TEQUILA LIME CHICKEN

1/2 cup gold tequila
1 cup freshly squeezed lime juice (5 to 6 limes)
1/2 cup freshly squeezed orange juice (2 oranges)
1 tablespoon chili powder
1 tablespoon minced fresh jalapeno pepper (1 pepper seeded)
1 tablespoon minced fresh garlic (3 cloves)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 whole (6 split) boneless chicken breasts, skin-on

Steps:

  • Combine the tequila, lime juice, orange juice, chili powder, jalapeno pepper, garlic, salt, and pepper in a large bowl. Add the chicken breasts. Refrigerate overnight.
  • Heat a grill with coals and brush the rack with oil to prevent the chicken from sticking. Remove the chicken breasts from the marinade, sprinkle well with salt and pepper, and grill them skin-side down for about 5 minutes, until nicely browned. Turn the chicken and cook for another 10 minutes, until just cooked through. Remove from the grill to a plate. Cover tightly and allow to rest for 5 minutes. Serve hot or at room temperature.

1/3 cup low-sodium teriyaki sauce
2 tablespoons fresh lime juice
2 teaspoons minced garlic
1 teaspoon liquid smoke
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon tequila
1/4 cup low-fat mayonnaise
1/4 cup low-fat sour cream
1 tablespoon milk
2 teaspoons minced tomatoes
1 1/2 teaspoons white vinegar
1 1/2 teaspoons minced canned jalapeno peppers
1 teaspoon minced onion
1/4 teaspoon dried parsley
1/4 teaspoon hot sauce
1/8 teaspoon dried dill weed
1/8 teaspoon paprika
1/8 teaspoon cayenne pepper
1/8 teaspoon cumin
1/8 teaspoon chili powder
1/8 teaspoon salt
1 dash black pepper
1 dash garlic powder
1 lb boneless skinless chicken breast
1 cup shredded monterey jack and cheddar cheese blend
2 cups corn chips, crumbled

Steps:

  • Combine first 8 ingredients then chicken in a medium bowl and allow to marinade for 2-3 hours.
  • Combine the next set of dressing ingredients (ingredients up to the chicken) in a medium bowl, cover, and chill until needed.
  • Grill the marinated chicken breasts for 3-5 minutes per side, or until cooked through.
  • Arrange the cooked chicken in a baking pan, brush with prepared mexi-ranch dressing, and sprinkle with cheese.
  • Broil the chicken for 2-3 minutes, or just until the cheese has melted.
  • Serve the chicken over a bed of crumbled chips.
  • Serve with Spanish rice and pico de gallo or salsa.

3 tablespoons olive oil
3 tablespoons tequila
1 tablespoon lime zest, from about 2 limes
4 cloves garlic, minced
1¼ teaspoons ground ancho chili pepper
½ teaspoon ground coriander
¼ teaspoon dried oregano
1¼ teaspoons salt
½ teaspoon freshly ground black pepper
2 teaspoons honey
4 boneless skinless chicken breasts (or about 2 pounds), pounded to an even ½-inch thickness
1 lime, sliced into wedges, for serving (optional)

Steps:

  • Combine all of the ingredients except for the chicken breasts in a 1-gallon freezer bag. Close the bag and squish the marinade around to mix. Add the chicken breasts and massage the marinade into the meat until evenly coated. Seal the bag and place it in a bowl in the refrigerator (the bowl protects against leakage); marinate for at least 6 hours or overnight.
  • Clean the grill and preheat to high. Lightly dip a wad of paper towels in vegetable oil and, using tongs, carefully rub over the grates several times until glossy and coated. (Alternatively, you can spray the grates with a non-flammable cooking spray.) Place the chicken breasts on the grill and spoon any remaining marinade from the bag over top. Grill, covered, for 2 to 3 minutes per side (turning only once). Serve immediately with lime wedges.

I got this recipe from a news report. A guy was on probation and came back from lunch. He had to submit to a breathalyzer. He failed. He claimed that he didn't drink but only ordered a burrito at a stand. The judge then had the burrito stand give up the recipe. They did another breathalyzer after eating the burrito. Sure enough, even though it is cooked, all of the alcohol doesn't leave. Just be forewarned!

1 (12 ounce) amber beer (Killians, Red Hook, etc.)
1 (12 ounce) lager beer (Coors, etc.)
2 ounces tequila
1 lime, juice of
2 garlic cloves, diced
1 lb boneless skinless chicken breast
1 green pepper, sliced
1 red pepper, sliced
1 onion, sliced
6 flour tortillas
cheese (optional)
lettuce (optional)

tomatoes (optional)

Steps:

  • Mix all of the ingredients together. Marinate for one hour, or overnight. Discard marinade.
  • You can grill or pan fry with a little oil and onion, red and green peppers.
  • Serve on tortillas with peppers and onions. Add other ingredients if desired.

⅓ cup teriyaki sauce
2 tablespoons lime juice
2 teaspoons minced garlic
1 teaspoon liquid smoke flavoring
½ teaspoon salt
¼ teaspoon ground ginger
¼ teaspoon tequila
4 skinless, boneless chicken breast halves
¼ cup mayonnaise
¼ cup sour cream
1 tablespoon milk
2 teaspoons minced tomato
1 ½ teaspoons chopped green chile peppers
1 teaspoon minced onion
¼ teaspoon dried parsley
¼ teaspoon hot pepper sauce
1 pinch salt
1 pinch dried dill weed
1 pinch paprika
1 pinch cayenne pepper
1 pinch ground cumin
1 pinch chili powder
1 pinch ground black pepper
1 cup shredded Cheddar/Monterey Jack cheese blend
2 cups crumbled corn chips

Steps:

  • Combine water, teriyaki sauce, lime juice, garlic, liquid smoke, salt, ginger, and tequila in a medium nonporous glass bowl and mix all together. Add chicken and turn to coat; cover bowl and refrigerate for 2 to 3 hours.
  • Meanwhile, make the Mexi-Ranch Dressing: mix mayonnaise, sour cream, milk, tomato, peppers, onion, parsley, hot pepper sauce, salt, dill weed, paprika, cayenne pepper, cumin, chili powder, and ground black pepper in a medium bowl and mix well until smooth. Cover bowl and chill until needed.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler, or preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove chicken from marinade, discarding any remaining marinade. Grill or broil chicken for 3 to 5 minutes per side, or until chicken is cooked through and juices run clear.
  • Arrange cooked chicken in a 9x13-inch baking dish. Spread a layer of Mexi-Ranch dressing over each piece of chicken, followed by 1/4 cup of cheese blend. Broil in preheated oven for 2 to 3 minutes, or just until cheese has melted.
  • Spread a bed of about 1/2 cup crumbled corn chips or tortilla strips on each of 4 plates. Slide a chicken breast onto the chips on each plate and serve.
