1 lb lean ground turkey
1 cup onion, diced
1/2 cup carrot
2 egg whites, whisked
3/4 cup oatmeal
2 teaspoons dried Italian seasoning, divided
1/8 teaspoon cayenne pepper
1/2 teaspoon Chinese five spice powder (optional)
6 ounces tomato sauce
2 tablespoons apple cider vinegar
1 garlic clove
1 teaspoon Agave

Steps:

  • Preheat oven to 350. Combine tukey, onion, egg whites, oatmeal, carrots, 1tsp of seasoning and cayenne. place mixture into 9 inch loaf pan.
  • in another bowl whisk tomato paste, vinegar, garlic, remaining 1 tsp seasoning and agave. Spread over meatloaf. Bake for 45-50 minutes.

When we were on the "low carb" kick, I came up with this deviation from a classic meat loaf. This takes some time to cook, but is well worth the time. The surprise here is the usage of Toasted Wheat Bran instead of bread crumbs.

2 lbs lean ground beef
2 eggs
1/4 cup skim milk
1 1/4 ounces onion soup mix (one envelope)
2 tablespoons steak sauce (Carb Options)
1/2 cup wheat bran
1 (8 ounce) can low salt tomato sauce

Steps:

  • Combine beef, eggs, milk, soup mix, steak sauce, wheat bran and 3/4 of the tomato sauce in a large bowl. I squish it all together with my freshly washed hands -- gets them kinda messy!
  • Place meat mixture in an oven proof pan, pour remaining tomato sauce on top and spread it around.
  • Cover and bake in a preheated to 350 degree for 1 hour.
  • Uncover and bake for another 15 - 30 minutes or until brown on top.
  • Remove from oven and let set for a few minutes.
