Number Of Ingredients 11

1 cup all-purpose flour
1 cup quick-cooking oats
1/2 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 egg whites
1/3 cup corn syrup
1 teaspoon vanilla extract
1/3 cup raisins

Steps:

  • In a medium bowl, combine the first 10 ingredients; mix well. Stir in raisins (dough will be stiff). Drop by tablespoonfuls onto baking sheets that have been coated with cooking spray. Bake at 375° for 8-10 minutes or until lightly browned.

This is a version of Recipe #47512 that I made and really enjoyed. I'm putting it here for safe keeping, and for anyone who might be looking for a lower-fat/less sugar version of these YUMMY cookies! Also, this version makes a smaller batch, which is good for my smaller family.

1/2 cup whole wheat flour
1/4 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2/3 cup Smart Balance butter spread, softened
1/4 cup brown sugar
1/4 cup granulated sugar
1 egg white
1/2 teaspoon vanilla (or more...)
1 cup Grape-nuts cereal
1 cup oatmeal
1/2 cup dried cranberries

Steps:

  • Preheat oven to 375.
  • In a large bowl beat Smart Balance, sugars, egg white, and vanilla until fluffy.
  • Make a well in the center of the bowl and add flours, baking soda, and salt. Beat to mix well.
  • Add cereal, oatmeal, and cranberries, stirring to blend.
  • Drop by tablespoons onto an ungreased cookie sheet. The dough may seem to be too "loose", but they will bind well when they bake.
  • Bake 9 minutes, or until tops are lightly browned.

1 cup unsalted butter
3/4 cup granulated sugar
3/4 cup brown sugar
2 eggs
1 teaspoon pure vanilla extract
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cardamon
3 cups rolled oats
1 cup dried cranberries (or other dried fruit)

Steps:

  • Preheat oven to 350 degrees. Cream butter and sugars until fluffy. Add eggs and vanilla. Combine dry ingredients. Add to butter mixture and stir until well blended. Add dried cranberries. Drop by teaspoonful onto parchment covered baking sheet. Bake about 10 to 12 minutes, or until lightly golden. Cool.

1 cup whole wheat or all purpose flour - plus up to ¼ cup if mixture is too thin
1 ½ cups quick cooking oats
½ cup packed light brown sugar
1 ½ teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon ginger
other spices (allspice, pumpkin pie spice) to taste
2/3 cup applesauce
1 teaspoon vanilla extract
½ cup Craisins (half a package)
1 egg white (3 tablespoon egg substitute)

Steps:

  • Mix all ingredients together in medium bowl. Drop mixture by tablespoonfuls or cookie scooper onto nonstick cookie sheet. Bake at 350 degrees for 8-10 minutes. Cool on cookie pan for 2-3 minutes and then transfer to wire racks to cool completely. Makes approximately 3 - 3 ½ dozen small, soft cookies. Recipe is easily doubled.

1/4 cup light butter
3/4 cup dark brown sugar
2 large eggs
1/2 cup unsweetened applesauce
1 1/2 cups wheat flour
1/2 teaspoon table salt
1/2 teaspoon ground cinnamon
1 teaspoon baking soda
1 1/2 cups uncooked old fashioned oats (or quick)
1/2 cup apple, chopped (or dried apples)
1/2 cup dried cranberries
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 350°F.
  • Combine butter and sugar in the bowl of an electric mixer; beat until light and fluffy, about 1 minute. Add eggs and beat for 30 seconds; add applesauce and beat just to mix.
  • In another bowl, stir together flour, salt, cinnamon and baking soda; add to mixer and beat to form batter. Mix in oats. Add apples, cranberries and walnuts; combine by hand.
  • Coat cookie sheet with cooking spray. Drop batter by heaping tablespoons 1 inch apart. Bake until cookies are lightly browned and firm, about 13 to 15 minutes.
  • Remove from oven and let stand 10 minutes. Move to wire rack and cool completely. Note: Store leftovers in an airtight plastic bag or container in the freezer.
