4 green peppers (cleaned with seeds and tops removed)
1 tablespoon extra virgin olive oil
1/3 cup onion (chopped fine)
3 garlic cloves (small to medium sized minced)
1/4 cup green onion (chopped fine)
2 tablespoons green peppers (minced)
1 lb ground turkey
0.5 (14 1/2 ounce) can diced tomatoes (1/4 cup of liquid reserved)
1 tablespoon parsley
1 1/2 teaspoons italian seasoning
1 teaspoon seasoning salt or 1 teaspoon seasoning, blend
1/4 cup pizza sauce
1/4 cup pre-shredded mozzarella cheese
1/4 cup monterey jack cheese (shredded)

Steps:

  • Preheat Oven to 375 degrees.
  • Saute onion and garlic in olive oil until onion softens.
  • Add green onions, minced green pepper and saute for about five minutes.
  • Set onion, garlic and green pepper mixture aside.
  • Brown ground turkey and cook through.
  • Add onion, garlic, and green pepper mixture. Also, add diced tomatoes, parsley, italian seasoning, and season salt/blend.
  • Mix well and cook another five minutes.
  • Stuff mixture inside hollow green peppers.
  • Pour reserved tomato liquid in a baking dish and place peppers in dish.
  • Top each stuffed pepper with about a tablespoon of pizza sauce.
  • Mound each pepper with cheeses.
  • Cook in a 375 degree oven for 20 minutes or until cheese is golden brown.

½ pound bulk pork sausage
6 Roma tomatoes, chopped, divided
1 small white onion, finely diced
1 tablespoon butter

½ teaspoon fennel seed, or to taste
seasoned pepper to taste
4 large green bell peppers, tops and seeds removed
6 ounces crumbled feta cheese
½ cup grated Parmesan cheese

Steps:

  • Coat a casserole dish with cooking spray.
  • Cook ground sirloin and sausage in a skillet over medium-low heat until browned and crumbly, stirring often, 5 to 10 minutes. Drain thoroughly. Mix in 3/4 the tomatoes, onion, butter, garlic, oregano, fennel seed, and seasoned pepper. Simmer over low heat until meat mixture comes together, about 20 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Fill bell peppers with meat mixture, alternating with layers of feta cheese and Parmesan cheese. Place stuffed bell peppers side-by-side in the prepared casserole dish; add remaining tomatoes around and under the peppers so they cook up and into the peppers. Sprinkle with mozzarella cheese.
  • Bake in the preheated oven until browned and bubbly, about 30 minutes.

3 large green bell peppers - halved, seeded, and membranes removed
2 tablespoons olive oil
1 pound skinless, boneless chicken breast halves, cut into strips
2 tablespoons taco seasoning mix, divided
1 small red onion, diced

1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can tomato sauce
1 cup cauliflower rice
1 cup shredded reduced-fat Cheddar cheese
½ cup nonfat plain Greek yogurt
1 tablespoon chopped fresh cilantro
1 teaspoon lime juice, or to taste
½ teaspoon taco seasoning mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Bring a large pot of salted water to a boil; cook peppers until just soft, 6 to 7 minutes. Drain and transfer to the prepared baking sheet.
  • Heat oil in a skillet over medium heat; add chicken and 1 1/2 teaspoon taco seasoning mix. Cook and stir until chicken is no longer pink in the center, about 8 minutes. Chop or shred chicken and transfer to a bowl.
  • Cook and stir onion and garlic in the same skillet over medium heat until tender, 5 to 10 minutes.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a baking dish with cooking spray.
  • Heat olive oil in a large skillet over medium heat. Stir in ground turkey, onion, jalapeno, and garlic. Cook and stir until turkey browns and vegetables are tender, 8 to 10 minutes. Drain grease from the skillet. Add frozen riced cauliflower, tomatoes, tomato sauce, water, chili paste, salt, and pepper; stir until well incorporated. Reduce heat and simmer for 5 minutes.
  • Place bell pepper halves in the prepared baking dish. Place 1 Colby-Jack cheese cube in each pepper half, and fill with turkey mixture. Spoon remaining turkey mixture into the dish around the peppers.
  • Cover dish with aluminum foil, and bake in the preheated oven for 30 minutes. Remove foil and sprinkle each pepper with shredded Colby-Jack cheese. Bake, uncovered, until peppers are soft and cheese has melted, about 10 minutes more.
  • To serve, spoon a little turkey mixture onto a plate, and place a bell pepper half on top of it. Top each serving with 1 teaspoon sour cream and 2 jalapeno slices.

4 large green peppers or 4 large red peppers, seeded, cored and sliced in half lengthwise
2 tablespoons olive oil
1/2 cup mushroom, chopped
1/2 cup onion, chopped
1/2 cup celery, chopped

1 -1 1/4 lb lean ground turkey (I use 93% lean)
1 egg, beaten
1/4 teaspoon garlic powder

Salt And Pepper
1/4 cups Diced Onion
2- 1/4 ounces, weight Sliced Black Olives (Or Whole Olives Halved)
1 teaspoon Christopher Ranch Crushed Garlic (Or 2 Fresh Cloves, Minced)
8 ounces, fluid La Victoria Enchilada Sauce Medium (See Notes)
4 ounces, fluid Del Monte Tomato Sauce (See Notes)
1/2 teaspoons Mexican Oregano
1/4 teaspoons Black Pepper
1/4 teaspoons Red Pepper Flakes (optional)
1- 1/2 cup Sharp Cheddar Cheese, Shredded And Divided

Steps:

  • Preheat oven to 350ºF. Spray cooking spray in a baking pan big enough to hold all the halved peppers lying flat cut side up. Set aside.
  • Cut bell peppers in half lengthwise (down through the stem, or just beside the stem). Remove seeds and membranes. Put peppers in a microwaveable dish and splash with a tablespoon of water. Cover tightly and microwave on high for 3 minutes. Drain well, and lay the peppers out in the baking pan or casserole big enough for them to lay flat with their cut sides up.
  • Brown ground beef with onion in a large skillet. Give the meat a light sprinkle of salt and pepper while cooking. Cook until onions are translucent and water from meat has evaporated. Drain the grease.
  • While meat is cooking, drain olives and set aside 6 halves or slices to use as garnish.
  • Add garlic to cooked meat, and continue cooking for another minute. Add enchilada sauce, tomato sauce, drained olives, remaining spices, and 1 cup of the cheese to the hamburger. Stir until cheese is completely melted and mixture has thickened somewhat.
  • Divide enchilada stuffing evenly among pepper cups. Sprinkle remaining cheese over the top. If you reserved any of the olive halves/slices, put them on top of the cheese. This is just for presentation, so if you forgot to set some aside, don't worry about it.
  • Bake for 30 minutes, or until cheese on top begins to brown. Remove from oven, and sprinkle with chopped cilantro. Serve.
  • Leftovers may be frozen.
  • Notes:
  • • I stuffed both red and green bell peppers, and I like the red much better for this dish. They give it a sweetness the green does not impart. The green bell peppers have 1 less carb per serving. To improve macros, I recommend serving with some avocado slices on the side.
  • • Use any enchilada sauce that is gluten free, sugar free, and has no added tomato sauce.
  • • You'll be using only 1/2 of a small can of tomato sauce. Be sure you use one with no added sugar. You can freeze the other half in a freezer bag and save to use next time, or make 2 batches at one time and freeze the extras to be warmed and served later.

1 lb ground beef or 1 lb ground lamb
1 small onion, minced
1 tablespoon macadamia nut oil or 1 tablespoon olive oil

1/2 teaspoon ground cumin
1/2 teaspoon turmeric
1 teaspoon cinnamon

1 medium ripe tomatoes, chopped
5 ounces plain nonfat yogurt (I like thick Greek yogurt)
1 tablespoon fresh lemon juice
4 ounces feta cheese, crumbled

Steps:

  • Cut tops out of the green peppers and remove any seeds or membranes.
  • Blanch peppers for 5 minutes in salted boiling water, or you may place these in a microwave-safe pan, add 1/4 cup water, cover and cook for 5 minutes on high until softened.
  • Meanwhile, brown ground meat and onion in oil, add spices.
  • When meat is almost cooked through, add chopped tomato.
  • When meat is cooked through, allow to cool slightly then mix in the yogurt and lemon juice.

1 lb lean hamburger
7 slices bacon, cut into small pcs
1/2 cup onion, diced finely
4 -5 garlic cloves, chopped finely
1 teaspoon seasoning salt
1 teaspoon chili powder

1 slice bread, torn into small pcs
3 green bell peppers, medium-large sized
3/4 cup sharp cheddar cheese

  • Put hamburger, bacon, onion, and garlic in a skillet.

I was craving a taste of the inside out stuffed peppers that I made last Saturday and delivered to the church for an event. BUT... I need to do low carbohydrate so I thought about it and came up with this recipe where I leave out the rice, and add in cabbage and green beans. I tried it out and darned if I don't think it is absolutely delicious so I decided to post it!! Perhaps you will like it too. And those are ACTUAL PHOTOGRAPHS, too!! LOL! Enjoy!

1 pound(s) bag of cole slaw (with a little carrot)
2 cup(s) frozen green italian broad beans (any green beans will do)
2 - extra large green bell peppers, chopped (can use more if you like)
1 pound(s) frozen italian flavored meat balls
1 can(s) 15 oz tomato sauce
1/4 cup(s) red cooking wine (holland house brand)
1/2 large onion, chopped
1/2 teaspoon(s) salt
1/2 stick(s) butter
1 teaspoon(s) granulated garlic

Steps:

  • Dump cole slaw into 6 qt. slow cooker
  • Layer on the frozen green beans, then the chopped bell peppers. (If you really want more of the green pepper taste, add 1 or 2 more green peppers, chopped. I wanted to put in one more but was running out of room in the pot. Perhaps 3/4 of a bag of cole slaw would have been better and then add additional green pepper -- but it really was delicious as it was.)
  • Layer on the frozen meat balls and chopped onion then sprinkle the salt and garlic powder over top of everything
  • Mix the red wine and the tomato sauce in a bowl and drizzle over everything, trying to touch all the meat balls.
  • Cut up the 1/2 stick of butter into individual pats and dot the whole pan with them.
  • Put the lid on and turn the timer to high for 4 hours. (Can probably also cook for about 8 hours on low if you like)
  • After mine had been cooking for about an hour, I stirred everything to mix up the layers and really get the flavors to permeate all the ingredients. If you are doing an all day, away from home, slow cook, then you don't really have to stir it. OR you can simply stir it once before you leave for work. It should be fine.

No crust needed for these Low-Carb Easy Pizza Stuffed Peppers! This recipe delivers delicious pizza flavor without adding the carbs of a crust. These stuffed peppers can be part of a low-carb, ketogenic, Atkins, diabetic, gluten-free, grain-free, or Banting diet.

Number Of Ingredients 5

4 large bell peppers (Cut in half lengthwise, seeds and ribs removed)
1 pound ground Italian sausage ((sweet or hot))
3/4 cup pizza sauce ((low-carb))
8 slices provolone or mozzarella cheese
16 slices pepperoni

Steps:

  • Preheat oven to 375º Fahrenheit. Arrange peppers on a baking sheet. When oven is preheated, bake peppers for 10 minutes. After removing them from the oven leave it turned on for used later.
  • While peppers are baking, heat a skillet over medium-high heat. When skillet is hot, add the ground sausage. Cook sausage until brown. Remove skillet from heat. Drain out any excess grease.
  • Stir the pizza sauce into the sausage.
  • Divide sausage mixture among the pepper halves.
  • Cover each pepper half with a slice of cheese and two slices of pepperoni.
  • Bake in preheated oven for 14-17 minutes, or until cheese is melted and slightly browned on top.
