I like to snack on these muffins, they're good, and they're healthy too. Add more sugar if you want it to be sweeter, since these muffins aren't very sweet. Be careful with the milk, sometimes it can be too moist, but you'll just have to bake it for a longer period of time.

1 ½ cups wheat bran
1 cup low-fat buttermilk
1 cup all-purpose flour
¼ cup packed brown sugar
1 teaspoon baking soda
2 egg whites
½ apple, grated

Steps:

  • In a small bowl, combine bran and buttermilk. Set aside to soak for 10 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease muffin pan, or use paper liners.
  • In a large bowl, mix together flour, brown sugar and baking soda. Stir in bran mixture and egg whites. Fold in grated apple. Divide batter into 12 muffin cups.
  • Bake in preheated oven for 16 to 18 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool for 5 minutes before removing from the pan.

3/4 cup whole wheat flour
1 1/2 teaspoons cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup low-fat buttermilk
1/2 cup oat bran
1/8 cup Splenda brown sugar blend
1 tablespoon vegetable oil
1 tablespoon unsweetened applesauce
1/4 cup egg white
1 1/2 cups apples (peeled, cored, and finely chopped Golden Delicious is a good choice)

Steps:

  • Heat oven to 400 degrees F.
  • Grease twelve 3-inch muffin cups or line with paper liners.
  • In large bowl, combine both flours, cinnamon, baking powder, baking soda, and salt.
  • In medium bowl, beat buttermilk, oat bran, brown sugar, oil, applesauce and egg until blended.
  • Stir buttermilk mixture into flour mixture just until combined.
  • Fold in apples.
  • Divide batter among muffin cups.
  • Bake 18 to 20 minutes or until wooden pick inserted in centers comes out clean.
  • Cool muffins in pan 5 minutes; remove from pan and cool on wire rack.

Oat Bran Apple Pie Muffins (Everything-Free, Low-Cal and Vegan!) image

Fat-free, sugar-free, low-calorie, AND vegan!! This recipe came about when I was looking for something a little different to do with some apple pie filling, and for a sugar-free muffin recipe that didn't have any added artificial sweeteners. (Yes, the pie filling is sweetened with Splenda, but that wouldn't affect the texture of the final product the way adding Splenda would.) I used a kitchen scissors to chop the apple slices from the pie filling into smaller pieces. Try to get all of the "goo" from the pie filling in there, too -- don't just throw it out! If you overmix, it will probably be tough; that's why I chose to mix it by hand, though of course you could use an electric mixer if you prefer. I used a jumbo-sized muffin pan, and I got six nice-sized muffins -- for less than 150 calories each!

1 (12 ounce) can apple juice concentrate, thawed
2 large green cooking apples
1 1/4 cups oat bran
2 cups whole wheat flour
1 cup unbleached white flour
2 1/2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
canola oil or olive oil, for oiling the muffin pan

Steps:

  • Heat oven to 325°F Lightly oil muffin pan. Peel and core apples; chop them coarsely. Set aside.
  • In a mixing bowl, stir together pastry flour, white flour, oat bran, baking soda, cinnamon, and nutmeg.
  • Add thawed apple juice concentrate, chopped apples, and enough water to make a light batter.
  • Mix just enough to moisten all ingredients. Divide batter among the muffin cups and bake till lightly browned, 25-30 minutes.
  • Remove muffins from cups while hot.

1 tablespoon extra-light olive oil
2 tablespoons finely chopped unpeeled apples

Steps:

  • Heat oven to 425 degrees.
  • Line muffin cups of standard muffin pan with paper liners or spray with non-stick cooking spray.
  • In a measuring cup combine milk and vinegar; set aside.
  • In a large bowl combine 7 dry ingredients. Make a well in the center; set aside.
  • In a medium bowl, combine milk and next 5 ingredients.
  • Pour wet mixture into the well of the dry ingredients and mix until just combined and slightly lumpy.
  • Pour into muffin pan.
  • Make the streusel topping by combining flour and cinnamon. Stir in oil until mixture represents course crumbs. Stir in apple. Sprinkle over batter.
  • Bake 15-18 minutes, or until tops are golden and toothpick comes out clean.
  • Cool for 5 minutes in pan on rack. Remove from pan and cool completely.

This is not OATMEAL, but oat BRAN muffins. I have made these for about five years now, and I really love them. They are great made with cinnamon or cranberry applesauce, as well as plain applesauce. My daughter loves them and I hope you will enjoy them, too!

1 ½ cups oat bran
1 ½ cups all-purpose flour
2 teaspoons baking powder

1 cup chilled applesauce
4 tablespoons vegetable oil

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Line or grease 12 muffin cups.
  • Blend together brown sugar, oat bran, flour, baking powder, soda, and salt. Add eggs, chilled applesauce, and vegetable oil. Mix until well-blended. Spoon batter into muffin cups. Let stand 10 minutes.
  • Bake at 400 degrees F (205 degrees C) for 15 minutes or until golden brown.
  • VARIATIONS: Add 1 cup plumped raisins, with a little bit of raisin water (approximately 2 tablespoons). Or, before baking, sprinkle mixture of sugar and cinnamon over the tops of the muffins. Or, add 1 teaspoon cinnamon or nutmeg to flour mixture.
