Sweet, ripe strawberries, tangy goat cheese, and crunchy pecans make this simple strawberry spinach salad perfect for any time of day.

1/3 c. extra-virgin olive oil
1/4 c. fresh lemon juice
3 tbsp. honey
1 tbsp. apple cider vinegar
1 tbsp. poppy seeds
2 tsp. dijon mustard
1/2 tsp. salt
1/4 tsp. ground black pepper
2 5-oz. containers baby spinach
1 lb. strawberries, halved or sliced
2 oranges, peeled and sliced
1 1/2 c. chopped pecans, toasted
4 oz. goat cheese, crumbled

Steps:

  • For the dressing: In a small jar, combine the olive oil, lemon juice, honey, vinegar, poppy seeds, mustard, salt, and pepper. Seal the jar; shake vigorously to combine. Set aside.
  • For the salad: Just before serving, add the spinach to a large bowl or platter; top with half of the strawberries and orange slices. Drizzle with half of the dressing; gently toss to coat. Top the salad with the remaining berries, orange slices, pecans, and goat cheese. Drizzle with your desired amount of the remaining dressing, and serve the remainder on the side, if you like.

2 bunches fresh spinach, washed and dried
1 pint fresh strawberries, hulled and sliced
1/2 cup sugar
2 tablespoons sesame seeds
1 tablespoon poppy seeds
1-1/2 teaspoons finely chopped onion
1/4 teaspoon Worcestershire sauce
1/4 teaspoon paprika
1/2 cup vegetable oil
1/4 cup cider vinegar

Steps:

  • Arrange spinach and strawberries on individual salad plates or in a large salad bowl. Place the next six ingredients in a blender or food processor. With unit running, add oil and vinegar in a steady stream. Blend until thickened. Drizzle over salad; serve immediately.

1/3 cup Asian Vinaigrette (recommended: Newman's Own)
2 tablespoons syrup from canned lychees
1 scallion, finely chopped
1/2 teaspoon red pepper flakes
1 teaspoon sesame seeds
1 (9-ounce) package baby spinach (recommended: Fresh Express)
1 (8-ounce) can sliced water chestnuts, drained and liquid reserved (recommended: La Choy)
1/2 (20-ounce) can lychees in syrup, juice reserved (recommended: Golden Star)
1/4 cup real bacon crumbles
2 large hard-boiled eggs, peeled and quartered

Steps:

  • In a jar or sealable container, combine vinaigrette and 2 tablespoons reserved lychee juice, scallion, red pepper flakes, and sesame seeds. Shake vigorously; set aside.
  • Add spinach and water chestnuts to a large bowl. Add dressing and toss. Top with lychees, bacon bits, and eggs.

This is named after my sister Theresa because she left a bunch of lychee' at my house. I ate a couple then thought a dressing made out of these would be really good. And it is! If you never had fresh lychee 's before I highly suggest you give them a try. Just peel the skin and enjoy the juicy fruit. It 's very sweet, refreshing just like her! You can use the rest of the dressing as a really good cold soup or just cut the recipe in 1/2.

4 cups baby spinach leaves, cleaned and dried
3 ounces sweet onions, sliced thin
25 lychees
1 fresh lime juice
1 ounce candied ginger, chopped
3 tablespoons mild olive oil
1 mango, peeled and pitted (1/2 for dressing and 1/2 for garnish)
1/3 cup cashews, toasted
salt

Steps:

  • Toss onion slices and spinach together.
  • Plate spinach and place 4-5 lychees in center.
  • Arrange 6-8 mango slices in circle on spinach.
  • Sprinkle cashews on salad.
  • In a blender blend peeled and seeded lychee`s, remaining mango, lime juice, olive oil, salt and ginger.
  • Blend till smooth.
  • Pour some over salad.
  • Refrigerate the rest for an other use.

This is my friend Sheryl's recipe. It is our absolute favourite and gets rave reviews whenever it is made. If you like sweet salads (which I love) you simply must make this one!!!! The amount of ingredients are approximate put in your own desired amounts - the recipe is very forgiving.

500 g Baby Spinach
300 g strawberries, sliced
400 g canned lychees, in syrup, drained
200 g bean sprouts
200 g snow peas
1 avocado, sliced
175 g almonds or 175 g cashews, roasted
1 cup oil
3/4 cup sugar
1/2 cup vinegar
1/4 cup grated Spanish onion (I always leave this out as I hate onion mushed in dressing!)
1 teaspoon mustard powder
1 teaspoon Worcestershire sauce
1 teaspoon paprika
1/4 cup poppy seed
1/4 cup sesame seeds

Steps:

  • For salad layer all ingredients on platter.
  • Mix together dressing until it emulsifies.
  • Sprinkle over nuts just before serving.
  • Drizzle over dressing just prior to serving.
