I just love Jello fat free/sugar free pudding, I can play with it in so many ways and this is a very good way.

1 (42 g) package diet jello sugar-free instant vanilla pudding mix
1 (42 g) package diet jello sugar-free instant chocolate pudding mix
3 cups nonfat milk
1 cup of drip brewed coffee, chilled
Cool Whip Free (optional)
cocoa, for sprinkling (optional)

Steps:

  • Follow the directions on the package for preparing the vanilla pudding: add 2 cups of cold milk and pudding mix in a bowl and whisk for two minutes.
  • In a separate bowl, prepare the chocolate pudding.
  • The directions call for 2 cups of milk. Instead, put in 1½ cups of milk and ½ cup of chilled coffee and pudding mix in a bowl and whisk for two minutes.
  • Transfer about 4 tablespoons of the vanilla and 4 tablespoons of the chocolate pudding to a third bowl.
  • Add 2 more tablespoons of coffee to this batch.
  • Whisk this batch.
  • It should appear a few shades lighter than the chocolate pudding's color.
  • Discard the remainder of the coffee (or drink it).
  • Layer in cups or parfait glasses. Refrigerate for five minutes. Garnish with whipped cream and or a sprinkling of coco, if desired, before serving.

I made this about like the recipe for parfaits. Again with the jars which I think is a great idea. Take them about anywhere and not worry about them. Course you can use parfait glasses too. These are good and seem to be filling too.

2 (3 ounce) boxes Jello gelatin, any flavors
1 1/2 cups boiling water
1 1/2 cups cold water
2 (6 ounce) cartons yoplait thick and creamy vanilla yogurt
9 graham crackers, crushed fine

Steps:

  • Mix both packages of jell-o with the boiling water and stir till jell-o is disolved.
  • Add cold water and stir.
  • Refrigerate about 4 hours or until jell-o is firm.
  • Put half of the jell-o into mixing bowl and add 1 container of yogurt.
  • Set mixer on a medium -low setting and blend until blended but not creamy.
  • put about 2 teaspoons gramham cracker crumbs in the bottom of 6 half pint canning jars.
  • Followed by about 2 tablespoons jell-o mixture.
  • Follow with about 2 teaspoons graham cracker crumbs.
  • Followed by about 2 tablespoons plain jell-o.
  • Next 2 tablespoons of vanilla yogurt.
  • Repeat layers until all ingreditents are gone.
  • Wipe rims, add lids and refrigerate.
  • Really I don't think the order matters.
  • Just put graham crackers between each layer.

1 packet of sweet-n-low sugar substitute
1/4 teaspoon ground cinnamon
1 teaspoon instant coffee granules

Steps:

  • Place coffee granules into coffee cup/mug.
  • In small saucepan, heat milk, sweet-n-low, and cinnamon over medium-low heat until it reaches a simmer.
  • Pour into coffee cup, stir well and enjoy!

2 (7 g) envelopes unflavored gelatin
3/4 cup fat-free evaporated milk
1 1/2 cups hot brewed coffee
1/2 cup sugar
1/4 cup unsweetened cocoa powder
1 1/2 teaspoons vanilla
1 1/4 cups ice cubes
1 cup thawed Cool Whip Lite

Steps:

  • Sprinkle gelatine over milk in blender container; let stand 1 minute.
  • Add coffee; cover. Blend on low speed 2 minutes or until gelatine is completely dissolved. Add sugar, cocoa and vanilla; cover. Blend on high speed until well blended. Add ice cubes, 1 at a time, covering and blending on high speed after each addition until ice is melted. Pour evenly into 6 parfait glasses.
  • Refrigerate 2 hours or until set. Top with whipped topping just before serving.
