1 cup green beans (cut and cooked)
1/4 cup heavy cream
2 ounces cream cheese
1-1/2 teaspoons dried onions
1 tablespoon gluten free soy sauce
2 twists freshly ground pepper
1-1/2 ounces shredded mild cheddar

Steps:

  • Drain the green beans well and pat dry with paper towels. Too much liquid on the beans will thin the sauce.
  • Place the heavy cream and cream cheese in a pan over medium heat.
  • Whisk until the cream cheese softens and the sauce is smooth.
  • Add the dried onions and soy sauce.
  • Continue to stir until the mixture thickens and coats the back of a spoon.
  • Add the green beans and simmer, stirring often, about 5 minutes.
  • Sauce will be very thick and cling to the green beans. If not continue to simmer and stir.
  • Taste and add pepper as needed.
  • Place the green beans in 2 individual cast iron casseroles OR a small, heat proof dish.
  • Sprinkle with cheese.
  • Broil, watching carefully, until the cheese bubbles and turns golden.

3 or 4 c frozen cut green beans
salt to taste
1 tsp minced onion
1/2 tsp granulated (or powdered) garlic
1 cheese sauce (see recipe link below)

Steps:

  • 1. Start by boiling (or steaming) the green beans (with the salt, onion, and garlic) to the done-ness that you like.

I found this among some recipes my husband's aunt sent me. I tried it once, and it became a family favorite immediately. I save it and use it in the summer when beans are freshest. Then we always have something to look forward to each summer. I often double this recipe just to have enough for my children to have leftovers! You can prepare this ahead of time, but make sure that the casserole is at room temperature before baking. I often use a mixture of both green beans and wax beans in the casserole.

3 cups trimmed green beans, snapped in half
3 slices bacon, diced
6 green onions, chopped
½ cup shredded sharp Cheddar cheese
¼ cup sour cream
¼ cup mayonnaise
1 pinch salt and pepper to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 2 1/2-quart baking dish with a lid.
  • Place the green beans in a large pan with water to cover; bring to a boil and cook only until the beans are hot and bright green, about 1 minute. Drain. Transfer to a large bowl.
  • Cook the bacon in a large, deep skillet over medium-high heat, stirring occasionally, until evenly browned and crisp, about 10 minutes. Pour off all but 1 tablespoon of the drippings. Return to the heat and add the green onions; cook until the onions have softened, about 2 minutes.
  • Add the bacon mixture, Cheddar cheese, sour cream, mayonnaise, salt, and pepper to the green beans; stir. Spread the mixture into the prepared baking dish; cover with the lid.
  • Bake in the preheated oven until the casserole is bubbling and the beans are tender, about 20 minutes.

1 teaspoon salt
1 teaspoon mixed herbs
½ teaspoon ground black pepper
3 tablespoons olive oil
1 cup shredded Cheddar cheese
½ cup heavy whipping cream
1 tablespoon ghee (clarified butter)
1 pinch ground nutmeg
3 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
  • Arrange cauliflower on the prepared baking sheet. Sprinkle with salt, mixed herbs, and pepper. Drizzle with olive oil; toss until well coated.
  • Roast in the preheated oven until crisp, 10 to 15 minutes. Place in an 8-inch baking dish.

Runner and green beans make a delicious addition to a comforting pasta bake - top with pumpkin seeds for added crunch

2 tbsp rapeseed oil
3 tbsp wholemeal flour
500ml milk
1 tsp ground nutmeg
350g macaroni (or other pasta tubes)
185g pack sliced runner beans
220g pack fine green beans
140g mature cheddar , half chopped, half grated
25g pumpkin seeds
peppery salad (such as rocket & watercress), to serve (optional)

Steps:

  • Put the oil in a medium saucepan over a medium heat, add the flour and stir well. Still stirring, slowly pour in a little of the milk and mix well until smooth. Add a little more milk, repeating until all the milk has been added and you have a smooth sauce. Stir in the nutmeg, season, then take off the heat while you cook the pasta.
  • Heat oven to 220C/200C fan/gas 7. Bring a large pan of water to the boil, add the macaroni and boil for 8 mins. Add the runner beans and green beans, and boil for a further 3 mins.
  • Drain the pasta and the beans, and tip into a large gratin dish. Pour over the prepared sauce and tuck the chopped cheese in among the pasta, then top with the grated cheese and pumpkin seeds. Bake for 10-15 mins or until the top is bubbling and golden. Serve with a peppery salad, if you like.
