1/3 cup butter
1/3 cup brown sugar
1 egg
1/4 cup blackstrap molasses
1/2 cup honey
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
2 tablespoons grated fresh ginger

Steps:

  • In a big bowl. beat butter, brown sugar, egg.
  • Fill a one cup measuring cup with 1/4 cup blackstrap molasses. Then continue to fill the measuring cup to the 2/3 cup mark, with honey. Add to butter, sugar and egg. Mix well.
  • Grate chunk of ginger -about 2 tbsp-, then add to bowl and mix.
  • Sift dry ingredients into the big bowl and mix well.
  • Chill dough for 2 hours.
  • Roll out 1/4-inch thick and cut into shapes. Bake 8-10 minutes.

These great little pancakes taste just like christmas! They are packed full of fibre from the ww flour and oat bran, iron from the molasses, and good fat from the pecans! Enjoy!

1/2 cup oat bran
1/2 cup white whole wheat flour or 1/2 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 eggs or 1/2 cup egg substitute
7 tablespoons skim milk
3 tablespoons molasses
2 tablespoons unsweetened applesauce
4 teaspoons brown sugar
2 -3 tablespoons chopped pecans (optional)
3 -4 tablespoons chopped apples or 2 -3 tablespoons cranberries
1 1/4 teaspoons ginger
1 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 teaspoon orange rind

Steps:

  • Mix together dry ingredients. (You can do this the night before).
  • In a separate bowl, mix the wet ingredients and brown sugar then add to the dry, mixing until just moist, folding in pecans and cranberries.
  • If using cranberries, prepare as follows: Thaw if frozen. Cut in halves and place in bowl with sprinkle of white sugar. Toss in sugar then fold into pancake batter with pecans. (This cuts the tartness).
  • Let stand for five minutes **Don't skip this step.
  • Heat GREASED griddle to 350 while the pancake batter is standing.
  • Pour pancake batter onto griddle, and lightly spread outwards with a spatchula. Due to the molasses, this batter can thicken quite a bit.
  • Flip when bubbles form on top of pancake and edges are dry. Enjoy with maple syrup, caramel sauce, pear sauce, or applesauce.

1 cup apple butter
1/2 cup buttermilk
1/3 cup molasses
1/4 cup canola oil
1 large egg
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 cup dark brown sugar, lightly packed
1 tablespoon ground ginger
1 1/2 teaspoons cinnamon (or more)
1/4 teaspoon ground cloves
2 teaspoons baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 350°F Lightly oil a 1/2 gallon (7 X 11 inch) baking pan. Set aside.
  • In a large bowl, whisk together wet ingredients (apple butter, buttermilk, molasses, oil, egg and vanilla).
  • In another bowl, stir together dry ingredients (flour, brown sugar, ginger, cinnamon, cloves, baking soda and salt), breaking up any lumps of brown sugar with your fingertips.
  • Stir dry ingredients into apple butter mixture until well combined.
  • Scrape batter into prepared baking dish and smoothing top.
  • Bake for 30 to 40 minutes or inserted knife comes out clean. Let cool for 10 minutes before removing from pan.

A lower fat version of this favorite dessert. If you don't have dry buttermilk powder, use regular buttermilk; mix it in with the wet ingredients and omit the water.

1 tsp ground cinnamon
1/2 tsp baking soda
1/2 c sugar
2 Tbsp dry buttermilk powder
1/4 c vegetable oil
1/2 c dark molasses
1/2 c water
1 egg

Steps:

  • 1. Preheat oven to 350 F. Coat an 8-inch square baking pan with nonstick cooking spray.
  • 2. Combine flour, ginger, cinnamon, baking soda, sugar and buttermilk powder in a large mixingl bowl. Whisk together until blended.
  • 3. Add remaining ingredients and stir until combined.
  • 4. Pour into prepared pan and bake 25 minutes, or until wooden pick inserted in center comes out clean.
  • 5. Cool in pan on wire rack. Serve warm or room temperature with a dollop of whipped cream.

1/3 cup egg beaters egg substitute
1/2 cup 2% buttermilk
1/4 cup Splenda sugar substitute
3 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons cinnamon
1 tablespoon ground ginger
1/4 teaspoon ground cloves
1/2 teaspoon salt
1/4 teaspoon allspice
1/2 cup water

Steps:

  • preheat the oven to 325 degrees.
  • spray two eight inch square pans with cooking spray.
  • measure out dry ingredients (NOT including splenda), mix together, and set aside.
  • in another bowl, whisk molasses, applesauce, buttermilk, egg substitute, and splenda until smooth.
  • gradually fold in all of the dry ingredients into the wet batter.
  • batter will be very thick and viscous.
  • in a small saucepan, bring the 1/2 cup of water to a boil and add to the batter.
  • stir until incorporated.
  • batter will obviously have thinned out.
  • pour the batter into the two pans, and bake from about 30 to 40 minutes, or until an inserted knife comes out clean.
  • DO NOT OVERBAKE.
  • invert onto a plate or other surface and cool at least half an hour before cutting.

1/2 lemon, juice of
3 (6 ounce) pears, ripe but firm, Bosc recommended
1/4 cup light olive oil
1 large egg
1 cup low-fat buttermilk
1/4 cup molasses
1 cup cake flour
1 cup whole wheat pastry flour
1/2 cup Splenda granular, Granular for baking
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
2 teaspoons ground ginger
1 pinch ground cloves
2 tablespoons chopped crystallized ginger
1 teaspoon brown sugar

Steps:

  • Partially fill a bowl with water and add lemon juice. Peel the pears and cut them into quarters. Chop 2 pears into a small dice & place the pieces in the lemon water. Slice each quarter of the 3rd pear in 4 long pieces. Place them in the water.
  • Heat oven to 350ºF. Coat a 9"-X-13" baking dish with cooking spray & dust lightly with flour.
  • Combine the oil, egg, buttermilk and molasses in medium bowl.
  • In a large bowl, whisk the flours, Splenda, baking powder & soda, salt, cinnamon, ground ginger & cloves. Add the wet ingredients & mix gently.
  • Drain the pears and set long slices aside. Stir the chopped pear pieces & the chopped ginger into the batter.
  • Pour batter into prepared pan. Arrange long pear slices on top & sprinkle with brown sugar.
  • Bake for 25 minutes. Serve warm or at room temperature.
