This mini meatloaf recipe is baked on a sheet pan alongside potatoes and veggies to make for a quick and delicious weeknight dinner! You can make this mini meatloaf with ground beef or ground turkey- so you have options. Either way, you'll get a healthy filling dinner that's portioned-out for the perfect serving!

1 slice bread
3 tablespoons milk
1/4 cup ketchup
2 tablespoons mustard
1 lb ground beef
1 tablespoon Worcestershire sauce
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 cup parmesan cheese
1/2 teaspoon salt
1/2 teaspoon pepper
1 large egg (beaten)
1/2 cup shredded cheddar cheese
1 lb baby potato butter potatoes (halved)
3 cups broccoli florets (cut into bite-size pieces)
2 tablespoons olive oil (divided)
salt and pepper

Steps:

  • Preheat oven to 375 degrees.
  • In a medium bowl, mix together milk and bread until a paste is formed.
  • In a small bowl, mix together the ketchup and mustard.
  • Then in the bowl, with the milk and bread paste, add the ground beef, Worcestershire sauce, onion powder, garlic powder, salt, pepper, parmesan cheese, shredded cheddar cheese, egg, and half of the ketchup mustard mixture. Mix all of the ingredients until everything is evenly distributed throughout the meat. Form into four loaves and place onto a sheet pan coated with cooking spray. Spread the remaining ketchup and mustard mixture evenly onto the top of the meatloaves.
  • In another medium bowl, mix together the potatoes with 1 tablespoon of olive oil, salt, and pepper. Place onto the sheet pan next to the meatloaf.
  • In the same medium bowl as the potatoes, mix together broccoli florets and 1 tablespoon of olive oil. Place on the sheet pan next to the potatoes.
  • Cook for 40 minutes or until meatloaves are cooked completely and veggies are roasted.
  • Serve immediately or store in glass meal prep containers for dinner throughout the week.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 350 degrees F. Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meatloaf will be dense.
  • Divide the mixture into 6 (10 to 11-ounce) portions and shape each portion into a small loaf on a sheet pan. Spread about a tablespoon of ketchup on the top of each portion. Bake for 40 to 45 minutes, until the internal temperature is 155 to 160 degrees F and the meat loaves are cooked through. Serve hot.

With DH being a diabetic, I am always looking for ways to add veggies into the diet. I found a recipe on the web and did some adjusting to suit our taste. The recipe calls for ground turkey; however, extra-lean ground beef also works well. Top with Creole Sauce recipe #149159 for a fabulous main course! These can be frozen, defrosted in the refrigerator and warmed as needed making this a great recipe for small families or when preparing a meal for one.

1 lb ground turkey
1 medium carrot, shredded
1 small zucchini, shredded and squeezed dry
1 small onion, chopped
1/2 bell pepper, finely chopped
1 teaspoon italian seasoning
2 tablespoons Worcestershire sauce
1 slice whole wheat bread
1/4 cup egg substitute or 1 whole egg
1/3 cup tomato ketchup

Steps:

  • Preheat oven to 400 degrees.
  • Spray a non-stick muffin tin or silicone muffin pan with nonstick cooking spray.
  • Crumble the ground meat into a large bowl; add the shredded carrots, zucchini, onion and green pepper.
  • Add the Italian seasoning and Worcestershire sauce.
  • Mix ingredients lightly with a fork.
  • Place the bread in a blender and process until fine crumbs; add the crumbs to the meat mixture along with the egg substitute or egg.
  • Mix ingredients with a fork until well blended.
  • Separate mixture into 6 equal portions and place in prepared pan, top with ketchup and bake in oven for 25 to 30 minutes or until done.
  • Serve immediately with Creole Sauce or allow the meatloaves to cool completely and place in a plastic bag, label, date and seal.
  • When ready to prepare the frozen meatloaves, remove what you need from plastic bag, place in refrigerator overnight and reheat in oven or microwave until warm.
