- Thaw frozen spinach then squeeze it dry with your hands.
- Stir together: drained & chopped artichoke, squeezed spinach, 1 cup mayo, 3/4 cup parmesan cheese, 1 pressed garlic clove and transfer to a 1-quart casserole or pie dish. Sprinkle on remaining 1/4 cup parmesan cheese.
- Bake uncovered for 25 minutes at 350˚F or until heated through. Serve with your favorite crostini, chips, or crackers. Yum!

- 1. Preheat oven to 350 degrees.
- 2. Shred cheeses. Heat spinach in microwave and drain thoroughly. Chop artichoke hearts, reserving liquid.
- 3. Sauté onion in butter in large non-stick skillet until softened and translucent. Add drained spinach, sour cream, chopped artichoke hearts, and cubed Philadelphia cream cheese. Cook over low heat, stirring well, until cheese and sour cream are thoroughly blended.
- 4. Add most (about ¾) of shredded cheeses and stir until blended. Add Tony Chachere's Creole Seasoning to taste. Add enough reserved artichoke liquid so that dip is just slightly soupy. Pour into large oven-safe dish.
- 5. Bake about 30 minutes until dip is heated through. Remove from oven and sprinkle remaining cheese on top. Return to oven until cheese is golden brown, about 5-10 mnutes. Serve with Tostitos scoops.

I actually won a local contest with this recipe. Our favorite restaurant who served the best dip closed down...and we could not find another that was even close, so I came up with this home-made replica, which is just as delicious!

- Preheat oven to 375 degrees.
- Combine all ingredients (except bread) into a mixing bowl, gently fold together until combined.
- Pour into a greased or oiled 8" or 9" pie plate or other baking dish.
- Bake in oven at 375 degrees for 25 to 35 minutes or until browned and bubbly.
- Let stand to cool down it will be very hot.

- Slice bread 1/4" to 1/2" and place directly on oven rack to toast for the last 5 to 10 minutes of baking time.

- Heat the oven to 180C/160C fan/ gas 4. Lightly oil a small baking dish. Tip the defrosted spinach into a sieve set over the sink and press down with the back of a large spoon to remove as much liquid as possible. Set aside.
- Whisk the soft cheese, soured cream and mayonnaise together in a medium bowl until well-combined. Add the garlic, most of the cheeses, all the spinach and the artichokes. Season with black pepper and fold everything together to combine.
- Spoon the mixture into the baking dish and sprinkle over the remaining cheese. Will keep, covered in the fridge, for up to a day. Bake for 25-30 mins until bubbling and golden. If you like an extra-crisp top, flash under a hot grill for the final few minutes of cooking time. Leave to stand for 5 mins, then serve with tortilla chips and crudités.
