Pizza Quesadilla is a fun new way to enjoy pepperoni pizza! This quick and easy 5-minute recipe is even easier than homemade pizza because you don't even have to make the crust! It still has all the cheese and plenty of meat!

4 flour tortillas
4 ounces pepperoni (sliced)
1 cup mozzarella cheese (grated)
1 tsp butter
1/2 cup marinara sauce (for dipping)
sliced olives
peppers
mushrooms

Steps:

  • Heat a large skillet over medium heat. If you use higher heat the outside of the tortilla will be brown and the insides will still be cold.
  • Add butter and let it melt.
  • Put a tortilla in the pan. You can use flour, gluten-free, low carb, corn, or whole wheat tortillas.
  • Sprinkle a thin layer of grated mozzarella cheese over the tortilla.
  • Add a layer of pepperoni slices over cheese. You can also use other meats like chicken, steak, ham, etc.
  • Add vegetables or pineapple (optional)
  • Sprinkle on another layer of cheese.
  • Place another tortilla on top.
  • Continue cooking until the bottom tortilla is golden brown, then flip the quesadilla.
  • Cook the other side until it's golden brown.
  • Move to a cutting board to cool for one minute. Cut into wedges.

2 8-inch flour tortillas
3 tablespoon tomato sauce
8 slices pepperoni
1/4 cup monterey jack, shredded

Steps:

  • Spray the base of a non-stick skillet with cooking spray. Set it over a medium heat. When the pan is fairly hot, place in 1 tortilla. Spread the sauce over the tortilla, add the pepperoni, and top with the shredded cheese. Place the second tortilla on top. Once the base of the first tortilla has browned, flip the quesadilla over. When the second tortilla has browned, and the cheese inside has begun to melt, remove from the pan and set aside to cool.
  • Once cooled, slice into quarters and wrap with plastic wrap or aluminum foil.

1 cup meatless spaghetti sauce
2 teaspoons butter, softened
4 flour tortillas (10 inches)
1 cup shredded part-skim mozzarella cheese
8 thin slices hard salami
12 slices pepperoni
1/4 cup shredded Parmesan cheese
1/2 teaspoon dried oregano

Steps:

  • In a small saucepan, cook spaghetti sauce over medium-low heat for 3-4 minutes or until heated through. , Meanwhile, spread butter over one side of each tortilla. Sprinkle unbuttered sides of two tortillas with mozzarella cheese; top with salami and pepperoni. Sprinkle with Parmesan cheese and oregano. 8 burrito-size flour tortillas
1 1/2 cups pizza sauce
3/4 cup four-cheese Mexican blend cheese
40 -50 pepperoni slices

Steps:

  • Spray large skillet with nonstick spray and preheat to medium heat.
  • Place tortillas on a plate and put 3 tablespoons pizza sauce on half of each one.
  • Then top with 1 - 1 1/2 tablespoons cheese and 5 - 7 pepperoni slices.
  • Fold plain side of tortilla over filled side to make a semi-circle and place in preheated skillet. (Only 2 tortillas will fit in skillet at the same time.).
  • Cook until golden brown, flip and cook until golden brown on second side.
  • For added effect or as an appetizer, cut cooked quesadilla in half while cooling.
