TOMATO BASIL SOUP (LOW SODIUM BUT NOT LOW FLAVOR)

This is the best Tomato Basil soup ever! Plus, it's low in sodium and low in fat when the cream is not added. This one will leave your taste buds tingling. It's great with a grilled cheese panini or a hunk of freshly made bread. Your friends are going to love it, too!

Number Of Ingredients 8

3 tablespoons unsalted butter, melted
1 medium onion, chopped
1/4 teaspoon pepper
1 teaspoon salt or 1 teaspoon morton lite salt
1 (14 1/2 ounce) can no-salt-added diced tomatoes
1 (14 1/2 ounce) can low sodium chicken broth
2 tablespoons homemade pesto sauce or 2 tablespoons bottled pesto sauce
1/2 cup cream (optional)

Steps:

  • Melt the butter in a large skillet. When the butter begins to bubble, add the onions and saute until tender and translucent.
  • Add the seasonings, tomatoes, and broth. Simmer with the onions for 20 minutes.
  • Blend the soup in two batches until smooth.
  • Stir in the pesto and cream (if using). Return to low heat for 5 minutes. Serve.

Number Of Ingredients 7

2 Tbsp reduced calorie margarine, or unsalted butter
1 tsp prepared minced garlic
1 tsp each dried basil, mrs dash
2 Tbsp all purpose flour
1 1/2 c low sodium tomato juice
1 c skim evaporated, or regular skim milk
dash(es) black pepper

Steps:

  • 1. In a medium saucepan melt margarine, and add garlic and herbs
  • 2. sautee over medium heat for 1 minute
  • 3. slowly stir in flour, to make a rue
  • 4. slowly add tomato juice , stirring constantly, boiling until it thickens
  • 5. stir in milk and heat thru, adding pepper to your own taste
  • 6. Calories : 400 Sodium: 475 this is my calculations using a regular soft margarine. I have calculated as best as I could with the nutrition facts on packaging

One thing we really miss now that we're trying to cut back on the sodium is canned soups. We never realized the amount of sodium we were consuming through the soups we purchased! This is strange sounding, and I made it quite by accident, but we think that, although it might not be as thick as canned soup, it certainly has the flavor. DH says it has more flavor than canned - an explosion of taste! Withdrawal symptoms are going away .....

1 1/2 tablespoons part-skim ricotta cheese
1 pinch garlic powder (optional)

Steps:

  • Crumble ricotta and add V-8 slowly, blending well.
  • Sprinkle with garlic powder (if desired).
