1 (8 1/2 ounce) box Jiffy corn muffin mix
1 large onion, chopped
1/2 cup margarine or 1/2 cup butter
4 eggs
1 cup cheddar cheese, shredded
1 (10 ounce) package frozen chopped broccoli, thawed and drained
8 ounces sour cream, i use low fat
1 teaspoon salt

Steps:

  • Preheat oven to 425 degrees Fahrenheit.
  • Mix all ingredients together well.
  • Grease a 8x8 pan, I use Pam.
  • Pour into prepared pan.
  • Bake@ 425 degrees Fahrenheit for 40 minutes or until bread is pulling away from side of pan.
  • Let sit for 15 minutes until cutting.

Quick and easy cornbread from scratch with fresh broccoli and low fat cottage cheese. This cornbread, though not cake-like and sweet like many recipes, is still moist and is quite savory. Since many people don't own an iron skillet, this recipe uses a cake pan instead.

1 cup broccoli florets
1 tablespoon butter, melted
½ cup low-fat cottage cheese
1 egg, lightly beaten
2 tablespoons milk
1 cup cornmeal
½ teaspoon baking soda
½ teaspoon salt

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Grease a 9 inch cake pan.
  • Bring an inch of water to a boil in a large saucepan. Place broccoli in pan and cover. Steam until tender, about 5 minutes. Drain, and rinse with cold water until cold; squeeze out excess water.
  • Combine melted butter, cottage cheese, egg, milk, and steamed broccoli in a large bowl. In a separate large bowl, stir together the cornmeal, baking soda, and salt. Make a depression in the middle of the dry ingredients; spoon in broccoli mixture. Stir until well combined. Spoon into prepared pan.
  • Bake until a knife inserted into the center of the pan comes out clean, about 20 minutes. Loosen edges of cooked cornbread with a knife. Cut into wedges to serve.

1 cup all-purpose flour
1 cup cornmeal
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 egg whites
1 cup fat-free milk
1/4 cup unsweetened applesauce

Steps:

  • In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt. In a small bowl, combine the egg whites, milk and applesauce. Stir into dry ingredients just until moistened. , Pour into a 9-in. square baking pan coated with cooking spray. Bake at 400° for 15-20 minutes or until a toothpick inserted in the center comes out clean. Remove from pan to wire rack. Serve warm.
