Steps:
- Preheat oven to 375 °F.
- In a mixing bowl, cut cream cheese into baking mix and add enough milk to moisten. Place dough like mixture onto floured surface and knead two or three times. Roll dough to desired thickness using a rolling pin and cut out with round cookie cutter. Place biscuits on cookie sheet and bake until golden brown, approximately 15 minutes.

- Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper
- Arrange the bread in a single layer on the prepared baking sheet. Brush each piece of bread with olive oil. Lightly sprinkle with salt. Bake for 12-14 minutes, until the edges are light golden brown. Let cool.
- Spread 1 tablespoon of scallion cream cheese over each crostini. Top with ¼ ounce of lox and a few capers.
- Enjoy!

LOX AND CREAM CHEESE STUFFED CUCUMBERS
Steps:
- Using a peeler, create stripes on the outside of the cucumber by peeling along length of cucumber, leaving every other section intact. Cut off ends of cucumber and slice into 1-inch rounds. Using a melon baller, scoop out the seeds and inner flesh from the top 2/3's of each cucumber slice. Do not scoop all of the way through. Set aside. In a bowl, combine equal parts cream cheese and sour cream. Mix in salmon, shallots, lemon juice, salt and pepper, combining thoroughly. Transfer the mixture to a pastry bag with a star 8 tip. Pipe the filling generously into each cucumber section. Garnish with sprig of dill. As an alternative, use red pepper cream cheese.
SCHMEAR (CREAM CHEESE WITH LOX SPREAD)
Try serving this "schmear" with some fresh bagels at your next brunch. You could add a tablespoon or so of fresh chopped dill or parsley or even a couples of tablespoons of drained capers, but I like it kept simple. For appetizers, serve the schmear along with cocktail-sized rye bread slices.

- In a food processor, work the cream cheese until it is smooth, turning off the motor and scraping down the sides of the work bowl several times.
- Add the scallions, lox, salt and pepper. Continue working the cream cheese mixture until it is blended (by the way, it is okay if there are some chunks of salmon in the mixture).
- Remove cream cheese mixture to a pretty container or small bowl and refrigerate until ready to serve. Schmear on bagels, matzoh, or toasted pumpernickel or rye bread, or whatever you like.

- Combine flour, baking powder and salt in bowl.
- Cut in butter and cream cheese until mixture is crumbly.
- Make well in center; pour in milk.
- Stir just until dough clings together.
- Knead gently 4 or 5 strokes on lightly floured surface.
- Roll to 1/2-inch thickness.
- Cut with floured 2-inch biscuit cutter.
- Place on baking sheet.
- Make indentation in each biscuit with thumb.
- Brush biscuits with additional milk.
- Spoon about 1/2 teaspoons jam into each indentation.
- Bake at 450 degrees for 10 to 12 minutes or until golden brown.

Steps:
- Preheat the oven to 425 degrees.
- Sift together the flour and salt. Add the butter, piece by piece, and the cream cheese. Mix until you have a dough that holds together.
- Do not overmix.
- Turn the dough out onto a lightly floured work surface and, with a rolling pin, roll it out to a thickness of about 1/2".
- Cut out rounds with a biscuit cutter and place on a lightly buttered baking sheet. Bake until pale brown, about 20 minutes.
- Serve warm.
