Due to the pet food recall I decided to submit this recipe for other dog owners looking for a soft pet food alternative. This has been reviewed by my vet and approved. This is a great healthy recipe for dogs and can be cut in half for smaller dogs. Combined with a kibble this recipe lasts about 4-5 days for 2 large Golden retrievers. Be sure that your vegetable mix contains no garlic or onions!

2 ½ cups frozen vegetable blend (no garlic or onions), minced
4 cups rice
6 ½ cups water

Steps:

  • Place chicken, vegetables, and rice into a large saucepan or Dutch oven. Stir in water until the mixture is smooth. Place over medium-high heat and bring to a boil, stirring constantly.
  • Reduce heat to medium-low, cover, and simmer until the rice is tender and all of the liquid has been absorbed, about 25 minutes. Cool completely before serving; store covered in the refrigerator.

3 tablespoons vegetable oil
1 onion, chopped
2 cloves garlic, minced
3 cups finely shredded napa cabbage
1 (8 ounce) can sliced water chestnuts, drained
1 pound ham hocks
⅛ teaspoon cayenne pepper
2 bay leaves
½ teaspoon Cajun seasoning
salt to taste
1 quart chicken stock
1 (10 ounce) package frozen black-eyed peas
1 ½ cups basmati rice, well rinsed
3 cups water

Steps:

  • Heat the oil in a deep pan or stockpot set over medium-high heat. Stir in the onions and garlic, and cook until transparent, about 5 minutes. Mix in the Napa cabbage; toss and cook until wilted, about 2 minutes. Add the ham hocks, cayenne pepper, bay leaf, Cajun seasoning, and salt, stirring for 2 minutes more. Pour in the chicken stock and black-eyed peas. Bring the mixture to a boil, then reduce heat to low and cook uncovered for 2 hours.
  • Meanwhile, place the rice and water into a saucepan. Bring to a boil, reduce heat to low, cover, and simmer until all liquid is absorbed and rice is light and fluffy, about 20 minutes.
  • Before serving, remove the ham hocks from the pot. Coarsely chop the meat, and return to the black-eyed pea mixture. Serve hot over Basmati rice.

4 tablespoons unsalted butter, plus more for the pan
One 11.5-ounce box Lucky Charms &trade cereal (about 6 cups)
One 10-ounce bag standard marshmallows
8 ounces white chocolate, chopped

Steps:

  • Line a 9-by-13-inch baking dish with foil, leaving a 2-inch overhang on at least two sides; butter the foil. Pick out and reserve 1/2 cup the colorful marshmallows from the cereal.
  • Melt the butter in a large saucepan over medium-low heat. Add the standard marshmallows and stir continuously until melted, about 5 minutes. Remove from the heat and stir in the cereal until coated.
  • Press the mixture into the prepared baking dish and let cool completely at room temperature, about 1 hour.
  • Meanwhile, put the chocolate in a medium microwave-safe bowl. Microwave for 30 second increments, stirring after each, until melted.
  • Use the foil overhang to lift out the treats from the pan. Drizzle the chocolate over the treats and sprinkle with the reserved colorful marshmallows. Let the chocolate coating harden at room temperature, about 2 hours. Cut into 18 bars.

1 teaspoon dried rosemary, crushed

Steps:

  • Sort beans and rinse with cold water. Place the split peas, lentils and beans in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 to 4 hours or until beans are softened. Drain and rinse beans, discarding liquid., Drain and rinse, discarding liquid. Add water and seasonings; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender., Stir in tomatoes; increase heat to medium. WILD MUSHROOM AND VENISON STROGANOFF FOR TWO LUCKY PEOPLE

This venison stroganoff is absolutely fantastic - of course, you can use the more traditional beef fillet instead of venison, and any mushrooms you like, but there's something about venison and wild mushrooms that works so well together. Have a go at this and you'll know what I mean! The whole point of this dish is that by the time you start cooking the meat, it will all come together quickly. The meat will be quite pink - cook it for longer if you want but it will go slightly tougher.

7 ounces white rice
Extra-virgin olive oil
1 medium red onion, peeled and finely chopped
1 clove garlic, peeled and finely sliced
11 ounces venison loin, fat and sinews removed, trimmed and sliced into finger-sized pieces
Sea salt and freshly ground black pepper
1 tablespoon paprika
9 ounces mixed exciting, robust mushrooms, wiped clean, torn into bite-sized pieces
Small bunch fresh flat-leaf parsley, leaves picked and roughly chopped, stalks finely chopped
Knob of butter
Good splash brandy
1 lemon, zested
2/3 cup creme fraiche or sour cream
Few little gherkins, sliced

Steps:

  • Cook the rice according to the package instructions until it's just undercooked and drain in a colander. Put the rice back in the pan, cover with aluminum foil and set aside to steam - this will give you incredibly light and fluffy rice.
  • Heat a large frying pan on a medium heat and pour in a glug of extra-virgin olive oil. Add the onions and garlic and cook for about 10 minutes until softened and golden. Remove from the heat and spoon the onions and garlic out of the pan onto a plate. Set aside.
  • Season the meat well with salt, pepper and the paprika. Rub and massage these flavorings into the meat. Place the frying pan back on a high heat and pour in some more olive oil. Add the mushrooms and fry for a few minutes until they start to brown. Then add the meat and fry for a minute or 2 before adding the parsley stalks (you can do this in 2 pans or in batches if your pan is not big enough) and the cooked onion and garlic. Toss and add the butter and brandy.
  • You don't have to light the hot brandy, but flaming does give an interesting flavor so I always like to do this. Once the flames die down, or after a couple of minutes of simmering, stir in the lemon zest and all but 1 tablespoon of the creme fraiche and season, to taste. Continue simmering for a few minutes. Any longer than this and the meat will toughen up - it doesn't need long, as it's been cut up so small.
  • Serve your fluffy rice on 1 big plate and your stroganoff on another. Simply spoon the remaining creme fraiche over the stroganoff, then sprinkle over the sliced gherkins and the parsley leaves. Eat at once!

A friend gave me her recipe and I reduced it to feed 4 instead of an army and tweaked it to our tastes. This is a wonderful cold soup bursting with garden freshness in every bite. Adjust the ingredients to suit your tastes or to use the bounty in your garden. And it doesn't heat up the kitchen on those hot summer days! Garnish with fresh parsley, chives, dollops of sour cream, and toast. Chill at least 1 hour; it is better the next day.

  • Rinse black beans in cold water. Place in a colander and drain well (at least 10 minutes). Add all ingredients except tortilla chips, cumin, coriander, and olive oil to a mixing bowl. Blend well with hands, mashing some of the beans to form a thick mixture. Form into 3-ounce patties and set aside. Using a food processor, blend tortilla chips, cumin, and coriander until it is a crumb consistency. Dredge each bean patty in the tortilla mixture. Heat oil in large skillet and sauté bean cakes over medium-high heat, turning when they are golden brown. 1/2 teaspoon Tabasco sauce

  • Rinse black beans in cold water.

APPLE PIE GERMAN PANCAKES WITH LUCKY LEAF PIE FILLING

1/2 cup milk
1/2 cup Apple Pie Filling (we used LUCKY LEAF brand)
1 cup flour
1/4 teaspoon salt
1/4 cup butter
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 425. Spray a 9 x 9 inch pan with non stick spray. Spread the Lucky Leaf Pie Filling, butter, and cinnamon in 9 x 9 inch baking dish and set in oven while it heats up.
  • Blend eggs with a whisk, mix in milk. Whisk in flour and salt. When oven is ready, pour mixture over Apple Pie Filling and bake for 15 min.
  • Reduce heat to 350 and bake 15 min more.
  • Let cool slightly before serving with powdered sugar and syrup.

Yes, this is the thirteenth entry for this particular recipe, and yes, it is different from all the rest. This is one of the most requested desserts I have. Easy to put together, and ohhhhhh soooooo gooooood. (People actually make strange noises while eating it.) 1 (106 g) package instant vanilla pudding, 4 serving size
2 cups milk
1 1/2 cups whipped cream
1 chocolate bar, grated

Steps:

  • Beat together the butter and sugar. Blend in flour, then stir in the chopped pecans.
  • Press mixture into a 9 x 13 pan. Bake for 25 minutes at 350*. Cool.
  • Combine cream cheese, and icing sugar. Add 2 cups whipped cream.
  • Pour this mixture over the crust.
  • Combine both pudding mixes with the milk. Pour over cheese mixture.
  • Ice with 1-1/2 cups whipped cream and sprinkle with grated chocolate.
  • Chill for at least 4 hours before serving.

LUCKY GREEN BAKED EGGS



Lucky Green Baked Eggs image

1/4 cup olive oil
3 shallots, thinly sliced
6 cups julienned kale
One 8-ounce can green chiles, chopped
1/2 cup mixed green pitted olives, chopped
1/4 cup chicken stock
1 teaspoon anchovy paste
2 cloves garlic, minced
4 large fresh basil leaves
4 large eggs
Kosher salt and freshly ground black pepper
1/4 cup finely chopped sun-dried tomatoes, drained from their oil
1/2 cup feta
Freshly grated Pecorino-Romano
Sliced fresh chives, for garnish
4 slices country bread
2 cloves garlic
1 tablespoon unsalted butter

Steps:

  • For the eggs: Position an oven rack towards the bottom of the oven and preheat to 350 degrees F.
  • Heat a 10-inch saute or cast-iron pan over medium-low heat with the olive oil. Sweat the shallots until tender, about 8 minutes. Add the kale and saute until wilted, 2 to 3 minutes.
  • Add the green chiles, olives, chicken stock, anchovy paste and garlic and bring to a simmer. Braise, covered, until the kale is tender and the liquid has been almost fully absorbed, about 10 minutes.
  • Spread the mixture flat in the pan and make 4 wells to place the eggs. Lay a basil leaf in each well. Add an egg to each well on top of the basil leaves and sprinkle everything with salt and pepper. Sprinkle with the sun-dried tomatoes and feta.
  • Bake on the bottom rack until the eggs are set but still runny, about 10 minutes.
  • For the toast: Meanwhile, toast the bread in a toaster and rub with garlic cloves, then spread with the butter. Grate Pecorino over the eggs and sprinkle with chives, then serve with the toast.

4 slices bacon
1 green bell pepper, chopped
1 small onion, chopped
2 (15 ounce) cans black-eyed peas, undrained
2 (14.5 ounce) cans diced tomatoes, undrained
1 cup water
1 ½ teaspoons salt
1 ¼ teaspoons cumin
1 ¼ teaspoons dry mustard
1 teaspoon chili powder
½ teaspoon curry powder
½ teaspoon pepper
½ teaspoon sugar

Steps:

  • Place the bacon in a skillet and cook over medium-high heat until crisp and evenly brown. Drain on paper towels. When cool, crumble into small pieces.
  • Using the same skillet, add the peppers and onion; stir and cook over medium-high heat until transparent and tender, about 5 minutes.
  • Pour the black beans, tomatoes, and water into a large pot. Stir in the peppers, onion, salt, cumin, dry mustard, chili powder, curry powder, pepper, and sugar. Bring to a boil, reduce heat to medium, cover, and simmer 20 to 25 minutes. Serve hot sprinkled with bacon, and other toppings of your choice.

1/4 cup sugar
1/4 cup vinegar
1 tablespoon soy sauce
1 1/2 tablespoons cornstarch
3/4 cup pineapple juice (I use pineapple juice) or 3/4 cup water (I use pineapple juice)
2 teaspoons oil

Steps:

  • Mix juice and cornstarch.
  • Heat oil in a small saucepan and add remaining ingredients and cornstarch mixture.
  • Cook over medium to medium high heat, stirring until sauce thickens.
