Low Carb Green Chile and Monterey Jack Cheese Stuffed Meatloaf image

I made this receipe tonight, for the first time, and my husband and I LOVED it! So, of course, I had to post it here on Zaar! This is a nice twist on meatloaf (in, fact, I don't even like meatloaf, but I loved this)! It is incredibly flavorful, almost addicting (I know my husband could not stop eating it, and actually requested that we make this a weekly affair), and also inexpensive, and fairly easy to make. It is a perfect low carb main dish, and would be great with a variety of side dishes. Please also feel free to experiment with the spices, as these measurements are just estimates (I just used them all, to taste). Enjoy!

2 lbs ground beef
2 eggs
2 -3 minced garlic cloves
1/2 teaspoon salt
1/2 teaspoon cumin
1 teaspoon chili powder
2 (4 ounce) cans diced green chilies
1/2 cup sour cream
4 ounces monterey jack cheese (or more)

Steps:

  • Mix the ground beef, eggs, and spices together in large bowl.
  • Roll out the ground beef mixture into a flat square on a large sheet of wax paper.
  • Sprinkle with cheese and one can green chiles (leave additional cheese for topping).
  • Roll the wax paper, with the meatloaf in the middle, until the meatloaf shapes into a loaf shape. Carefully unfold the wax paper, around the meatloaf, and remove.
  • Gently twist the ends of the meatloaf, so that the cheese and chiles do not leak out, while cooking.
  • Place in standard loaf pan.
  • Sprinkle with additional spices, if desired.
  • Top with geen chiles, sour cream, and additional cheese.
  • Bake in 400 oven for 45 mins to one hour.

1 1/2 lbs ground beef
15 ounces spaghetti sauce, divided
2 eggs
1 cup breadcrumbs
1/4 cup onion, chopped
1 1/2 tablespoons dried parsley
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups mozzarella cheese, shredded

Steps:

  • Combine ground beef, one cup spaghetti sauce, eggs, breadcrumbs, onion, parsley, salt and pepper.
  • Mix well.
  • Divide meat mixture into thirds.
  • Spread 1/3 in the bottom of an ungreased 9x5 inch loaf pan.
  • Cover with half of the Mozzarella cheese.
  • Repeat layers, ending with meat.
  • Bake at 350 degrees Fahrenheit for 30 minutes.
  • Spread meatloaf with reserved sauce.
  • Bake for an additional 30 minutes.

SPINACH - STUFFED MEATLOAF

This is a great tasting meatloaf that adds that important iron to your diet. This recipe was originally from the cookbook 1,000 Low Fat recipes by Terry Golson The preparation time does not include the resting time in the fridge. I like to get it ready the day before and then just pop it in the oven an hour before dinner.

1 1/2 lbs lean ground beef
2 egg whites
1 cup fresh soft breadcrumbs (white or whole wheat)
salt & pepper
1 shallot, minced
2 cloves garlic, minced
1 1/2 teaspoons Worcestershire sauce
1 teaspoon dried oregano
1 (10 ounce) package frozen chopped spinach, thawed and very well squeezed
3/4 cup lowfat mozzarella cheese, grated
1/8 teaspoon ground nutmeg
1/4 cup ketchup (optional)

Steps:

  • Mix together the beef, egg whites, breadcrumbs salt& pepper, shallots garlic, worcestershire sauce& oregano.
  • Use your hands to really combine the mixture.
  • After you have squeezed as much moisture as you can from the spinach combine it with the cheese, nutmeg& season with salt& pepper.
  • On a piece of plastic wrap or wax paper spread out the meat mixture in a rectangle apprx 12 x 8".
  • Spread the spinach mixture on top leaving apprx 1/2" clear all around the meat edges.
  • Using the paper (plastic) to help roll up the loaf starting from the 8" side.
  • Press gently as you go to make sure you have a firmly rolled loaf.
  • Press the outside edges together.
  • Tightly wrap the meatloaf in plastic wrap (or wax paper) and refrigerate for at leat an hour (I make the loaf the day before and leave it rolled in the fridge over night to be baked the next day).
  • Place the meatloaf on a roasting rack in a roasting pan and bake in a 350F oven for 1 hour.
  • If you are using the ketchup spread it on top of the loaf before putting it in the oven.

1 lb ground pork
1/2 cup green pepper, diced
1/2 cup onion, diced
2 garlic cloves
1 teaspoon thyme
1/2 teaspoon black pepper
2 eggs
1/4 cup HP steak sauce
1/4 cup ketchup
1 cup cheddar cheese, grated
3 cups fresh spinach
2 cups mozzarella cheese, grated

Steps:

  • In a bowl mix together all ingredients except the mozarella and spinach.
  • On a piece of waxed paper or plastic wrap - spread out the meat mixture - place the spinach ontop - pressing it in slightly - top with Mozarella cheese - and roll it up using the waxed paper or plastic wrap to help you roll it together tightly.
  • Place in an oven safe dish - bake at 350 degrees for 1 - 1 1/4 hours.
  • Remove from the oven and let it rest for 10 mins before cutting.
  • Serve with a tossed salad -.

Quick low-carb snack. I find that these work better than some similar recipes that use shredded cheese. The spices on these really 'pop' too - Yum!!!! I've also used Colby-Jack cheese, and it works great.

1 lb monterey jack cheese
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper

Steps:

  • Preheat oven to 400*.
  • Slice cheese into 1/4-inch-thick slices.
  • Place slices 3 inches apart on nonstick baking sheet.
  • Sprinkle with garlic powder and cayenne pepper.
  • Bake for 10 minutes or until golden brown - watch closely. Making sure they're golden brown is important - this will ensure they 'crisp' as they cool.
  • Leave crisps on baking sheet for 2-3 minutes, then carefully place crisps on paper towels to finish cooling.
  • These store well in an airtight container.

2 eggs
1 1/2 lbs lean ground beef
2 cups soft french breadcrumbs
1/2 cup shredded parmesan cheese (2 ounces)
1/4 cup chopped fresh basil or 1 1/2 teaspoons dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
4 garlic cloves, minced
1 (8 ounce) can pizza sauce or 1 (8 ounce) can spaghetti sauce
1 1/2 cups shredded provolone cheese (or 6 ounces sliced)
1 (7 1/4 ounce) jar roasted red peppers, drained, chopped
1/4 cup chopped black olives

Steps:

  • Heat oven to 375º. Line 15x10x1-inch pan with foil; spray foil with cooking spray.
  • In large bowl, beat eggs. Stir in ground beef, crumbs, parmesan, basil, salt, pepper, garlic and 1/2 CUP PIZZA SAUCE until well combined.
  • On large sheet of foil, shape beef into 12x10 inch rectangle.
  • Top evenly with provolone, roasted peppers and olives to within 1/2 inch of edges.
  • Starting with one 10-inch side, roll up; press seam to seal. Place seam side down in pan.
  • Bake 40 minutes.
  • Remove from oven; spoon remaining pizza sauce over loaf.
  • Return to oven, bake 15-20 minutes longer or until loaf is thoroughly cooked in center and thermometer reads 160º. This may take longer, so please use the thermometer!
  • Let stand 10 minutes before slicing.
  • Serve with additional heated sauce, if desired.
