COUNTRY COTTAGE ROLLS (VEGETARIAN)

I got this recipe from my sister so I could make these for a bunch of guys at work who were all astounded these contained no meat whatsoever.

Yield 36 small party sized rolls

Number Of Ingredients 10

1/2 cup walnuts or 1/2 cup pecans
1 small onion
3 eggs
1 tablespoon soy sauce
1 cup cottage cheese (plain, low fat)
1/2 cup dry breadcrumbs
1 cup rolled oats
1 teaspoon mixed herbs
3 sheets puff pastry
milk, for glazing

Steps:

  • In a food processer, chop the nuts and onion into very small pieces.
  • Add eggs, soy sauce and cottage cheese and process until smooth.
  • Transfer to a fairly large bowl and mix in the dry ingredients.
  • Turn your oven on to 220°C Prepare an oven tray with baking paper or a silicon sheet.
  • Cut the pastry sheets in half and spoon mixture down one edge. Brush the other edge with milk. Roll to enclose mixture and repeat with remaining sheets.
  • Cut each log into 6 even lengths and place them on the prepared oven tray. Prick the tops with a sharp knife or fork and brush with milk. TIP: Doing this on the tray you will be baking them prevents mess in case the filling decides to ooze out.
  • Bake in your now hot oven at 220C for 15-20 minutes or until crisp and golden.

1/2 cup diced cooked chicken, cooled
1/2 cup diced cooked collard greens, cooled
1/2 cup cooked rice, cooled
1/2 cup cooked black-eyed peas, cooled
1 to 2 cups vegetable oil (depending on size of pan)
Eight 7-inch square egg roll wrappers
1 egg, beaten
Spicy honey mustard, for serving

Steps:

  • Mix together the chicken, collards, rice and black-eyed peas in a bowl.
  • Heat the vegetable oil to 375 degrees F in a large skillet over medium-high heat.
  • Line up the egg roll wrappers with one corner pointed toward you. Place a heaping tablespoon of the filling in the center of each wrapper. Fold the near corner up over the mixture, then fold in the left and right corners. Brush a bit of the beaten egg on the final corner to help seal the egg rolls, and then roll up into a package.
  • In batches, fry the egg rolls in the hot oil until golden brown, turning occasionally, about 2 minutes. Drain on paper towels or a rack.
  • Transfer the egg rolls to a serving plate and top with spicy honey mustard if desired.

1 tube (8 ounces) reduced-fat crescent rolls
1 package (8 ounces) reduced-fat cream cheese
1 envelope ranch salad dressing mix
2 tablespoons fat-free milk
1/2 cup each chopped fresh broccoli, cauliflower, carrots, green pepper, sweet red pepper and mushrooms

Steps:

  • Unroll crescent roll dough into one long rectangle. Press onto the bottom of a 13-in. x 9-in. baking pan coated with cooking spray; seal seams and perforations. , Bake at 375° for 11-13 minutes or until golden brown. Cool completely., In a large bowl, beat the cream cheese, salad dressing mix and milk until smooth. Spread over crust. Sprinkle with vegetables. Cover and refrigerate for at least 1 hour before serving. Cut into 16 pieces.
