HEALTHIER SPECIAL-K BARS
Healthier Special-K Bars made with dates instead of processed sugar, whole grain rice cereal and peanut butter. Just 8 ingredients and no baking required! Option to use brown rice syrup, see notes.

Steps:
- Grease 9×13 pan with butter/oil or line with parchment paper; set aside.
- Drain dates and place in bowl of food processor with S-blade; process dates until broken down into paste, add 1 tablespoon milk at a time until creamy paste forms. You may need 3-4 tablespoons here.
- Transfer date paste to large pot on stovetop. On medium heat combine date paste with peanut butter, stirring continuously. Add coconut oil and stir until melted/combined - add another 1 tablespoon of milk here if mixture is sticky.
- Add cereal to date & peanut butter mixture until cereal is broken down and fully combined. Transfer to prepared pan, pressing firmly down and evenly into all four corners.
- Sprinkle on butterscotch chips and dark chocolate chips. Here you can cover the pan with foil to help lock in heat and melt chips. OR you can place the covered pan back on the warm (turned off) stovetop, turning the pan every 2 minutes and removing after 4-5 minutes (to prevent from burning). Wait for the chips to melt before smoothing top with spatula.
- Allow pan to rest at room temperature for an hour or so until topping sets. You can also place pan in fridge for 30 minutes to speed up the process.
- Cut into bars and enjoy!

LOWER-FAT SPECIAL K BARS
This is a lower-fat version of the great no-bake Special K bars. It has less peanut butter and no chocolate, but still tastes great. My kids love these.

Steps:
- Measure corn syrup and brown sugar into large saucepan.
- Cook over medium heat, stirring constantly, until sugar is dissolved and mixture is bubbly.
- Remove from heat.
- Stir in peanut butter.
- Add cereal and raisins.
- Stir until well coated.
- With back of spoon, press mixture evenly and firmly into 13X9 pan coated with cooking spray.
- Let stand until cool.
- Cut into bars.

I got this recipe back in the 70's from a friend whom I worked with. It is a simple and delicious bar to make.

Steps:
- In a large mixing bowl, mix sugar and Karo syrup; microwave on high for 3-4 minutes, or until sugar is completely dissolved. Remove after sugar is dissolved. Do not boil. This is important. Bars will be hard as concrete if mixture continues to boil.
- Remove bowl from microwave; add crunchy peanut butter to the sugar mixture and stir until smooth. Stir in the Special K cereal and mix well.
- Pat the mixture firmly into a lightly buttered 13X9 inch pan. Using a lightly buttered or greased piece of waxed paper works great for patting down the mixture.(To make thicker bars -- use a 9x9 pan).
- In a medium bowl, combine the chocolate and butterscotch chips and microwave for about 3-4 minutes until melted; stirring once or twice during melting.
- Spread over top of cereal mixture. Refrigerate just long enough to set the chips.
- Remove, and cut into bars.

- turn off heat and add P-nut butter.
- stir in cereal.
- dump in lightly greased 9x13 in.
- pan, pressing lightly with buttered fingers or wax paper.
- melt together chocolate chips, buttterscotch chips,and butter in microwave until completely melted.
- Spread over bars and allow to cool.

- Add Peanut Butter and stir until blended.
- Pour mixture over Special K Cereal in large bowl and mix together.
- Press into 9 x 13 pan.
- Melt the Chocolate Chips and Butterscotch Chips together in double boiler.
- Spread over top of cereal .
- Refrigerate until chocolate is hardened.

This recipe started out as a way to avoid eating my school's special k bars. I didn't like the way they tasted. With this recipe you can add as much or as little chocolate as you like. This recipes has a perfect amount of chocolate and peanut buttery-ness to make it almost seem to melt in your mouth.

- Combine corn syrup, sugar and peanut butter in a large pot until mixture is a liquid. Add Special K to the pot. Coat Special K in the pot until everything looks evenly coated. Remove from heat and place in a greased 9x13 pan. Level bars. In a microwavable bowl add chocolate chips and butterscotch chips. Microwave for a minute and a half. Take out and stir. Keep microwaving until chocolate is smooth. Pour over bars and spread chocolate to desired thickness. Refrigerate until chocolate is hard or set out overnight.
