- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone baking mat.
- Mix peanut butter, sugar substitute, egg, and vanilla extract together in a bowl. Drop 16 spoonfuls of dough 1 inch apart onto the prepared baking sheet.
- Bake in the preheated oven until set, about 12 minutes.

Steps:
- Preheat oven to 350 degrees.
- Line cookie sheet with parchment paper (do not grease parchment).
- Mix peanut butter, Splenda, egg, vanilla until combined.
- Then slowly mix in chocolate chips.
- Once all mixed portion into 12 balls.
- Place on parchment and then use a fork to criss-cross mark the cookies and flatten them ala regular peanut butter cookies.
- Bake at 350 for 12 minutes.
- Remove from oven, cool a couple minutes on pan then transfer to a wire rack to cool.
- Store in airtight bag or container - cookies will be crumbly but not hard, so keep that in mind when storing.

- Preheat oven to 350.
- Combine all ingredients ingredients in a mixing bowl and beat well to combine.
- Line a cookie sheet with parchment paper. Use a cookie scoop to make round balls of dough.
- Using a fork dipped in extra Lakanto, press a criss-cross pattern into the top of each cookie.
- Bake for 12-15 minutes, then let them cool for 5 minutes on the pan.

I adapted this from The High Protein Low Carb Peanut Butter and Nuts Cookies recipe #966930. I didn't have 4 cups of nuts on hand and I changed it around a little. My kids love them. And since they're low in carbs and sugar its a good snack for my son who is diabetic. The orginal recipe makes small cookies but i like to use a tablespoon instead of a teaspoon because i like to use them between meals for a high protein low carb quick snack. I hope you enjoy!
