I love French Toast, but not the carbs that come along with it. So I have a choice - eat less of it (like 1/2 slice? you've got to be kidding!) or find a way to make it lower in carbs so it fits my healthy diabetic eating plan. Here is one version. I'm sure I'll develop others along the way. One source for low-carb bread is http://julianbakery.com/ They have a store finder so you can find it at a location near you, or you can order it online. I'm not real sure about getting a perishable item like bread sent by UPS as I would be afraid of mold. There are no local stores near Knoxville or even Nashville that carry this, but there are some in NC that are less than 100 miles from my house, as well as in Indianapolis, the Chicago area, and at Jungle Jims in Fairfield, OH. If anyone else has good sources of low-carb bread, just add them into the comments. I'm also looking into making my own low-carb bread.

4 large eggs (or equivalent egg substitute)
1/8 teaspoon(s) sea salt
1/2 teaspoon(s) sugar substitute of your choice (optional)
1/2 teaspoon(s) ground cinnamon
1/2 teaspoon(s) vanilla extract (i use more than this)
1/2 cup(s) buttermilk, kefir, or cream
8 slice(s) low-carb bread, frozen
- butter or oil for cooking

Steps:

  • In a shallow dish, combine all of the ingredients except the bread and cooking fat. Mix them well with a fork or whisk. Dip the bread into the egg mixture, one slice at a time. Fry it on a hot griddle until it is golden on each side, about 5 minutes total.
  • Freeze any leftovers in a freezer bag. To reheat, simply toast in the toaster until hot, and serve. May serve with peanut butter or almond butter or sugar-free maple syrup as a topping.
  • (Note: keep the bread frozen until use to prevent drying out, as low-carb bread does tend to get dry quickly.)
  • Nutrition information: 5 grams carbohydrates (net carb count: 5 g) 6 grams protein, 3 grams fat, 75 calories

This is an awesome low carb alternative to regular french toast. Even though it is made with pork rinds, NO ONE would ever know. Even if you yourself don't like pork rinds just give this a try. The consistency is so much like REAL french toast. I eat this almost every day for breakfast.

Yield 3-4 round pancake shaped french toasts, 1-2 serving(s)

Number Of Ingredients 5

2 eggs
1/4 cup heavy whipping cream
2 g Equal sugar substitute
1 1/2 ounces pork rinds
cinnamon

Steps:

  • (1) Mix eggs, cream, sweetener and cinnamon.
  • (2) Crush pork rinds and mix with above mixture.
  • (3) Allow to soak until it becomes a very thick and goopy batter (3-5 minutes).
  • (4) Fry pancake style in butter until browned and flip over. Cook until done as you would french toast or pancakes.
  • Serve with any LC syrup or make your own as follows:.
  • (1) Cream butter until soft (use as much as you need for syrup). I melt it in the microwave.
  • (2) Add maple extract and sweetener to taste.
