- In sauce pan bring soup, stock, and water and mushrooms to boil.
- Add rice, stir and cover for 10 minutes.
CREAMY LOW FAT CHICKEN AND BROWN RICE
I find this recipe to be very flavorful and easy to prepare. My Littles always like it. I use a low sodium chicken broth and low fat cream of mushroom soup. The rice comes out very creamy and the chicken is always tender and delicious. Great hearty meal for fall, or anytime.

Steps:
- Add rice to slow cooker.
- Combine Cream of Mushroom Soup, Milk, Chicken broth, salt, black pepper, and ground red pepper. Add this to slow cooker.
- Add carrots, onions, celery to slow cooker.
- Add chicken on top.
- Cook on Low for 8-10 hours.
- Season with Lemon Pepper to taste.
- Enjoy!

- Pour wine or 1/4 cup broth into saute' pan and heat over medium high heat.
- Place mushrooms in pan and add salt and pepper to taste.
- Sauté mushrooms in wine or broth until softened. You can add more as the mushrooms cook down, if needed.
- Add all other ingredients and continue cooking over medium heat until cheese is melted and sauce is creamy.
- You can alter the flavor by changing the flavor of the cheese.
- Serve over chicken, rice, pasta or even vegetables!

- Set oven to 350 degrees (set oven rack to second-lowest position).
- Pam spray a 2-quart casserole dish (or one large enough to hold the mixture).
- In a skillet heat water over medium heat; add in onion, celery and green bell pepper; cook stirring over medium heat until softened (about 5 minutes, adding water as needed) or until well softened adding in garlic the last 2 minutes of cooking, place the mixture into the bowl.
- Add in soup, milk, drained canned mushrooms mayonnaise, sour cream, black pepper, garlic powder and cooked cold rice; mix with a wooden spoon until well combined adjusted black pepper and adding in a small amount of salt to taste (I use seasoned salt).
- Transfer to prepared casserole dish.
- Sprinkle parmesan cheese evenly over the rice mixture.
- Bake uncovered for 35-45 minutes.

Steps:
- For this soup, I use 1/2 lb button, 1/4 lb cremini and 1/4 lb shitake mushrooms.
- In a large pot, sautee mushrooms in olive oil until browned.
- Add onions, carrots, celery and garlic and sautee until tender.
- Add flour and thyme and cook for 3-4 mins until flour is cooked into the vegetables.
- Add stock, bay leaf and rice and bring to a boil.
- Simmer soup covered for 45-60 mins until rice is tender.
- Add salt and pepper to taste and balsamic vinegar if desired.
