Here is a classic French recipe. Back in my cheffing & catering days, this was always a winner. You can serve this as an appetizer or as a meal. Here you have salmon croquettes served with my avocado basil dressing atop a bed of baby arugula, which is lightly tossed in olive oil.

Number Of Ingredients 13

1 lb salmon, cooked and shredded
2 eggs
1/3 c mayonnaise
1/2 c grated parmesan cheese
1/2 c almond flour
1/4 c white onion, minced
3 Tbsp fresh basil, chopped
1/2 tsp garlic powder
1 tsp red pepper flakes
1 tsp sea salt
1 tsp freshly ground black pepper
2 Tbsp avocado oil
1 freshly squeesed lemon juice

Steps:

  • 1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • 2. Cook the salmon for approximately 20 minutes or until cooked throughout. Once cooled, shred the salmon in a large mixing bowl.
  • 3. To the bowl add the eggs, mayonnaise, parmesan cheese, almond flour, white onion, basil, garlic powder, red pepper flakes, salt, pepper, and mix well. Form into 6 patties.
  • 4. In a large skillet, over medium heat, add the avocado oil. Cook for approximately 2 minutes on each side, or until golden brown.
  • 5. Serve with freshly squeezed lemon juice.

I don't know where this recipe came from,but they are great for low carb diets. They are rather delicate to handle.I use 2 spatulas for frying

1 (7 1/2 ounce) can salmon, drained,skin removed
1 stalk minced celery
4 scallions, chopped
1 egg (or substitute)
1 tablespoon dill
1/2 cup wheat germ
olive oil

Steps:

  • Mix 1st 5 ingredients.
  • Form 4 rolls.
  • Gently roll them in the wheat germ to coat.
  • Fry in oil,turning gently until crispy on all sides.
