1 (8 ounce) package cream cheese (softened)
1 (14 ounce) can sweetened condensed milk
3 Tablespoons lemon juice
1 (12 ounce) container frozen whipped topping (thawed)
1 (20 ounce) can crushed pineapple (well drained)
1 cup maraschino cherries (chopped)
1-1/3 cups and 1 tablespoon chopped pecans
2 (9 inch) prepared graham cracker crusts

Steps:

  • In a large bowl, beat together cream cheese, condensed milk, and lemon juice. Using a spatula, gently mix in the whipped topping.
  • Gently mix in the pineapple, chopped cherries, and pecans. Pour the mixture into pie crusts and chill for 3 to 4 hours.
  • Slice and enjoy!

Easy to prepare and fun...both to make, and eat. This pie got its name because it tastes like so much more than it really is. I have pared down some of the ingredients to save on calories and fat, without compromising the taste!

1 c sugar
1 pkg (8 oz.) reduced fat cream cheese-softened
1 can(s) (15 oz) crushed pineapple-drained
1 pkg (8 oz) light or fat free whipped topping
1/2 c chopped pecans
1 9 " prepared pie shell (flour or graham cracker)

Steps:

  • 1. In a small bowl, cream softened cream cheese with sugar.
  • 2. Add well drained pineapple,and the pecans Stir till blended.
  • 3. Fold in the thawed, whipped topping. When done, spoon the mixture into the prepared pie shell. Cover lightly with plastic wrap and refrigerate for 4 hours, or overnight before serving.
  • 4. Suggested garnishes- A small can of well drained Mandarin orange slices ( I, personally, am a big fan of the orange/pineapple combo), or about a 1/4 cup of finely chopped pecans, or about 1/2 cup flaked, sweetened coconut. (Note- if using coconut for a garnish-sprinkle on before chilling.)

Another nostalgia recipe, so old that nobody seems to have heard of it anymore. It was a standby of past generations and is now getting re-discovered. It uses a pre-made pie crust (store bought or your own) and no cooking is required. It's an easy to make, delicious party desert. The original recipe calls for an uncooked egg. However, due to concerns about food-borne illness carried by raw eggs, a commercial egg substitute may be used. This recipe was adapted from the recipe used by Clifton's Cafeteria, a downtown Los Angeles landmark restaurant which opened during the great depression era of the 30's. This recipe was old standby at that time (you had to be a millionare to afford the ingredients). Cliftons is noted for it's very fanciful interior with high ceilings and a jungle motif, as well as it's good food. The decor was intended to lift one's spirits during hard times.

2/3 cup whipping cream
1/3 cup crushed pineapple, well drained
1/3 cup chopped pecans
1 1/3 cups confectioners' sugar
1/3 cup butter, softened
1 egg (or egg substitute)
1/8 teaspoon salt
1/8 teaspoon vanilla
1 (8 inch) pastry shells
whipping cream

Steps:

  • For the topping: whip the cream until stiff, fold in the pineapple and nuts. Set aside until the filling is made.
  • For the pie filling, combine powdered sugar, butter, egg, salt and vanilla in a bowl. Mix on low speed for 15 minutes exactly.
  • Spoon filling evenly into the pre-made pie shell. Spread topping evenly on top of pie filling.
  • For the garnish (optional): using a canister of whipping cream pipe a ruffle of whipped cream around the edge.

Delicious any time, Millionaire Pie is especially prized by the summer cook who doesn't want to heat up the kitchen. The pie itself requires no cooking. If you use an already prepared Graham cracker crust tyhere is no need to use the oven at all.

1 (8 ounce) package cream cheese, softened
1/2 cup sugar
1 (8 ounce) can crushed pineapple, undrained
1 cup grated coconut
1 cup chopped pecans
1 (8 ounce) carton whipped topping, thawed (OR 2 cups whipping cream, whipped and sweetened with 3 tablespoons of sugar)
prepared 9 inch pie shell or graham cracker crust

Steps:

  • Cream together the softened cream cheese and the sugar with an electric mixer, letting the mixer run for 3 or 4 minutes on high speed.
  • Stir into the cream cheese mixture the crushed pineapple, coconut and pecans, and mix well.
  • Carefully fold in half of the whipped topping until filling is blended well.
  • Reserve remaining half for top (see below).
  • Pour filling into a prepared crust, and chill for several hours.
  • Notes: Millionaire Pie can be garnished with a dollop of the whipped topping when served, or you can spread the remaining half of the topping over the whole pie and garnish with a sprinkling of chopped pecans.
