LOW-CARB MASHED POTATO SUBSTITUTE
I lost 70 lbs on a low-carb diet and really missed having mashed potatoes. This is a great substitute (especially if you like cauliflower) since it when mashed it is the same consistency as mashed potatoes.

Steps:
- In a large cooking pot add cauliflower and water.
- Cook on medium high until cauliflower is soft (about 15 minutes).
- Drain cauliflower.
- In a large bowl add cauliflower, butter, sour cream, garlic (optional), salt and pepper.
- Mash with a potato masher or use a hand mixer on low speed until creamy.

Steps:
- Steam the head of cauliflower until soft.
- Mash cauliflower and softened cream cheese together or puree in a blender/ food processor if you want it smooth. (We prefer it chunky).
- Adjust to your own taste, or desire for fat intake, or desired creaminess.
- Add salt and pepper if desired.
- Can be prepared with low fat cream cheese as well.
