Number Of Ingredients 10

8 cups old-fashioned oats
1 cup raisins
1/2 cup chopped dried apricots
1/2 cup dried cranberries
1-1/2 cups packed brown sugar
1/2 cup water
1 teaspoon salt
1 teaspoon maple flavoring
1 teaspoon vanilla extract
2% milk or reduced-fat plain yogurt

Steps:

  • In a large bowl, combine the oats, raisins, apricots and cranberries; set aside. In a small saucepan, combine the brown sugar, water and salt. Cook and stir over medium heat for 3-4 minutes or until brown sugar is dissolved. Remove from the heat; stir in maple flavoring and vanilla. Pour over oat mixture; stir to coat., Transfer to two greased 15x10x1-in. baking pans. Bake at 350° for 25-30 minutes or until crisp, stirring every 10 minutes. Cool completely on wire racks. Store in an airtight container. Serve with milk or yogurt.

I wanted an on-the-go oatmeal bar without the artificial ingredients of commercial bars. This is the base for the bars, a recipe easily modified to suit your own tastes.

2 cups old-fashioned rolled oats
⅓ cup packed brown sugar
1 tablespoon white sugar
1 ½ teaspoons baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
1 cup milk
2 eggs
2 tablespoons canola oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square pan.
  • Combine oats, brown sugar, white sugar, baking powder, salt, and cinnamon together in a bowl. Whisk milk, eggs, canola oil, and vanilla extract together in a separate bowl. Stir egg mixture into oats mixture until well combined; set aside until flavors blend, about 20 minutes. Spread oats mixture into prepared square pan.
  • Bake in the preheated oven until edges are golden brown, about 30 minutes.

These are good to eat anytime not only for breakfast. Good for snacks and camping and they're healthy too.

Number Of Ingredients 10

1 cup rolled oats
1 cup Rice Krispies
2/3 cup chopped apricot
3 tablespoons roasted sunflower seeds (I didn't bother toasting them)
1/4 cup toasted coconut (I don't toast it)
1/4 cup brown sugar, packed
2 tablespoons vegetable oil
3 tablespoons honey
2 tablespoons peanut butter
1 tablespoon vanilla

Steps:

  • Melt oil, honey, peanut butter in microwave just until easy to mix up, watch careful, probably 20 seconds or so.
  • Mix in vanilla.
  • Mix all ingredients together and press down well into 8" square pan sprayed with Pam.
  • Make sure you press down firmly.
  • Bake at 350°F for 20 minutes.
  • Let cool before serving.

1 1/2 tablespoons margarine
1 1/2 tablespoons reduced-fat peanut butter
8 ounces large marshmallows (use half 16-ounce package)
1/3 cup reduced-fat semisweet chocolate morsel

Steps:

  • Spray a 13 x 9-inch baking dish with non-stick cooking spray.
  • Place the rice cereal in a large bowl.
  • In a saucepan combine the marshmallows and margaine with peanut butter; cook stirring constantly over low heat until marshmallows are melted.
  • Pour the marshmallow mixture over the cereal; stir with wooden spoon until well coated.
  • Add/mix in reduced-fat chocolate morsels.
  • Press the mixture into prepared pan, using a rubber spatula to spread out.
  • Cut into 24 bars.
