Cut chicken breasts into strips, and lightly dredge in flour mixture.
  • Saute breasts in butter until golden. Transfer chicken and any juices to a small baking dish.
  • Mix well the mayonnaise, sour cream and lemon juice; pour over chicken. Cover. Bake 20 - 25 minutes at 350º, or until cooked through and tender.
  • Zest chicken with 1/4 to 1/2 lemon, then sprinkle with cheese and green onion. Heat, uncovered, a few minutes until cheese is melted. Great served with extra-wide flat noodles!
