2/3 cup non-fat plain Greek yogurt
2 Tbsp apple cider vinegar
1/2 Tbsp lemon juice (, fresh is best)
2 Tbsp granulated sugar
1/4 tsp ground celery seed
kosher salt and black pepper, to taste ((I like mine peppery))
10 oz bag of shredded coleslaw mix
1/3 cup red onion or shallots (, finely minced)
2 Tbsp green onions, sliced

Steps:

  • In a large mixing bowl, combine Greek yogurt, vinegar, lemon juice, sugar, celery seed, salt and pepper. Whisk until a dressing forms.
  • Add coleslaw mix, red onion, and green onions. Toss to combine, making sure all the coleslaw is coated.
  • Cover and refrigerate for at least 1 hour before serving. Taste and adjust salt and pepper seasoning.

1/4 - 1/2 White cabbage
3 large carrots
1 Red Onion
Some fresh yoghurt, I used lemon yoghurt (low fat or fat free). You can choose a flavour you enjoy. Pear, lime, strawberry, the sky's the limit!
1/2 lemon squeezed
1 -2 teaspoons of honey, optional
Salt & Pepper to season
**** the quantities of cabbage, onion and carrot are a guide, and you can add more or less of any or all.

Steps:

  • All you need to do is thinly shred everything like in the photo and then add to a mixing bowl.
  • I used a grater with big holes for the carrots and used a regular knife to finely shred the cabbage and the onion. You can use a processor, but I find this makes the carrots too fine, and the onion turns to watery mush, so use a knife!
  • Add the salt & pepper, lemon juice and then using a large spoon, stir everything and start adding 2 tablespoons of yoghurt at a time (you can add more or less for creaminess) Keep stirring and taste it. If it needs more sweetness, add some of the honey. If it needs more creaminess, add some more yoghurt. Everybody has different tastes so you add as much or as little of one ingredient as you wish.
  • Then refrigerate until ready to serve.
  • You can keep it refrigerated for a couple of days. Just give it a stir before you are ready to serve it.

1 head green cabbage, shredded
1 medium onion, sliced (use red onion or green onions)
2 tablespoons chopped fresh parsley (optional)
2 cups cream-style low fat cottage cheese
1/2 cup low-fat mayonnaise (can use more to taste)
1 tablespoon fresh lemon juice (or to taste)
1 tablespoon sugar (or to taste)
1/2 teaspoon garlic powder (can use more!)
seasoning salt (can use white salt)
pepper

Steps:

  • Toss the shredded cabbage and onion together in a large bowl.
  • In a small bowl whisk together cottage cheese, mayonnaise, lemon juice, sugar and garlic powder, then add to the cabbage/onion mixture; toss to combine then season with salt and pepper.
  • Cover and chill for a minimum of 3 hours before serving (overnight is even better!).

2 cups shredded cabbage
4 large firm tomatoes, chopped
1 large onion, finely chopped
2 green chile peppers, seeded and minced
salt to taste
white sugar to taste
1 tablespoon roasted peanut powder
1 tablespoon clarified butter
1 teaspoon cumin seeds
½ cup chopped fresh cilantro

Steps:

  • In a large bowl, toss together the cabbage, tomatoes, onion, chiles, salt, sugar and peanut powder until evenly combined.
  • In a small saute pan, heat the clarified butter over medium heat. Add the cumin and stir until toasted. Remove from heat, pour over the salad mixture and gently mix together. Chill until serving, and serve garnished with cilantro.

handful mint leaves
handful coriander leaves
handful toasted peanuts , roughly chopped
juice 2 limes
1 tbsp groundnut oil
1 red chilli , deseeded and finely chopped
1 tbsp soft brown sugar

Steps:

  • Tip the carrots, cabbage and onions into a bowl. Make the dressing by stirring the ingredients together until the sugar has dissolved. Pour over salad, tossing the vegetables in the dressing. Add the herbs, toss again, then scatter over the peanuts.

Posted this recipe as a request on the message board. I found the recipe in the "Blueberries and Polar Bears" cookbook. The recipe suggests serving this with "beef or Jalaneo Goose, or on top of a beef sandwich the next day!" I guessed on the serving size, because it wasn't given.

6 Spanish onions (whatever kind you have on hand)
1/2 cup vinegar
1/2 cup water
3/4 cup sugar
2 teaspoons salt
1 1/4 cups mayonnaise or 1 1/4 cups similar salad dressing
2 tablespoons celery seeds

Steps:

  • Slice the onions very thin and place them in a plastic or glass dish.
  • Combine the vinegar, water, sugar, and salt.
  • Mix well to dissolve the sugar and salt.
  • Pour over the sliced onions and mix well.
  • Put a plate on top of the onions and set a weight on it.
  • A plastic bottle of oil and vinegar works well.
  • Let the onions sit on the counter all day- overnight is best.
  • Drain the onions (You will wonder where all the liquid came from!).
  • Combine the dressing and celery seed and toss with onions.
  • Put in a serving bowl and serve.

6 ounces half-and-half (You can also substitute sour cream for half and half if you desire a thicker dressing)
1 1/2 cups salad dressing
7 ounces white vinegar
1 1/2 cups sugar
1/2 tablespoon Zenders chicken seasoning poultry seasoning
1 head cabbage, finely shredded
1/4 cup carrot, shredded,per lb of cabbage
1/4 cup onion, finely chopped,per lb. of cabbage
1/4 cup red cabbage, shredded,per lb. of cabbage
1/4 cup green pepper, finely chopped,per lb. of cabbage (I also sometimes use red pepper too)

Steps:

  • Mix first 5 ingredients until smooth.
  • (Zender's seasoning can be purchased at the restaurant or by mail order.) It contains garlic and paprika along with some other spices.
  • I use the Zender's seasoning.
  • Store in refrigerator.
  • Chill before using.
  • Shred cabbage.
  • Add carrots, onions, red cabbage and green peppers.
  • Add dressing until it coats the cabbage but doesn't make it soggy.
  • Recipe may be halved as it makes a large quantity, otherwise.
