Steps:
- Heat the butter in a small slilet over medium heat. Sauté the onion until it is translucent, about 6-8 minutes.
- Pre-heat the oven to 375F. Spray a pie pan with cooking spray. In a large bowl, add in the spinach, onion, beaten egg, heavy cream, salt, pepper, nutmeg, and cheese. Stir until all combined. Pour into the pie plate.
- Bake in the preheated oven for 35-40 minutes, or until the eggs are set. Cut into 6 slices and serve.

LOW-CARB MUENSTER SPINACH PIE
I love the blend of the cheese with the spinach in this. It serves about 6 but I've seen my husband eat over half of it! Really great side, especially if you're on the low-carb diet plan! (I buy 2 packages of sliced muenster for this).

Steps:
- Preheat oven to 350 degrees.
- Line a quiche dish or 9 inch pie pan with the 8 ounces of muenster cheese slices.
- Carefully press all of the water out of the spinach and place in large mixing bowl.
- Add eggs, parmesan cheese, cream cheese, salt, pepper and garlic powder.
- Stir well.
- Spoon mixture into pan and top with remaining cheese slices.
- Bake for 35 minutes and allow to set up for 10 minutes before serving.
- (preheat oven to 325 if using glass dish).

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
- Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.
- In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.
- Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.

SPINACH PIE WITH MUENSTER CRUST
I submitted this recipe to Southern Living Magazine and they printed it. It's great for a holiday side dish.

Steps:
- Drain spinach well, pressing between layers of paper towels (or whatever) and set aside.
- Cut 2-3 cheese slices into small triangles, and reserve for garnish.
- Cover bottom and sides of a lightly greased 9 or10-inch pieplate with remaining Muenster slices, overlapping cheese as needed.
- Combine spinach, onion and next 5 ingredients.
- Spoon into cheese-lined pieplate.
- Bake 350 for 45 minutes or until set.
- Cool 10 minutes before serving.
- Garnish with reserved cheese triangles and pimiento strips, if desired.
