6 1/2 cups black beans
1/2 cup salsa
1/2 cup diced red onion
1 1/4 red bell peppers, diced
1/4 cup chopped fresh cilantro
2 cups Japanese bread crumbs(use half regular bread crumbs)
1 tablespoon diced jalapeño peppers
1/2 teaspoon Tabasco sauce
1 teaspoon Tabasco jalapeño sauce
2 cups crushed tortilla chips
1 teaspoon cumin
1 teaspoon coriander
2 tablespoons olive oil
CORN RELISH
2/3 pound corn kernels (canned or fresh cooked)Drained well
¼ cup diced Jalapeno peppers
1/2 pound diced tomatoes
1/4 cup diced red onions
½ teaspoon salt
½ teaspoon minced garlic
2 tablespoons canola oil
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro
½ teaspoon ground cumin

Steps:

  • Rinse black beans in cold water. Place in a colander and drain well (at least 10 minutes). Add all ingredients except tortilla chips, cumin, coriander, and olive oil to a mixing bowl. Blend well with hands, mashing some of the beans to form a thick mixture. Form into 3-ounce patties and set aside. Using a food processor, blend tortilla chips, cumin, and coriander until it is a crumb consistency. Dredge each bean patty in the tortilla mixture. Heat oil in large skillet and sauté bean cakes over medium-high heat, turning when they are golden brown. CORN RELISH Add all ingredients to a large mixing bowl.mix The longer it sits the better(refrigerate)-overnight if possible. Place relish on top of each black bean cake.

Though Lucky 32 makes these cakes with Tabasco brand hot-pepper sauces, other brands of hot sauce may be substituted, and just one type of hot sauce may be used instead of two with similar results.

6 1/2 cups cooked black beans
1/2 cup salsa
1/2 cup red onion, finely diced
1 1/4 red bell peppers, finely diced
1/4 cup chopped fresh cilantro
2 cups breadcrumbs
1 tablespoon fresh jalapeno pepper, diced
1/2 teaspoon Tabasco sauce
1 teaspoon Tabasco jalapeno sauce
2 cups crushed tortilla chips
1 teaspoon ground cumin
1 teaspoon ground coriander

Steps:

  • Rinse black beans in cold water.

  • Spray a large skillet with cooking spray or add 2 tablespoons of olive oil and heat over medium-high heat.
  • Saute bean cakes in hot skillet, turning once when bottom are golden brown.
  • Serve with condiments of choice, such as salsa and sour cream.
  • For Tortilla Chip Breading, place all ingredients in a food processor and process to a crumb consistency.

My Mom made these every year at Christmas time. These are a family favorite. For the filling - be sure to test it to make sure it is whipped properly. A good test it to feel it between your thumb and finger - if it is still grainy, it needs to be whipped a little longer. You can make the sour milk, by adding a little bit of vinegar to it.

2 cups granulated sugar
1/2 cup shortening
2 eggs
4 cups all-purpose flour
1/2 cup cocoa
1 teaspoon salt
1/2 teaspoon baking powder
2 1/2 teaspoons baking soda
1 cup sour milk
1 teaspoon vanilla
1 cup boiling water
1 cup milk
6 tablespoons flour
1 cup sugar
1/2 cup margarine
1/2 cup shortening
1 teaspoon vanilla
1/2 cup powdered sugar

Steps:

  • Cookie:.
  • Preheat oven to 450 degrees F.
  • Cream together sugar, 1/2 cup shortening and eggs with mixer in a large bowl.
  • In separate bowl mix together flour, cocoa, salt, baking powder and baking soda.
  • Add vanilla to the sour milk mixture (vinegar and milk) in a small bowl or measuring cup.
  • Now mix all of these together with the creamed mixture in the large mixing bowl.
  • Mix thoroughly.
  • Add 1 cup boiling water and mix thoroughly. The dough will be almost like a cake batter.
  • Drop by spoonfuls onto a greased baking sheet.
  • Bake for 5 minutes in a 450 degree F oven. These bake quickly - do not over bake.
  • While your cookies cool you can make the filling.
  • Cook 1 cup milk with 6 Tablespoons of flour until thick. Stir continually while cooking. Once thick, remove it from heat and allow to cool.
  • In a mixing bowl, combine the sugar, margarine, shortening, vanilla and powdered sugar.
  • Mix well.
  • Add the cooled paste (milk/flour mixture).
  • Mix until it is no longer grainy in texture. It will have a whipped cream look to it.
  • Once the cookies are cool and the filling is made, take one cookie, turn it upside down and frost with filling. Top it with a cookie that is very close in size. Continue until all the cookies have been assembled into this "Oreo" type cookie. You can either wrap them in foil, or wrap them in plastic wrap. These cookies can be frozen for up to 1 month.

2 cups white sugar
½ cup shortening
2 eggs
1 cup milk
1 teaspoon distilled white vinegar
1 teaspoon vanilla extract
4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
½ teaspoon baking powder
½ cup unsweetened cocoa powder
1 cup boiling water
½ cup margarine
½ cup shortening
1 cup milk
1 teaspoon vanilla extract
1 (3.5 ounce) package instant vanilla pudding mix
1 cup confectioners' sugar

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Cream together 2 cups sugar, 1/2 cup shortening and eggs. Combine 1 cup milk plus 1 teaspoon vinegar. Add to mixture with vanilla, blending well. Set aside.
  • Mix together flour, baking soda, salt, baking powder, and cocoa in a separate bowl. Gradually add to creamed mixture until well blended. Finally add the boiling water and mix well.
  • Drop by rounded teaspoonful on to ungreased cookie sheets. Bake for 5 minutes. Remove to baking rack to cool.
  • Cream margarine and shortening. Add 1 cup milk and 1 teaspoon vanilla, continuing to beat. Slowly add pudding mix and 1 cup confectioners' sugar.
  • Assemble cookies by spreading filling on one side of cookie and then placing another on top.
