HEALTHIER SLOW COOKER CHICKEN TACO SOUP

You can call this soup or chili, but either way it is wonderful! This recipe is also very adaptable to your personal taste. This healthier version includes more fresh veggies/herbs and uses seasoning mix from the Healthier Taco Seasoning I recipe on this website. Serve topped with a variety of reduced-fat options.

1 onion, chopped
1 (16 ounce) can chili beans
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn, drained
1 carrot, chopped
1 (8 ounce) can tomato sauce
2 (10 ounce) cans diced tomatoes with green chilies, undrained
1 (12 fluid ounce) can or bottle beer
1 ½ tablespoons taco seasoning, reduced sodium
3 whole skinless, boneless chicken breasts
¼ cup chopped fresh cilantro
½ cup shredded reduced-fat Cheddar cheese
¼ cup light sour cream
2 ounces crushed baked tortilla chips

Steps:

  • Place onion, chili beans, black beans, chopped carrot, corn, tomato sauce, diced tomatoes, and beer in a slow cooker. Add taco seasoning and stir to blend. Lay chicken breasts on top of mixture, pressing down slightly until just covered by other ingredients. Cover and cook on Low for 5 hours.
  • Remove chicken breasts from soup and allow to cool long enough to be handled. Shred chicken and stir back into soup. Continue cooking on Low for 2 hours. Serve with cilantro, Cheddar cheese, light sour cream, and crushed tortilla chips.

1 lb lean ground beef
2 can(s) rotel, drained off
1 can(s) black beans, canned, drained, and rinsed
1/2 c chopped, onion
1 jalapenos, fresh and chopped
2-3 c unsalted beef broth or stock
1 c corn
1/2 pkg mrs. dash salt free taco seasoning mix or your own version of homemade taco seasonings
1/2 c water

Steps:

  • 1. First off add everything but the jalapeno, meat, and onion to a crockpot. Cook your meat with the pepper and onions until cooked. Drain and add to crockpot.
  • 2. I set mine at High and will eat it around 3-4 hours from now but you can simmer on low if you like. Pair with brown rice or cornbread

1 (15 ounce) can black beans (drained and rinsed)
1 (15 ounce) can pinto beans (drained and rinsed)
1 (14.5 ounce) can diced tomatoes (drained)
1 (15 ounce) can sweet corn (drained)
1 (12.5 ounce) can chicken breast (drained)
1 (10.75 ounce) can cream of chicken soup
1 (10 ounce) can green enchilada sauce
1 (14 ounce) can chicken broth
1 (1 ounce) packet taco seasoning mix

Steps:

  • Spray slow cooker with nonstick cooking spray.
  • Pour all the ingredients into slow cooker and stir together.
  • Cook on low heat for 2-3 hours.
  • We like to serve this soup with shredded cheddar cheese and tortilla chips (optional).
