Number Of Ingredients 8

1 (16 ounce) can lemon flavor instant pudding and pie filling (Reserve 1/2 the can for the icing)
1/2 cup powdered sugar
1 -1 1/2 cup Bisquick baking mix (add until mixture is like cookie dough)
1 egg
1/4 cup oil
1/2 cup sugar
1 lemon, zest of
1 lemon, juice of

Steps:

  • Mix all ingredients (except the reserved pie filling & powdered sugar).
  • Drop by tablespoon onto a non-stick cookie sheet.
  • Bake at 350°F for 10 - 12 minutes or until done.
  • Bottoms of the cookies should not get too dark--light brown is good.
  • Let cookies cool completely.
  • Mix powdered sugar with enough lemon pie filling to make icing yellow, or do like I do and add some yellow food coloring, then spread over the cooled cookie.

These raw lemon cookies are delightfully simple. They only contain four ingredients: cashews, unsweetened coconut, a lemon, and a sweetener like agave nectar or maple syrup. A dehydrator is required.

1 cup unsweetened dried coconut
3 tablespoons lemon juice
1 tablespoon agave nectar or maple syrup

Steps:

  • 1. Process the cashews in a food processer until they resemble coarse flour.2. Add the coconut and process again until very well mixed.3. Add the lemon and the sweetener. Process again until resembling dough. (If it's a bit too wet, add more coconut. If it's a bit dry, add a tiny bit of water.)4. Shape into cookies and dehydrate for 8 hours for a nice, moist cookie. Eat right away and refrigerate leftovers. Dehydrate for longer if you want to store them for a longer shelf life.

2 cups unbleached all-purpose flour, (spooned and leveled)
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 tablespoon finely grated lemon zest, plus 2 tablespoons fresh lemon juice
1/2 cup (1 stick) unsalted butter, room temperature
1 cup sugar
1 large egg
1 teaspoon pure vanilla extract
Lemon Glaze

Steps:

  • Preheat oven to 350 degrees. In a medium bowl, whisk together flour, baking soda, salt, and lemon zest. In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy. Add egg, vanilla, and lemon juice and beat until combined. With mixer on low, beat in flour mixture.
  • Drop dough by heaping tablespoons, 1 inch apart, onto two baking sheets. Bake until edges are golden, 15 to 20 minutes, rotating sheets halfway through. Let cool 2 minutes on sheets, then transfer cookies to a wire rack to cool completely. Spread cookies with Lemon Glaze and let set, about 1 hour.

I first tasted these cookies at a friend's house and could not believe they were made with raw foods and in a dehydrator. They're delicious and are a very healthy snack or, she even eats them for breakfast! What?! Cookies for breakfast? Oh yeah, I'm in! :) I haven't made these myself, as I need to buy a new dehydrator, but I don't want to lose this recipe. Plan ahead for time to soak the cashews.

2 cups raw cashews, soaked in water for about 4 hours
2 lemons, juice from
1/2 banana, ripe
1/4 cup raw honey
1/3 cup agave nectar
2 cups shredded coconut (dried, unsweetened)
1 teaspoon pure vanilla extract

Steps:

  • Drain and rinse cashews.
  • Place all ingredients into food processor and process until smooth.
  • Spoon cookies out (about 1 1/2 T. each) onto mesh dehydrator sheets.
  • Leave as-is or you can flatten them out, to about 1/2 inch thick, for faster drying.
  • Dehydrate at 115 degrees for 8-10 hours or until the texture you desire is reached.
